Grilled Redfish on the Half Shell

Made for a romantic candle light dinner and cut recipie in half for two. I got raves and more raves the next morning about how good it was, make it again and how pretty it looked when served. I will tryi it with Sea Bass next time.

Cajun Browned Fish with Creamy Crawfish Sauce

I made this as an "impression" dinner and it was a huge hit. I was told that this was a rich creamy tasteful recipe that should be on a menu at a top notch restaurant. This goes into the book of definate do overs.

Brian's Easy Stuffed Flounder

This was the BEST recipie, very easy, and very tasteful. It is a wonderful presentation as well. We made exactly to recipie and we will make this again and again when we get a craving for flounder or catch flounder at the coast here. Thanks for a great recipie.

Amazing Pork Tenderloin in the Slow Cooker

This was a pretty good recipie. I enjoyed the flavor of the gravy. Thickened with flour and I also added mushrooms to the cooker just before done. Easy, throw in cooker, leave and dinner is served hours later. POrk always does well when cooked slow. It was juicey and full of good onion and garlic flavor. I will make this again! Onion-Roasted Potatoes

This was great, easy, not messy and a do over for any occassion. I made with onion soup mix and then again with beefy onion soup mix. I did use all the suop mix when baking for a bold flavor. Thanks for the recipe!

Jalepeno Cheese Dip

This was fantastic, not messy and easy to make. The flavor was wonderful. It sets some and his easy to spoon or slice to put on crakers, bread, or even roasted jalapeno peppers. At any rate, I am making this ahead, letting it sit in the fridge and then making Stuffed Chili Relanos with the left overs. I plan to stuff the Poblano Peppers fresh and then bake. Im hoping that it will be a big winner too. Thanks for the recipie.

Squash-Carrot Casserole

This was excellent, colorful, tasty and easy to make. I did freak out about the butter content, but I added it all anyways and it was just fabulous. I was having a dinner meeting party for my equestrian club so I wanted varitey. The most requested recipie from everyone was this one. They said that it was just different and so very delicious. Now I do tend to like my foods more creamier. Next time I may use a small egg instead of a large egg. I also cooked the squash to where I could just pierce it with a fork, not mushy before adding to the mixture and cooking. I thin I did add extra cream cheese because I love it. Thanks for a great recipie.

Pinwheel Meatloaf

This recipie was fantastic. A friend had picked this recipie for our weekend horse get away. She put baby carrots on the botton so the meat roll could sit on them and red potatoes along side. Very easy to make and full of flavor that will be a crowd pleaser. We will make this again for ourselves and company.

Chicken Enchilada Soup I

This was pretty good. The enchilada sauce gives it a very different snokey chili flavor. I used fresh chicken broth that I freeze when I boil my chicken to shread the meat. I also used my fresh frozen shredded chicken. I added lots of fresh cilantro because we love it. My favorite to all tortilla soups are adding half a lime squeezed and dropped in. I still have my favorite tortilla soups, but this one was pretty good. Thanks for the recipe!

Killer Artichokes

This was great and easy. I made it for my visiting family who come in from artichoke country of Monterey California area. They enjoyed the Texas mesquite smoke flavor from our grill. (We use only wood, not gas) I added half an onion to the boiling water, and 1/2 stick real butter with a squirt of lemon and sea salt. I trimmed the sides and top and it had a great presentation as well. I served with lemon cilantro butter and cilantro mayo but they enjoyed then as they were. I will definatley do this again when entertaining. Thanks for the great recipe.

Corn and Black Bean Salad

This was an ok recipe, not bad at all. I prefere different versions of the Black Bean Salads. I had four guests to dinner and not much was said and not much of it ate. I think it was the balsalmic vinegar, atleast for me, I didnt favor it much with the mixture. I would eat it again, but I prefere a more Texas version of this. Thanks for the recipe though.

Blackened Fish

This was a great recipe. I happen to have cast iron pans and griddles, so it tunred out perfect. The spices can adjusted if needed, but I liked it how it was. I used REAL butter and a scoop of bacon grease for an added flavor. It was super great! Made a roux sauce to go over it. Your house will get a little smokey, pre warning, but turn the fans on, it is worth it. Redfish - a saltwater fish we caught. Thanks for the recipe!

Simple Ranchy Breaded Fish Fillets

Baked Paprika-Parmesan Chicken

This was an ok recipe. It was rather bland to me, but my fiance liked it enough to make again if I add more kick to it spice wise. If I make this again, I will slice the chicken the size of chicken tenders and see if that will give it more flavor. This could be better if served with a alfredo sauce over angel hair pasta. Actually as another reviewer said, it is not too bad cold. Would also go well cold as a leftover on top of a ceasar salad sliced.

Broiled Tilapia Parmesan

This was FAB for the parmesan and fish lover. Myself and my fiance loved it. I baked mine a little longer and just poured the sauce right over the top to bake with it, then did a broil. I acutally did it in my toaster oven the first time. Served over flavored rice and a veggie on the side. I have used Tilapia and Flounder Fillets. Super easy and super flavor. No changes will be made to this. It is perfect just the way it is.

Yellow Chicken

This recipe was very easy to make. I like all the ingredients that went into it. It was just bland to me and lacked flavor for my taste buds. I would not make it again, my fiance said he would eat it again, but it did lack flavor. I am going to try it again but jazz it up saucier. I like the mustard and tumeric idea so we will see what happens.

Dijon Crusted Halibut

This was an easy recipe. The flavor was very nice. The mustard flavor with the horseradish is a great combination for mustard lovers. I used hot dijon mustard, hot horsradish for a kick and seasoned bread crumbs instead of plain. We like a robust flavor which it all gave. I served it on the side with alfredo and noodles to compliment the parm cheese, and steamed lemon zest asparagus. We made a separate batch of sauce for the asparagus because it was so good, and it went very well with the asparagus. We will make this again with halibut and differnt white fish. Great easy recipe, a definate do-over.

White Cheese Chicken Lasagna

This was very good. The only change I made was adding a dash of nutmeg to the cheese sauce to make it more of an authentic white sauce flavor. I didn't have just the basil or oregano so I used the italian blend, it's the same thing. NOTE about the Chicken. Canned chicken will drastically change the flavor. If you like the taste of canned chicken you will love it all, if you don't like canned chicken you will taste it most definatley. I boiled down fresh chicken, and chopped it very fine... It was perfect. Also, for the riccota cheese, I add some 1/4 cup parm cheese to it and one egg to it.. mix it up and it is fluffier when baked and much easier to spread. This was a definate do over recipe and I rateit as easy to prepare. I am going to pre freeze a pan before baking next time for emergencies and quick fixes.

Green Chili Casserole

This was very good. I think green chili peppers are under rated, we just love them. I added about 1/2 cup extra cheese of the monterey jack and colby mix. I also added half a can of green sauce before I added the egg. It gave it more of a chili flavor that we love. I cooked about 5 minutes longer and let it sit covered for 10 minutes before serving. We did use a smaller, taller dish so I had to improvise my cooking time without burning. This is a definate do over for dinner or breakfast. We ate leftovers this morning. Very good and easy! This is also healthy with few calories and high in protein, excellent for the health conscious person.

French Onion Casserole

Super Quick and Super Easy. This went over well, we had no leftovers. In variation, we used our own ground deer meat mixed with ground beef. It was a perfect new way to eat venison (deer meat). We will make this again. I thought about using wild rice next time or variate with cream of celery instead of cream of mushroom. Thanks for the recipe!
