Blackened Salmon Fillets

I cooked this recipe tonight for supper and ended up throwing over half of it in the garbage. You may wonder why I still gave it 4 stars. The reason is because, although my husband and son loved the flavour of the spices, it was way too salty. The only changes I made to the recipe were to use regular butter because I had no unsalted butter and, because of that, I cut the salt in half and used one teaspoon of salt instead of the called for two. My husband said he was afraid for his blood pressure and my son said he was afraid he'd get heart palpitations so I know it was salty. I didn't try it because I can't eat that much spice. I'm keeping the recipe but changing the butter to olive oil and still keeping the added salt to one teaspoon. I'll give it one more try like that and see if they'll eat it then.

Spanish-Style Chicken and Sausage

We loved this! I did make a couple of changes because I didn't have all the ingredients but it was delicious. I used one can of chicken broth instead of the bouillon cubes and water and I used one can of diced tomato instead of the fresh tomatoes. I also didn't use peas. We'll definitely reuse this recipe.

Slow Cooker Beef Stew I

I tried this recipe for the first time today but it will not be the last time! It was fabulous! I only made one substitution and added two extra ingredients but otherwise, followed the original recipe. I added parsnips and turnip because my husband wouldn't consider it a stew if it didn't contain those two veggies. Then, because I had a stewing bone (I always use one for extra flavour) to put in with the meat, I didn't use beef broth. I just used the equivalent in water and it was very flavourful. Using water instead of broth makes for a less salty stew, I'm sure, but you can always add salt at the end if need be. It was SO GOOD. We loved it. Thanks for the recipe, BUCHKO!

Molasses Cookies

Turned out great but I did use butter because I never use margarine. I also used brown sugar and cut the baking soda by half. Very nice flavour. With my oven, I had to bake them for 12 minutes.

Caribbean Banana Muffins

I can only give this 3 stars because, although the taste was okay, they were a little drier than I prefer. I made the recipe as is because this was my first time using it. I'll keep looking for one I like better.

Dee's Sexy, Spicy, Shrimp, Sausage, and Peppers

I'm not rating the recipe because I haven't tried it and probably won't because of the sausage. I'll add here that I had to rate it because I couldn't comment without a rating so I gave it a 4 which seems to be what most people gave it. However, I just wanted to say that I don't think food should be referred to as "sexy". I wish people would get over thinking if you call something sexy, others will like it more. This looks like a decent recipe without having to do that.

Boston Brown Bread III

Oh my word, this is such GOOD brown bread! I particularly like that I can make one loaf. I made it exactly as stated but took it out of the oven after 53 minutes because it looked done (and was). My husband loves it too so this recipe will definitely be a keeper and will be used over and over. Thanks so much paradigmgirl.

Creamy Slow Cooker Potato Soup

I made the recipe as is, without doubling it, because there's just the two of us here. I found the flour/milk mixture wasn't thickening quite as fast as I wanted it to so I added a bit of instant mashed potatoes to hurry it up. Then it got too thick so I added more milk to make it the right consistency. Other than that, I made it exactly as written by the original submitter. The only thing I'll change when I make it again is I'll cut the cream cheese down to half. I could taste it too much in the soup and although I like it okay, I don't want my potato soup to taste most like cream cheese. I think if I cut back on that and don't add the mashed potatoes, the listed milk will probably be about right for us. Otherwise, great recipe.

Restaurant-Style Prime Rib Roast

I wanted something special for our New Year's Day dinner so I got a prime rib roast and used this recipe. The only change I made was to add a bit of steak spice to the rub. The flavour was wonderful and the roast was SO tender and juicy. It got raves from everyone. I'll be keeping this recipe even though I probably won't use it often since this cut of meat is so expensive. Well worth the try though.

Chef John's Baked Eggs

Absolutely delicious! I just made this for lunch for my son and myself and we both love it. I'll be trying it on his father tomorrow morning for breakfast. I'm pretty sure it'll be a hit with him too. I made it as the recipe called for as much as I could but didn't have the Parmigiano-Reggiano cheese so used another kind. My cream was cereal cream but it all worked well.

Easy Sugar Cookies

These are the BEST sugar cookies I've ever eaten and they were super easy to make. The only change I made, because of some of the other reviews, was to double the vanilla. Otherwise, I did exactly what the recipe said. I found that I had to use the full ten minutes to cook them but they're perfect! Thanks so much Stephanie!

Fresh Rhubarb Pie

I was a little afraid the pie wouldn't be sweet enough for me since I find rhubarb extremely sour but it turned out fine. I actually made four little pies instead of one big one because one pie lasts too long for my husband and I. I used the recipe exactly as written and just divided everything 4 ways. Worked like a charm. Thank you, Carol.

Hamburger Casserole

We loved the way this turned out so I'm giving it a 5 star rating even though I didn't make it exactly as specified. I would have made it exactly if I'd had all the ingredients but I didn't have any beef bouillon cubes. I substituted a can of onion soup which I think probably added spice to the recipe. The only other change I made was to add some Montreal Steak Spice and Cajun Spice sprinkled onto the meat because we like spice and I felt this recipe would have been too bland for us otherwise. I'm sure I made the right choice because it was wonderful. The other (small) change I made was to use only one layer of each food because I was making it just for my husband and me. If I were doing a big pot of it, I would definitely layer twice as it calls for. We'll definitely be putting this in the recipe box to use again. I love that it's only one pot dirtied. Can't go wrong with a recipe like that! lol

Mostaccioli with Spinach and Feta

I made this for supper last night and got rave reviews from both my husband and son. It was so fast and easy to make and the taste and texture were excellent. The only change I made was to the feta - I couldn't find tomato basil feta so bought garlic feta. We will definitely be having this recipe again and again!

Scrumptious Salisbury Steak in Mushroom Gravy

I wasn't sure I should bother adding my review since there are so many here already but why not? My family LOVED this recipe; however, I made a couple of changes because I was missing ingredients. I usually follow a recipe exactly the first time I make it and change it to suit us if needed. Instead of buttery round crackers, I used vegetable flavoured ones. Because I didn't have any beef bouillon cubes, I didn't put in the juice from the canned mushrooms. Instead, I put in a can of onion soup. I thought that three cups of milk sounded excessive so I only added one. The gravy was just right as far as I was concerned so I'm glad I didn't put in all the milk. I think the onion soup helped the flavour so I'm writing that change on my recipe and keeping it.
