Rainbow Clown Cake

So much fun to make!! Made this into cupcakes, it does take a little while to put it all together. But, the end result is definitely worth it! I used 7 different colors and each cupcake came out different and unique. People could not quit commenting on how cool these were. Thanks for a great recipe LTH!!

Blueberry Buttermilk Coffeecake

One of the best coffee cakes ever! Followed the recipe exactly. The buttermilk gives it a great moist texture. The flavor was right on, not overly sweet. Will definitely be making this one again and maybe trying it with other types of fruit!

Lemon Pie Bars

Perfect! I took the advice of a couple other reviewers and made 1 1/2 times of filling because we prefer more. The flavor was outstanding and the crust was the perfect balance. I found the baking time to be right on. Thanks for a great recipe!

Sam's Famous Carrot Cake

This was fabulous! Made it for Easter and people could not wait to cut into it. We were not disappointed!! Moist and wonderful. I left out the raisins, but kept everything else the same. I did bake it in 2 - 9 inch round pans for 35 minutes and it came out perfectly. Thanks!

Hashbrown Casserole

Really good dish! I changed a couple of things based on what I had. I only had one can of cream of chicken so I used one call of cream of celery as well. And, instead of cornflakes I topped it with a can of fried onions. It turned out great and can't wait to make it again. Thanks!

Beefy Cheesy Pasta

Super easy and tasty recipe. I doubled the recipe to use a full pound of ground beef. Instead of the sliced cheese I used about 1 1/2 cups of cubed velveeta cheese. Really liked the flavor the soy sauce gave to the dish. Thanks!

Japanese Zucchini and Onions

Hudson's Baked Tilapia with Dill Sauce

Fantastic! Very simple too. I didn't have any lemons but I sprinkled a little lemon juice on each fillet. The sauce was the best and it complimented the fish very well. Can't wait to make again. Thanks!

Blue Cheese Potato Salad

This was fantastic! I love blue cheese and potatoes...together they were heaven! I loved it hot as well. Next time I will probably decrease the amount of oil, the potatoes seemed to be swimming in it. I also used real bacon bits instead of frying up some bacon. Can't wait for the leftovers. Thanks!

Honey-Garlic Pork Ribs

Yum! These were so good. I did change the cooking method by putting the ribs and the majority of the marinade in the crockpot on low and let them cook all day. They were falling apart! I then took the meat and put it on the broiler pan and brushed the remaining marinade over the pieces and threw the pan under the broiler for a few minutes. The flavor was outstanding! Will definitely use again.

Brat 'N' Tot Bake

Great twist on the traditional tater tot casserole! Loved the flavor of the brats! I didn't have 2 cups of sour cream, more like 3/4 cup. I just mixed it straight into the soup/meat mixture. I also reduced the amount of cheese too. Thanks!

Mini Tacos

Pretty good! I did make a couple changes to use what I had. Instead of ground beef, I used some leftover shredded beef. I threw that in the skillet with some of my homemade taco seasoning and 3 tablespoons of salsa. I also add the cheese in with the beef mixture and let it melt. After putting the mixture in the wonton cups I spoon about a teaspoon of salsa on top of each before baking. 8 minutes was just enough times to turn the wontons golden brown and crispy. Topped each with a little bit of sour cream. Delicious! Thanks!

Scalloped Potatoes 'n' Franks

Total comfort food! I added an additional 1/2 cup of swiss cheese. And, I also used a package of little smokies to use what I had on hand. I but the smokies in half before layering. I found that an hour was plenty of time for it to bake & i'm glad I checked then or else the potatoes would have been over done. After uncovering, I put it back into the oven for 10 minute to let it brown. It tasted great! Thanks!
