Presidente Margarita

I made this for the neighborhood Margarita bash on Cinco de Mayo weekend and these were a bigger hit than the frozen ones. I substituted cognac for the brandy, and used Triple Sec instead of Cointreau. I made about 1.5 gallons and used a glass dispenser and shook with ice and poured into rimmed cups. It was very tasty! One note: I used a nice, middle of the road gold tequila, made from 100% agave (Legado). It makes the difference!

Grilled Shrimp Caprese

Made this for my family this week and was simply a hit! I used Italian cheese blend along with the Parmesan and it worked great! I used my own blend of Italian seasonings. Will definitely make again.

Red Velvet Cupcakes

I have been looking for Red Velvet Cupcakes and the bakeries near me couldn't match up. I made these for my wife's birthday and everyone loved them! I put a piece of 60% cacao chocolate on the top of the batter as they baked, and that was a nice addition. Otherwise, these will be a go-to recipe for me.

Red Quinoa and Avocado Salad

I couldn't find red quinoa but i found organic Andes quinoa and used that instead. We went to Peru a few years ago and that was the first time I was introduced to this ingredient. This recipe was very good and tasty, and it was even better the next day after it had chilled. Will be making this again for sure!!

Lamb Chops with Balsamic Reduction

I made this recipe last evening. Very nice and simple, great tasting! I did use a rather nicely aged balsamic and I think it made a difference. Served with some peas and pearl onions with rosemary, and fingerling potatoes topped with some of the leftover herb mix. Will make this again!

Awesome Italian Hoagie Spread

I saw this dip last week for the Conference championship games and made it on a whim. It was well liked and i found it to be very nicely done! I think the only improvement might be some sliced olives (green & black) on the side that people can add as they please. Really enjoyed making and eating this one.

Argentine Lentil Stew

My wife is from Argentina and didnt recall having this stew, but we all liked it, including my kids! Nice and hearty, very filling. I actually served this with some pigs n a blanket and it was a great meal combo. The only thing I might do different is use some bacon grease to saute the onion in, just to add some more complexity to it. I will definitely make this again!

Brussels Sprouts in a Sherry Bacon Cream Sauce

Hands down, this is the best thing that has EVER happened to Brussel Sprouts. I can hardly bring myself to eat them most of the time, let alone my sons! I have searched and searched for a great way to do these...this is simply amazing! I made this over Thanksgiving for my wife's family and my son's girlfriend, who is an extremely picky eater.....gone! And i doubled it! Roasting is the key at the highest heat you can. I let my sauce sit and simmer while I roast and then immediately toss. Highly recommend this recipe!
