About this Cook
If I could only use one word to describe my life right now, it would be... BUSY. I wear many different hats right now. I am a Marine (military police), college student, and (my favorite job by far) Mother to 3 children ages 10, 4, and 3. I swear I used to be a tomboy before I joined the military, but being around so much testosterone has given me a new outlook on life. I swear my alter ego is Martha Stewart. The highlights of my week are the days when I get to spend ALL day cooking for fam & friends, as well as cleaning & decorating the house.
My favorite things to cook
6 years ago or so, I could barely get hashbrowns right, and then... I found ALLRECIPES. It sparked a passion I didn't even know I had. I truly feel like a natural at this, and I LOVE that my hubby is the envy of his peers. My favorite thing to cook??? SOUL FOOD & CREOLE food. Southern comfort foods are what I grew up on & where my heart will always be. However... I am a busy busy woman & I don't have time to cook that very often so on weekdays, I tend to gravitate towards slow cooker meals. Food comes out amazing and the work is minimal. Throw it in there in the morning, put it on warm after work, & you're good.
My favorite family cooking traditions
As previously stated, I grew up on Soul Food. I remember in church the women used to judge your cooking skills by how well you can cook Collard Greens. My mother's always won back in the day, and now... hers cant even hold a candle to mine! LOL!! Family traditions I've started in my home, are family dinners together. Food is the heart of our family. When everything else in the world brings us apart... we know we will always come together at the end of the day to the dinner table. =)
My cooking triumphs
Greatest triumph was making Gumbo... from scratch of course. When I did that (and did it right) I knew I had jumped to another level of cooking. 2nd greatest triumph is CHEESECAKE. That is not easy to make, but once you master it, oh baby!! You can do anything you want to it. (**in my whisper voice** the secret is to cook it a tad bit longer than your recipe calls for, then ensure you refrigerate it for at least 2 to 3 hours. The sign of an amazing tasting cheesecake is when it holds together nice and firm. no falling apart.) Collard Greens is my signature food. I make them so good, you'll want to slap your mama. Hell, my mother wanted to cry when she tasted mine. I won't give out my secret to anyone EXCEPT my daughter. And right now she's only 3. =)
My cooking tragedies
My hubby is Polish and the first few times I tried to make perogies was just... ... sad. I couldn't get the dough right (of all things) to save my life. I still make perogies frequently for him, but every once in a while, I'll forget to add an ingredient or something happens and I mess those up. The really sad thing is that those are his FAVORITE food. =( I'll say I get them right only 70% of the time. And I've been making them for almost 3 years now.

The Ultimate Chili
The longer you cook it the better! I strongly suggest nothing less than low for 8 hours. High on 6 leaves the meat too tough to taste like authentic chili

Pork Roast with Sauerkraut and Kielbasa
Everyone in my house loved it except for me. Too much sauerkraut for my taste.

Awesome Broccoli-Cheese Casserole
Amazing! The only change I made was using sour cream instead of mayo.
