Pasta Lasagna

Good and easy. I used leftover homemade meat sauce and replaced the ricotta with cottage cheese. I also upped the mozzarella cheese a bit.

Didn't really care for these at all. Easy but very bland. I added more chili powder than called for, but think it needs even more, or just use taco seasoning. Good concept, but needs some definite tweeking.

Pumpkin Pie Spice I

Perfect! I was making a dessert that called for this spice and realized I didn't have any. Didn't want to run to the store, so I jumped online and found this! So glad I did, and I made a double batch to keep it on hand!

Outstanding! I have made this two weekends in a row now and it hasn't lasted long. The first time I made it exactly as written and it was perfect. The second time I made it, I just added a little extra cinnamon, but that was it. This will definitely be in a regular rotation!

Eggs Benedict Breakfast Pizza

This was super good! Only change I made was to use pizza dough instead of the crescent rolls. Easy to pull together and tasted great. Hubby was in heaven since eggs benedict are his all time favorite meal!

Autumn Cheesecake

Fantastic!! Made this for a gathering and didn't come home with a single piece! Followed the crust instructions exactly. I doubled the filling ingredients to make a thicker/taller cake. Kept the amount of apples the same, I followed others advice of microwaving the slices for a couple of minutes to drain out some of the moisture. So glad I did! After cooling in the fridge & right before serving, I drizzled some caramel sauce on the top. Out of this world good!!!

Taco Rice

This is a great side dish. I doubled the recipe, using 2 cans of broth, 1 - 15 oz can of tomato sauce and 2 cups of long grain rice. Mixed the broth, tomato sauce, taco seasoning and rice together, let it come to a boil, then let it simmer for about 15-20 minutes. It came out perfect! I also stirred the sour cream directly into the rice mixture. So good!

Baked Corn Casserole

This was fantastic! I used one whole 8 oz package of cream cheese instead of the 2 smaller ones. I also left out the onions because I had no fresh ones. Makes a great side dish to go with a mexican dinner!

Fall Harvest Cheesecake Bars

These are fabulous! I followed the recipe exactly and wouldn't change a single thing. I loved the pound cake crust. And, the filling was so light & fluffy. Used my own homemade pumpkin pie spice and topped with mini chocolate chips. The baking time was right on for me. Can't wait to make these again!

Quick and Almost-Professional Buttercream Icing

This was fantastic and a huge success for my first time making buttercream frosting. I doubled the batch and had more than enough to frost a two layer cake. It's nice and light. And, had great consistency.

Enchilada Meatballs

Yum! We really liked these! I missed the footnote on the bottom about adding some taco seasoning to the cornbread, I think next time I'll definitely do that. But, these were good even without it. I did use all enchilada sauce instead of half that and half tomato sauce. I poured the sauce into a sauce pan and then added the meatballs once they were done baking and let it come to a simmer. I served them over rice and sprinkled with cheese. Very good!

Loved this! I followed the exact recipe, with the exception of using 1% milk instead of whole milk. It baked up very nice and was very moist. Thanks for a great recipe!

Strawberry Peach Cups

Tasty dessert. I used white peaches, which I had never had before, and found them to be a little on the sweet side. The tartness of the topping went very well with them. I left out the orange peel because I had none. Hubby really enjoyed this one and has asked me to make it again!

These were wonderful! Light and soft, with a subtle sweetness. Easy to make and doesn't take a lot of time. I skipped toasting the coconut and just added it straight ito the batter. These were also really good with some strawberry jam on them!

Easy Green Chile Stew

We really liked this recipe and didn't find it to be too bland at all. I used a can of white hominy and a can of petite diced tomatoes. I did add the full 3 cups of water and found it to be a little too liquidy. I fixed that by adding a little cornstarch/water mixture and thickened it up to our liking. Topped it off with some shredded pepperjack cheese and it was perfect!

Loved this! I was looking for a veggie dip using ingredients I knew I had available at home, this one fit the bill. I did decrease the amount of lemon juice to 1 teaspoon. Otherwise, I left the rest the same.

Hoagie Bake

This was really good and super easy to throw together. The only change I made was to use 2 eggs instead of 3, although I still think 2 might have been too much, I ended up tossing part. I did microwave the pepperoni on paper towels for a few seconds to soak up some of the grease. I did bake this for about 10 minutes longer. It was perfect, not greasy or soggy at all. Thanks!

Creamy Shell Pasta Salad

Super good! We loved this pasta salad. I used a whole - 16 oz box of pasta and then doubled the dressing. However, I didn't double the amount of vinegar. The only thing I left out was the egg. The creaminess of the dressing was great and loved the crunch the sunflower seeds gave. Will definitely make again!
