Blueberry, Banana, and Peanut Butter Smoothie

I was kind of leery at first on how the flavors would go with each other. The blueberry, banana and peanut butter played very nicely against each other, you could taste each individually instead of one overpowering the other. I used the wheat germ in it. Overall, it was really tasty and will definitely make again!

This was so good! I did simplfy it a little bit by using a package of real bacon bits instead of frying my own. I just dumped the package in the skillet with some oil, onion and garlic and let it cook for a minute or two. I used 2 cans of petite diced tomatoes as neither my hubby or I like big chunks of them. This is so easy and will definitely be one of my go to dishes when I don't feel like cooking much.

Zucchini-Chocolate Chip Muffins

Loved these muffins! The only thing I did different was to replace the oil with applesauce. They turned out moist and certainly didn't last long at my house!

Chocolate Chip Banana Muffins

These were delicious! I replaced the oil with applesauce and used 3 over-ripe bananas. Kept all other ingredients the same. They were moist and full of great flavor!

Crispy Rosemary Chicken and Fries

Great recipe! I used boneless, skinless chicken thighs and dried herbs instead of fresh. I baked for a full hour and the meat turned out very tender and moist and the potatoes were done perfectly.

Spicy Sausage Quiche

Family really liked this recipe. The only thing I did different was to use spicy sausage instead of regular. Nice and spicy and we'll definitely make again.

Pistachio Mallow Salad

This was a fairly easy and tasty recipe. But, I think it needed a little something extra. Maybe some more pineapples or pineapple juice, I tasted a lot of the marshmallow flavor. It was still really good and we definitely ate it all up!

Chocolate Covered Marshmallows

What could be better than chocolate and marshmallows! Fairly easy recipe, I did need to add a little shortening to my chocolate chips because they weren't wanting to melt smoothly. I only dipped half the marshmallow into the chocolate and found that the 2 cups of melted chips was plenty to dip the whole bag of marshmallows. I also sprinkled the end of each marshmellows with colored sprinkles. Fun and yummy!

Roasted New Potatoes

I love roasted potatoes and am always looking for new ways to prepare them. This one did not disappoint! I did add a touch more garlic, but the flavors worked very well together. Can't wait to make these again!

Slow Cooker Italian Beef for Sandwiches

This was excellent and very easy to put together in the morning before leaving for work. I didn't have any onion salt so I used some onion powder instead. I put some baby carrots in the bottom of my crockpot and let them cook in the juices all day long. I pulled them out when I pulled the roast out to shred. I added a little bit of cornstarch to the juices to thicken it up a bit before adding the shredded meat back in. I let the meat soak up in the liquid for about another half hour before serving. So tender and full of flavor!

Secret Burger Sauce

Wow! This was so good! I used some baby dills that I put through my food processor to chop up and kept all the measurements the same. Yum! I can't wait to make this again and use it for all sorts of burgers, fries, etc.

Roasted Rosemary Cauliflower

Such an easy recipe! I used dried rosemary which I just sprinkled on top of the cauliflower before putting in the oven. We really liked this and will be making again!

Pork Chop and Feta Skillet

We loved these! I placed my pork chops on a plate and let them marinate a bit in the lemon juice before putting them in the skillet. They turned out very juicy and tender. I added the feta cheese after removing the chops from the skillet and plating them. Yum!

Honey Roasted Red Potatoes

These were wonderful! I didn't have any onion, so I added some onion powder to the mixture. I also added an extra tablespoon of honey. These took a little longer to bake but were well worth the wait. Can't wait to make these again!

Baked Soy Lemon Chops

Wonderful flavor! I only got to marinate these for about 30 minutes and I think that was good enough. Pork chops turned out very moist. Next time I'm going to try these out on the grill!

These certainly live up to their name! I made these for my hubby to have for breakfast during the week and had to sneak one to try for myself. So good! The only thing I did different was to add frozen blueberries instead of fresh. Hubby has already asked me to make these again!

Tuna Noodle Casserole II

Good ole' comfort food! I used a full can of evaporated milk, 2 cans of tuna and a little less cheese. I also used some mini bowtie pasta instead of the eggs noodles since that's all I had at home. My hubby even went back for seconds!
