Curried Leek Soup (gluten, dairy and chicken free)

Reviewed: Jun. 29, 2014
This soup has become something I cook practically weekly. I am severely allergic to chicken so I use vegetable stock and "Not Chick'n" bullion cubes, I'm also allergic to dairy, so I use either almond milk or coconut milk. The results are excellent. I especially like thickening the soup with a puréed vegetables instead of cornstarch or gluten free flour (yeah allergic to gluten too), and I am looking to use that thickening method in my other recipes. Thank you for sharing this recipe with us!

Caesar Salad Supreme

Reviewed: Apr. 21, 2014
Just finished making this dressing - followed the recipe exactly. My family is now having a friendly debate over who gets to finish the salad. LOL. SUPER GOOD. In fact, I just returned to ALLRECIPES to look for a mayo recipe so I can make more caesar dressing. On a personal note I just looked up and discovered that my son won the debate, and he is happily chomping down on the remaining salad. Yes indeed, this recipe is a keeper.

Slow-Cooker Corned Beef and Cabbage

Reviewed: Mar. 18, 2014
Disappointing to say the least. The veggies were soggy. The meat not tender. I've never had such bad results with Corned Beef. Will not make this again.

Chef John's Irish Pork Stew

Reviewed: Mar. 18, 2014
Served it to company on St. Patty's Day Eve, without first trying the recipe - which is something I never do. And everyone was delighted that I did! It was FANTASTIC! I had nearly 6 pounds of meat, and adjusted the recipe to suit. We (okay, 'I') just finished the last of the stew a few moments ago. My son even had it for breakfast after pulling an 'all nighter' for college. I had to promise my family that I'll make it again very soon. WELL WORTH MAKING. I did read one review that gave this recipe a lower rating because it contained alcohol, which honestly doesn't make any sense to me. If you don't like the alcohol, then use an alcohol free beer - don't give a wonderful recipe a bad rap. Anyway - please try this recipe. And definitely watch the video, too. Enjoy! :-)

A keeper. Especially like that no oil is added. Will try with other beans as well. Great way to enjoy healthy food. Thanks for the recipe!

In-a-Pinch Ketchup

Reviewed: Apr. 7, 2013
I will never buy Ketchup again! My adult son told his friends that his mom's homemade ketchup is now what all other ketchups will be compared to. Thanks so much for this recipe! Just some advice: Corn Syrup is UNHEALTHY and not needed for this recipe. I've also made it without molasses (didn't have any). And yes organic DOES taste better - treat yourself!

Smoked Salmon Chowder

Reviewed: Dec. 8, 2012
Yes, it does make a lot of chowder, which is perfect for me as my family nibbles on it during the week whenever they're hungry for a quick snack. I make this nearly every week so it is now a staple in my home. I make the stock from scratch using red snapper (or whatever wild caught fish is at the market - I avoid farm raised fish (they are inflammatory)). Use almond milk instead of regular milk (might add a little heavy cream for richness). Use no butter/flour but rather cornstarch mixed with cold almond milk. Haven't tried adding white wine - might some day. Today I'll be swapping out the regular bacon for turkey bacon for the first time. Sometimes use canned (or fresh) clams and clam juice instead of salmon. This recipe is flexible and so very, very delicious. When my kids (20 and 22) bring their friends over, they always ask for it :-) Thank you for sharing such a wonderful recipe!
