Red Velvet Cupcakes

I made these for Valentine's Day and they were my first attempt at making homemade cupcakes. They turned out decent, I might have cooked them just a tad too long as they were a little dry. But, adding some frosting to them, you couldn't really tell the dryness. I ran out of red food coloring so between that and the cocoa powder they didn't get as red but more of a brown color. Will definitely make again though and watch my baking time a little closer!

Lemon Curd Bars

This recipe is so easy to make! I was a little concerned when I first pulled them out of the oven...I baked for 25 minutes and they browned up nicely. I couldn't wait until they cooled to slice and they were really gooey. But, that's part of my impatience. When they finally cooled up they set up very nicely. We really liked the flavor of these and the coconut & almonds go really well with it.

Steve's Famous Garlic Home Fries

Mine didn't cook for the recommended time. They were done a lot faster. They did start to stick and burn to the bottom of my skillet, but I was able to save them. I used red potatoes since that's what I had on hand and I double all the spices. These had a really great taste and turned out really soft.

Grandmother's Carrot Casserole

I've been looking for new & interesting ways to prepare veggies. This was pretty good. I didn't use all the recommended sugar...more like 1/3 cup instead of 1/2. Tastes even better then next day!

Creamy Dill Dipping Sauce

Really good dipping sauce! I used 1 tablespoon of dried dill, but left everything else the same. It's definitely better after it sets for awhile. I served it over some salmon patties I had made for dinner. Yum! Will definitely be making again!

Oregon Salmon Patties

These were fantastic! I was a little worried when I saw that my mixture was really wet. But, they held up while frying in the skillet. I forgot to add the parsley...won't forget to next time. Great flavor and we really enjoyed these!

Granny's Cherokee Casserole

I thought this recipe was just okay. Hubby really seemed to like it. It's a great recipe for a quick weeknight meal. The oregano was a little too overpowering for me, I might add less next time. I might also try adding a can of corn and maybe some different cheese.

Pina Colada Salad

What a great easy dessert! I used 3 - 6oz containers of yogurt and 2 cans of pineapple chunks instead of the fresh. This was so good! Next time I make it, I may try adding a can of mandarin oranges too!

Chicken Broccoli Ca - Unieng's Style

Really good & easy recipe. I doubled all the marinade/sauce ingredients because we like the sauce. I didn't have any onions so I added some onion powder in with the garlic while it sauteed. I didn't have any bok choy and I steamed the broccoli in the microwave before adding it into the mixture. I was glad i did...once the cornstarch was added, the sauce thickened right away. We really enjoyed the flavors and it does have some spice to it with the black pepper. Thanks for a greay recipe!

Blueberry Sour Cream Coffee Cake

The hubby & I really liked this coffee cake. It has a great flavor to it, I made it as is but next time I think I'll add more blueberries or maybe even some raspberries. I made it in my bundt pan, but it took close to an 1 hour & 15 minutes to bake. Next time I might try it in a 9x13 pan. Thanks!

Taco Bake

This was really good. I made my own taco seasoning instead of adding a packet and left out the green chilies (mainly because I forgot to add them!). Easy, tasty dinner and will definitely make again!

This was great! I was making a dish that required a packet of taco seasoning when I realized I had none. I found that i had all the ingredients for this recipe and mixed some together. Wonderful! I will never go back to buying the packet stuff again!

Baked Potato Dip

I made this dip tonight for party at work tomorrow. And, of course I had to try it! It was delicious! I had some chives instead of green onion and a little bit of garlic pepper. So good!

Breakfast Pizza I

This was pretty decent. I ended up making it in a 9x13 pan instead of trying to use a pizza pan. Definitely allows you to play around with the ingredients. Tasted good and will make again.

When I first made this recipe and sampled one of the muffins I wasn't so sure of the flavors. But, after letting them sit for a day the flavors really came together and tasted so good! I can't wait to make these again!

This is by far my favorite baked ziti recipe! I always double the amount of all the cheeses...we're a cheese loving family. And, I only use 1 - 26 oz jar of sauce. So good!

Baked French Fries I

These were really good. I cut up my potatoes and placed them in a ziploc bag. I then added the olive oil and spices to the bag and shook to coat the potatoes. I placed them on a foil lined cookie sheet and baked at 400 degrees for about 45-50 minutes. Turned out great..
