Sweet Corn Cake

Fabulous! The only change I made was to use one small can of cream corn and a big can of whole-kernal because I had no frozen. Will definitely make again!

Country Apple Dumplings

Wow! Super simple and so tasty! I reduced the sugar to 1 cup, but left everything else the same. These were great right out of the oven, served with some vanilla ice cream!

Chicken Enchiladas I

Yum! These are super good. I used a rotisserie chicken from the deli so all I had to do wash shred the already cooked meat. Sauted the onions a bit and then mixed everything else into the skillet. I left out the water and replaced the green pepper with a can of green chiles.

Baja Stuffed Potatoes

I really wanted to like this, but it just wasn't for me. My potatoes wouldn't stay together while trying to scoop out the inside, so I ended up cutting the potatoes up and mixing everything together. I then threw it all into a casserole dish and baked it for about 20 minutes. As is, this is pretty bland. Definitely needs some seasoning, maybe some chili powder, salt and pepper. I may try it again, but would need to make some changes.

Cafeteria Macaroni and Cheese

This was fairly decent. I do think there was too much mustard taste for us, it was a little overpowering. I also replaced the regular milk with evaporated to make it a little creamier. I liked the addition of the bread crumbs to the top. Will definitely try this again and decrease the amount of ground mustard.

Sweet and Sour Pork Chops

We really liked the flavor of these and were super easy to throw together. Mine did take a little longer to broil, probably a good 12-15 minutes till they were done.

Sesame-Soy Broccoli Florets

I thought this was just ok. It was a little sweet for my taste and would probably decrease the sugar some. I also decreased the amount of oil and agree with others that sesame oil would probably be better.

Favorite Banana Blueberry Quick Bread

This had a wonderful smell while baking and looked beautiful when done! It also tasted great! Loved the blueberries and banana together. I didn't change a thing and wouldn't make any additional changes when making again. I think it's perfect the way it is. Thanks!

Chive Cucumber Salad

I was looking for a cucumber salad that didn't use sugar as I don't like a sweet dressing. I thought this was pretty good. I might decrease the vinegar a bit next time, but that's just personal preference. The only other change I made was to leave out the green onion, simply because I did not have any.

Key Lime Cheesecake I

This was the first cheesecake I had attempted to make. And, it turned out perfectly! I added an extra 4 ounces of cream cheese and used bottled key lime juice. I didn't find this to be overly tart, but I love tart things. 65 minutes was perfect baking time. Make sure to use a water bath, I think it definitely makes all the difference! This cheesecake turned out so creamy and just oh so good! Thanks!

Mom's Awesome Whole Wheat-Flax Seed Banana Pancakes

These were super good! I love that they are healthy and not loaded with sugar. I did used regular milk & honey instead of organic but kept everything else the same. Hubby had his with syrup and I spread a little almond butter on mine. Great either way and even really good just plain. Thanks for a great recipe Tat!

Savory Grilled Potatoes

I had been wanting to try grilling potatoes and I'm so glad I choose this recipe to start with. Very easy to throw together and they tasted great. I left out the onion because I didn't have any and replaced the butter with olive oil. Some of the potatoes got brown and crispy and some stayed nice and soft. It was a great mix of the two! Do make sure when making your foil packet to seal it up tightly so nothing leaks out. Once done, be extremely careful when opening, the packet was full of hot steam. Cannot wait to make these again!

Asian Grilling Marinade

Loved this marinade! Didn't change a thing except to scale the recipe in half because I used a smaller amount of beef. The flavor was right on, blending together perfectly. I ended up marinading the steaks for two full days and the flavors had a good chance to really soak in. Thanks for the great recipe, EAKE!!

Super simple and oh so good! I chilled my bowl and beaters in the freezer for a good 10 minutes before mixing. The cream came out perfectly. Just sweet enough without being overpowering.

Parmesan Garlic Bread

Loved this bread! I used unsalted butter and knocked the garlic salt down to 1/4 teaspoon. I then upped the garlic powder to 1/2 teaspoon. This was perfect. I cut the bread into slices and then spread the mixture over each piece. Baked for about 8 minutes and then popped them under the broiler for a couple minutes to toast them up. Excellent!

Peanut Butter and Cream Brownies

Yum, yum and yum! I have no other words to desecribe how great this was! It was so easy to make, but looked like you had taken forever. I used creamy peanut butter instead of crunchy. And, I only had an 8 oz container of whipped topping so I mixed it all into the cream cheese/peanut butter layer. I topped it with some chocolate syrup and every piece was devoured! Thanks!

Easy Watermelon Salad

These 3 ingredients work very well together! Loved the sweetness of the watermelon paired with the saltiness of the feta and crunch of the sunflower seeds. Super easy to throw together, but I would recommend not mixing till right before serving.

Mongolian Strawberry-Orange Juice Smoothie

Really enjoyed this one. I cut back on the sugar a little bit and used frozen strawberries instead of fresh. I also didn't use as many ice cubes since my strawberries were frozen. I liked the use of the orange juice and was a nice change to the more creamy smoothies made with yogurt or milk.

Easy Batter Fruit Cobbler

This was super easy and very good! I think i'll follow other's advice and next time cut back on the butter to at least 3 tablespoons instead of 4. It doesn't make a huge pan of cobbler, so i'll make sure to double the batter from now on. I also used whole wheat flour instead of white. And, for the fruit, I used a 16 oz bag of frozen strawberries, blackberries and raspberries. Tastes great right out of the oven with a scoop of vanilla ice cream!

Bada Bing Bada Banged Potatoes

Yum, yum and yum! I loved these potatoes. I only had about 4 pounds of potatoes, but made the same amount of coating. Instead of smashing the potato, mixing into the coating and putting back onto the cookie sheet...I smashed them and then used my pastry brush to spread the coating over the potatoes. I loved all the flavors and the red pepper flakes definitely add some heat. I would suggest that if you aren't a big fan of heat, to decrease the amount of red pepper. Loved roasting them, they were crispy on the outside and nice and soft in the inside. I may also skip adding the additional parmesan cheese afterwards too, I think it had plenty in the coating. Will definitely be making these again!
