Creamy Green Beans Parmesan

Reviewed: Apr. 19, 2010
So good! I used a 12 oz package of frozen green beans that I cooked in the microwave. I did the sauce on the stove and then added the beans to that. I used half & half instead of the heavy cream. This was so creamy and tasty. Thanks!

Cornish Game Hens with Garlic and Rosemary

Reviewed: Apr. 19, 2010
Great recipe! I had never made cornish hens before and wanted to give them a try. This was the perfect recipe to start with. Very simple to put together and bake. I did use all chicken broth instead of wine because I didn't have any. Loved the flavors and the chicken turned out so moist!

Rosemary Rice

Reviewed: Apr. 19, 2010
Fabulous! I love rosemary, so when I saw this recipe I just had to try it. I was not disappointed! I did use all chicken broth because I already had one opened can to use up. Loved the flavor and the ease. Can't wait to make this one again!

Tuna Macaroni Salad

Reviewed: Apr. 17, 2010
Loved this! I didn't have any Italian dressing so I used some Greek vinaigrette I had on hand. I also added an additional can of tuna. It made a very creamy and flavorful salad. Thanks!

Linguine with Prosciutto

Reviewed: Apr. 17, 2010
I had found a couple of packs of prosciutto in the fridge that I need to be used up and I came across this recipe. I did have to change a couple of things due to what I had available. I had to use some dried basil and left out the mint. Everything else I did leave the same. It was very easy and something different. Thanks!

Reviewed: Apr. 17, 2010
These do have a pretty strong citrus taste. We really liked them though. Didn't change anything to the recipe. Thanks!

Peach Praline Muffins

Reviewed: Apr. 17, 2010
A nice and refreshing muffin. My hubby had been pestering for peach muffins for awhile and I finally settled on these. We were not disappointed! I used frozen pieces and cut them into small chunks. They were very moist and flavorful. Thanks!

Banana Praline Muffins

Reviewed: Apr. 17, 2010
These were pretty easy with the use of the pancake mix. I'm not sure that I cared for the sour cream in the sugar/nut mixture, to me it gave it a different taste. My hubby loved them though.

Exquisite Pizza Sauce

Reviewed: Apr. 14, 2010
The sauce was just ok. Way too sweet for my taste, the honey was way over-powering. I would like to try it again, but definitely decreasing the amount of honey. I didn't find it too spicy at all.

Jay's Signature Pizza Crust

Reviewed: Apr. 13, 2010
This is my standard crust recipe! I have made this at least a dozen times now. I always use my bread machine and it makes the process a breeze. I start by putting the water and oil in first, followed by the sugar and salt. Then I add the flour and the yeast last. I replace 1 cup of the regular flour with whole wheat and I also add a teaspoon or more of an Italian garlic herb mix I have. Takes about 1 hour & 20 minutes in my machine. This makes enough dough for me to cover 2 large cookie sheets. If I only need one I wrap the leftover dough in plastic wrap, place in a freezer bag and put it in the freezer for later use. Pull it out the morning you need it, place in the fridge and it'll be ready to go in the evening. Thanks for a great, easy recipe!

Blueberry Corn Muffins

Reviewed: Apr. 12, 2010
Really enjoyed these muffins. I replaced the all-purpose flour with whole wheat. All of the rest I kep the same. The cornmeal adds a slight sweetness that we really liked. I got exactly 12 perfect muffins out of the batter. Thanks so much!

Mexican Zucchini Cheese Soup

Reviewed: Apr. 11, 2010
This is my favorite soup! I have made it several times and have yet to be disappointed. I do make a couple changes, but nothing major. I use a can of rotel instead of the stewed tomatoes and I leave out the green chiles. I like to add a little white rice to my bowl before adding the soup. Fabulous flavor. Thanks for a great recipe!

Broiled Scallops

Reviewed: Apr. 11, 2010
Excellent! I did mix the butter, garlic salt and lemon juice all together before pouring over the scallops. Kept the measurements on those the same, however, next time I may double or triple them to make a sauce to pour it all over some pasta. Thanks!

Smoked Cheese Ravioli

Reviewed: Apr. 11, 2010
Super simple supper! This recipe is great for busy weeknights. Loved the ease of using the frozen pasta. I did use cheese filled tortellini instead of ravioli. The Gouda gave it a great flavor. Definitely keeping this recipe on hand for those busy nights or nights when I just don't feel like cooking!

Best Marinara Sauce Yet

Reviewed: Apr. 10, 2010
Great marinara sauce! Exactly what I was looking for to use on my meatball subs. I used 1 - 28 oz can of crushed tomatoes and skipped the step of blending it all together. I also substituted chicken broth for the wine because I didn't have any. Thanks!

Zucchini and Corn Topped with Cheese

Reviewed: Apr. 8, 2010
Thought this was a decent dish. I did cook the onions first before adding the zucchini because we like it with a little harder texture to it and didn't want it to turn to mush. I added the zucchini the same time I added the corn and tomatoes. Used about half the amount of cheese and that was plenty. Next time I think i'll use fresh garlic as well.
