Easy Morning Glory Muffins

Replaced a half cup of the flour with whole wheat. Instead of raisins - i am not a big fan of raisins - i added a half cups of hemp seeds. It isn't a substitute but it made them a little bit more nutritious :-)

Low-Fat Apple Spice Muffins

These muffins were tasty, though I made several notable alterations: 1) I only had vanilla non-fat yogurt, so I reduced the sugar to 2/3c. 2) I used all-purpose flour and added 2/3c of oats to the liquid mixture - whole wheat flour would have been desirable but I didn't have any :( 3) I 2 whole apples, which amounted to approximately 1.5c. Next time I might consider adding some baking powder. It is true that they are a bit "gummy" as opposed to crumbly, but I don't find that to be a big turn off.

Simple Black-Eyed Pea Salad

This recipe was disappointing. As a vegetarian, I love a good bean salad. Some of the best bean salads I know of happen to be very simple as well, so the lack of ingredients didn't surprise me. However, this bean salad is BLAND. I am not posting a photo because my "simple" salad turned out to be a tad more complex - I kept adding different ingredients and herbs in order to salvage the salad to no avail. Don't make this salad - there are so many better ones.

White Chip Chocolate Cookies

All I did was add 1/2tsp of baking powder to insure they did not flatten and leave them in the freezer for some time. This is one of my favorite cookie recipes!

Oatmeal Chocolate Chip Muffins

I cut the pecans, added a 1/4 tsp of vanilla and almond extract, and topped with oats. Absolutely fabulous! So not healthy... (Note to one of the raters: the amount of baking powder is perfect - that's what makes them fluffy!)

Popovers

This was the most amusing popover recipe I have ever used! The popovers puffed even in my muffin tin, however, some only bubbled on one side, several collapsed and made caves/craters - modern art! All popovers taste the same, but these ones had character! (I think it was the butter.)

Flourless Chocolate Brownies

Fabulous brownies! Not too sticky or sweet. They held their form. Cracked, shiny tops are also a good touch. I used semi sweet chocolate chips instead of bittersweet and Earth Butter instead of butter because my mum can't have milk fat (or gluten). I also recommend using light brown sugar instead of white sugar for brownies in general. Otherwise, I followed the directions to the word. The only issue I had with the recipe was that 25 minutes was not nearly long enough. I had to leave them in the oven for an extra 10 minutes.

Molasses Sugar Cookies

I did not follow the directions to the dot, but I still ended up with fabulous cookies - the quintessential molasses spice cookies. See my custom version (I swear it is not complicated or pretentious :) )

Crumpets

First of all, I am psyched someone posted a crumpet recipe - so cheers to that! :) I had several issues with the recipe however: First of all, the batter was too thick. Crumpet batter is about the consistency of pancake batter, so more water was a must from the beginning. Second, the recipe used more batter than necessary. Crumpets are supposed to be taller than pancakes, but not as large as popovers - your picture appears correct though. Third, the crumpets needed to be cooked for at least 10 minutes on the pan before being flipped. Crumpets are very simple and it was very easy to adapt the recipe for its downfalls, but overall this recipe was not that successful.
