I work full time as a magazine art director, my husband works full time including some Saturdays, and we have twin toddler daughters. I don't have a lot of energy left at the end of the day to cook, so I want healthy, easy recipes that we'll all like!

My cooking tragedies
I always get into trouble when I start substituting ingredients. I learned from a tragedy that when you're hungry enough, anything awful tastes OK, but as your tummy gets full, it tastes worse!

Quick Weeknight Skillet Chicken
Thanks for the comment, Bibi! Great suggestions. (I had next to nothing in my house -- fresh garlic would be great!) This was my first time actually submitting a recipe to the public. I'm so glad it worked out for you.

Banana Cake Cookies
Yummy, just what I was looking for. I didn't have pecans, but I had dried dates, which are a nice treat. I dropped generous spoonfuls of dough and got about 30 cookies. I only used about half of the frosting. Not sure it's needed; they'd probably be good without, or with sprinkled powdered sugar instead. I'd probably make these again. My five year old head fun helping mash the bananas and measure the dry ingredients. Thanks for sharing this recipe!

Beef Nacho Casserole
My mother-in-law makes this and they call it Nacho Slop. Disgusting name, amazing flavor! She'd bring it to us in college and we'd eat it right out of the container on the first night. But, if there's any leftover, it's delicious cold the next day. One of my family's all-time favorites!!
