Ann's Dirty Rice

Great Mardi Gras dinner slathered in a generous seasoning of Frank's Red Hot. Used ground pork instead of beef, chicken bouillon in place of beef, and also added some smoked sausage. Will start dinner earlier next time so I can use a lot more bell pepper, but love the simplicity and relative quickness. Oh, used Emeril's Essence as seasoned salt, too. Great idea!

Banana Banana Bread

My first time making banana bread. Was even doing while feeding a toddler. Still came out great. Three people demolished about 85% of the loaf over the span of one (albeit somewhat-lengthy) football game. Will use this again when the bananas start browning faster than the boy can eat them!

Ukrainian Red Borscht Soup

Great googly moogly. Love this recipe. Okay, so I left out the sausage, subbed golden beets (assuming red were preferred), left out the garlic and used a can of tomatoes with chilies in place of plain diced. Definitely not Ukranian by the time I got finished, but I'm sure were I to offer it to someone who spoke Ukranian, they'd be okay with it.

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

Ridiculously easy and quick. Perfect for a light dinner. In fairness, I was being super lazy and impatient and left out the onion, so it was flavored only by the salt, cumin and garlic, but I loved it. Spooned it on small pieces of crusty baguette. Couldn't be more pleased with adding this one to the make-dinner-fast arsenal.

Rosy's Palak Paneer

I generally like this, but will probably make several adjustments next time I make it. I do think the proportions are a bit off. Definitely could use more spinach and garam masala and less paneer (if only to cut the fat) and maybe also tomato paste. I also added some red pepper flakes for extra flavor, which I'll keep in future editions.

I like it. I don't love it. A little too salty for me and I'd have really liked more dill. Still, it does make a decent bowl of soup and I'm pretty sure with some minor tweaking it'll be even better.

Springtime Asparagus and Parmesan Sandwich

Absolute love. Wouldn't have thought to do this, but will be repeating frequently. I used a chevre gouda instead of the Parm and it was terrific. Can't wait for tomorrow lunch with the leftovers.

Too much pepper by far! You can taste a brilliant soup hiding beneath a vicious layer of pepper here. I will make this again with a fraction of the pepper, but I used less than the prescribed amount and am kicking myself for not going with my instinct. Dangit!

Ash-e-jow (Iranian/Persian Barley Soup)

For ease of preparation, flavor and food cost, this MUST be a five-star recipe. I shall add that I made this a while ago and just broke some of it out of the freezer. It froze very well. My only warning would be to take care with the turmeric; not only can/will it stain, it can overwhelm other flavors in the dish. I also enjoy stirring a good bit of plain (goats milk) yogurt through it when it's hot and eat with buttered crusty bread. Check out the nutrition stats and add it to your repertoire post-haste! What are you waiting for?!

Lo Mejor! I'm going to have to stock up on achiote paste, because this made a fantastico slow-cooker meal. We sprinkled with a little cotija cheese and served with tortillas. Too easy and too good to not be tried.

Straight-up fantastico! Didn't take nearly 50 minutes, but I chop fast. Didn't have fresh corn, but look forward to the first crop. Served on the side of a slow cooker Cochinita Pibil with some tortillas. Will be eating a lot of this over the summer. Thanks!

Baked Delicata Squash with Lime Butter

Hard to beat the combination of simplicity and flavor in this recipe. I used 50% more squash, 100% more lime juice and got pretty good results. I also used Jamaican jerk-seasoning rather than chili powder. You can take this in a dozen directions and not screw it up.

Kale Soup

Sensacional! There must be some old-world mysticism at work here. The whole is far greater than the sum of all the parts. Fifteen minutes into cooking, my kitchen smelled of magic and wonder. The anticipation only made the actual ingestion that much sweeter. Well done Scotty and thank you. I owe your family members a few bottles of Vinho Verde! Obrigado!
