Bodacious Broccoli Salad

Reviewed: Nov. 28, 2010
Super easy salad! I used a package of real bacon bits instead of frying up some bacon. Left all the other measurements the same. Loved the dressing this made, I didn't find anything to overpower another. I did, however, mix this up in the evening and let it sit over night. I think that probably helped the flavors to really come together.

Vanilla Pumpkin Pie

Reviewed: Nov. 28, 2010
Yum! This was a bigger hit than the traditional pumpkin pie. We all loved the addition of the vanilla, more of the pumpkin flavor was able to shine through. I replaced the white sugar with Splenda. And, added just a touch more cinnamon. Bake time was perfect. Will definitely make this one again next year!

Apple Cranberry Tart

Reviewed: Nov. 28, 2010
Made this for Thanksgiving this year and it was a big hit! Was a great change/addition to all the pumpkin desserts that are always made. I used a whole bag of fresh cranberries that I ran through my chopper and 2 granny smith apples that after they were peeled did the same thing. Super easy to make and baked up beautifully! I used a leaf cookie cutter and cut out 6 leaves and arranged them on top of the tart before baking. 40 minutes was perfect!

Pumpkin Gingerbread

Reviewed: Nov. 23, 2010
Fabulous bread! Followed the recipe exactly, but may cut down the sugar a little bit the next time. It was very moist and the spices were right on!

Ginger Veggie Stir-Fry

Reviewed: Nov. 23, 2010
So good! Followed the recipe exactly. I had never had snow peas before and now have a new favorite veggie! Loved the sauce! Next time I may add some red, yellow or orange peppers for more color.

Easy Garlic Broiled Chicken

Reviewed: Nov. 23, 2010
So simple & tasty! I used boneless, skinless chicken thighs. Broiled on high for 10 minutes on one side, flipped them over and broiled for another 10 minutes. Very flavorful and juicy!

Cheese Onion Garlic Bread

Reviewed: Nov. 22, 2010
This was awesome! I had to stop myself from devouring more than 2 pieces. I didn't change any of the measurements. You can definitely taste the mayo, but we're big mayo fans so it didn't bother us. I did use an Italian blend of cheeses instead of just the mozzarella. Broiled for about 5 minutes and it was perfect!

Roasted Brussels Sprouts

Reviewed: Nov. 10, 2010
This is the first time I have ever made or eaten brussels sprouts and I was not disappointed! I left them whole and roasted them for about 35 minutes. They were pefect! Crispy on the outside and tender in the middle. We'll definitely be eating more of these!

Jamie's Minestrone

Reviewed: Nov. 8, 2010
Fabulous! I used dried oregano & basil instead of fresh. I did add the half cup of red wine and I think it really brought out the depth of the flavor. I also used Ditalini pasta instead of seashell. The house smelled wonderful while this was simmering and I couldn't wait to taste it. Definitely was not disappointed!

Steakhouse Black Bread

Reviewed: Nov. 8, 2010
Great recipe! I liked the ease of being able to place everything in my bread machine. I didn't have any whole wheat flour or bread flour. Instead I used 2 1/2 cups of all purpose and 1 1/2 cups of rye flour. These had fabulous flavor and I wouldn't change a thing next time!

Absolutely the BEST Rich and Creamy Blue Cheese Dressing Ever!

Reviewed: Nov. 8, 2010
Definitely creamy & rich! I loved the ease of making this dressing. I can't stand bottled blue cheese dressing, but I love blue cheese and this dressing is outstanding. I realized I didn't have any garlic powder so I used garlic salt instead and just left out any additional salt.

Alfredo Linguine

Reviewed: Nov. 4, 2010
Another super simple and tasty recipe! I loved the addition of the walnuts to the sauce, gave it a wonderful flavor and crunch. I did use a jar of the Bertolli Alfredo sauce and will keep a jar around for a super fast supper!

Garlic Alfredo Tilapia

Reviewed: Nov. 4, 2010
Very good and so, super simple to prepare! The Creole seasoning and Alfredo sauce play very well together. I baked my fillets for about 15 minutes. Other than that, I didn't change a thing to the recipe!

Shepherd's Pie VI

Reviewed: Oct. 31, 2010
Really good & comforting! I was looking for a recipe to use up a ton of leftover mashed potatoes and this was perfect. The only change I made was to use ground turkey instead of beef.

Truck-Stop Buttermilk Pancakes

Reviewed: Oct. 31, 2010
Good pancakes! I cut the recipe in half, and used a full 3 eggs instead of the 2 1/2. I also added about a 1/4 cup more flour as well. They came out nice and fluffy!

Cheese Sauce Over Cauliflower

Reviewed: Oct. 25, 2010
Not bad. My cauliflower needed a little longer than 15 minutes to cook. The sauce was tasty, but needed a little something else. I think I'll add some garlic next time.

Garlic Rosemary Mashed Potatoes

Reviewed: Oct. 25, 2010
Loved these potatoes! First off, I doubled this recipe so we'd have lots of leftovers. I didn't add the garlic in while boiling the potatoes, I waited until they were done and then added about 3 tablespoons of minced garlic before mashing. I added a full 2 tablespoons of dried rosemary. While the potatoes were boiling, I poured a little of the milk over the rosemary and it helped to soften them up a little bit. Loved the flavor of these and will definitely make them again!

Mini Cherry Cobblers

Reviewed: Oct. 22, 2010
Super easy and cute individual desserts!! I liked that I could make only a couple of these instead of a big pan of cobbler for just the two of us. I did have to bake just a bit longer, my biscuits were still a little doughy in the middle.
