Pepperoni Eggs

We LOVED these! I didn't have any egg substitute, so I just used regular whole eggs (4 eggs are equal to 1 cup egg sub.). Made as written otherwise. So simple and they were perfectly done at the 10 minute mark. The whole family gobbled these up...HUGE hit and a definite keeper~YUM! Thanks for sharing. :)

Kiki's Spiced Habanero Peach Jam

Delicious! As another reviewer mentioned, mine also did not set up and is more of a 'syrup'. I'll still use it because the flavor is wonderful, but I'm suspecting that it is the cooking method (adding the pectin before the sugar), that is the reason why this did not set up properly. I was tempted to do it the way that it says on the pectin package, but I wanted to stay true to the recipe. I'm still giving this 4 stars, b/c, like I said, it is delicious and had a really nice, flavor with a nice, spicy kick, which we enjoyed. If I try this again, I will follow the cooking method on the pectin package. Thanks for sharing. :)

Tomato Bruschetta

Made this for Recipe Group...BIG HIT! I used Italian bread, so it was more like a 'garlic bread' type thing to go w/ our pasta dinner. I used a mix of yellow and cherry tomatoes from the garden. Great flavor and it was enjoyed by all...a keeper~YUM! Thanks for sharing. :)

Sassy Freezer Slaw

Made this for Recipe Group...If you like slaw in any form, you're gonna LOVE this! I like that this is made and ready to go in the freezer for a quick side. I halved the recipe and used one 16oz. bag of coleslaw mix (YES, I'm lazy, lol), and that worked perfectly. The dressing is SOOOOO GOOD! Thanks, sass, this is a keeper~YUM! :)

Very good! I did not find this too thick at all, in fact, mine was a bit on the thin side, not sure why, but it was still good. Easy and flavorful...a keeper! Thanks for sharing. :)

Foolproof Flat Iron Steaks

Delicious! I marinated mine all day, and used a bit of Italian seasoning in place of the thyme b/c I did not have any on hand. I sliced this for on top of our steak salads, and that was wonderful. Moist and tender with a great flavor...a definite keeper~YUM! Thanks for sharing. :)

Roasted Marshmallow Peaches

This was very good! I used some VERY ripe, fresh peaches that I peeled pitted and sliced, and that worked out great. I baked mine for about 20 mins. or so, and that was plenty, so keep an eye out. The combo of the peaches and toasted marshmallows work really, really well together. The kids tore this up! This was great for an easy dessert or even just when you want something sweet that's quick and more on the healthy side. I will be making this again! Thanks for sharing. :)

These were ok, but I have to agree with others that said that these lacked flavor. For all the prominent components in the dish, it still felt that something was missing. The family ate them, but I most likely will not be making these again, tho I was glad to try something new. Thanks for sharing. :)

Baked Panko-Breaded Zucchini Fries

Yum! I used seasoned panko crumbs and just a sprinkle of Italian seasoning and garlic powder. I didn't think these were gonna turn out as good/crispy as they were. A great new way to enjoy zucchini...and it's healthy too!!!! Thanks for sharing. :)

WOW, these are AWESOME!!!!!! I omitted the nuts and stirred the chocolate chips right into the batter (I used mini choco chips). Fudgy, moist, rich and just plain delicious...I will def be making these again and again~YUM, YUM, YUM!!!!!! Thanks for sharing. :)

Fresh and Simple Peach Salsa with Cinnamon Sugar Chips

Tasty! I did feel like the salsa was a bit heavy on the citrus, but that's just my opinion. I used fresh red cherry tomatoes from my garden and instead of brushing the tortillas w/ butter (which I love), I just sprayed them w/ cooking spray to be a little healthier, and that worked out great. Nice and fresh...I would make this again, but adjust the acidity to suite my taste. Thanks for sharing. :)

Wonderful jelly! I did not strain the peppers, but followed the recipe otherwise. Set up beautifully and had a nice kick...Great w/ cream cheese on crackers. I will be using this recipe again~YUM! Thanks for sharing. :)

Chef John's Pork Wonton Soup

We LOVED this soup! I made the wontons a couple of days ago and froze them until I was ready to use them to cut back on some prep time. I just threw the frozen wontons in the soup and they cooked in no time. This does make more wontons than you will need for the soup, but they keep well in the freezer. I wish I would've watched the video before making them though, b/c I totally shaped them wrong, lol, but it doesn't matter how you shape them, they are wonderful and the pork filling is EXCELLENT. I couldn't find shitake mushrooms at the store, so I just used an 8oz. pkg. of sliced white mushrooms, and that was great for us. Also, I didn't have anything to do w/ the rest of the carton on chicken broth, so I just added it in the soup, as well. This was simple to make, super light and fresh tasting...a definite keeper~YUM!, YUM! YUM!! Thanks for sharing. :)

Marry-Me Blueberry Pie

Very, VERY good! I used 2 pints of blueberries that I had in the freezer (did not thaw them first). The only thin I think I would do differently next time is to reduce the sugar a bit (maybe by 1/4 cup), b/c I thought it was VERY sweet, but that's just my opinion Everyone else LOVED it as is). This was easy to make and the family really enjoyed it. I would make this again! Thanks for sharing. :)

Corn Fritters with Raspberry Mayonnaise

Simple and delicious! I did sprinkle some salt on top after frying, but that was my personal preference. Also, I thought that amount of mayo would make too much sauce for us, so I used 3 tbsps. raspberry preserves and about 2/3 cup mayo (I just eyeballed it and mixed it together w/o heating it up)), and that was the perfect amount for us. These sort of reminded me of funnel cakes (but with corn, of course, lol) I could see maybe adding some sugar to the batter or just sprinkling them w/ some powdered sugar. I will def be making these again~YUM! Thanks for sharing. :)

Creamy Grilled Cheese Roll-Ups

Hmmm, not sure how to rate this...I used wheat bread and did some w/ the provolone and some w/ American cheese (for my girls). They were good, and the girls loved them, but they were more work than they were worth, IMO. The cheese was too big for the bread, so that had to be trimmed, then, when you tried to roll it the bread would tear or the cream cheese would come out of the end I did not use a thick layer of cream cheese as the submitter suggested in the instructions). Also, once you put the toothpicks in, you couldn't put them seam side down b/c of the toothpick sticking through there to hold the seam closed. This was a great idea, but it was just too much of a hassle for me...It would've been easier to just make a grilled cheese (still using the cream cheese mixture ans cheese b/c it was tasty), and cut it into sticks, or whatever. Again, this is just my opinion, and someone else may have better luck w/ them. I'm glad I tried these, just wish they would've worked the way I was thinking that they would. Thanks for sharing. :)

Creamy Beef Enchiladas

Delicious! I used a whole 8oz. pkg. of pepperjack shredded, and I'm glad I did b/c 1 cup wouldn't have been enough, IMO. Also, the little guy prefers flour tortillas, so I used them (the soft taco size), and got 8, generously filled enchiladas, which was more than enough for us for dinner and lunch leftovers. I only bought 1 can of enchilada sauce, but that was plenty for us. I also topped these w/ some sliced green onions in addition to the cheese and black olives before baking. This was a HUGE hit tonight and that makes this a keeper~YUM! Thanks for sharing. :)
