Irish Champ

This is now a family favorite! I have made this a bunch of times already, though this most recent time I forgot to add the salt! It was a little bland the first day, but the leftovers (I make A LOT) had a wonderful green onion flavor that we never noticed before!

Irish Stew

This was FANTASTIC! I will admit it was the first time I ever tried cooking lamb, but since my husband can't eat corned beef, I wanted to make a traditional Irish stew for St. Patrick's Day. The only thing that I had omitted were the potatoes because I was serving the stew over Champ. Definitely a keeper! Thanks for the recipe!

Thyme Green Beans with Almonds

Made these today for Mother's Day, DH loved them, my oldest daughter thought they were good, but my youngest thought they were "too hot", the only change I think I'll make is to cut to 1/4 tsp of pepper. Personally, I like things with a "bite" and thought these were great!

Spinach and Strawberry Salad

Absolutely wonderful! I made this today for Mother's Day, everyone loved it...I barely have enough left to save for one serving, and I wanted some for lunch tomorrow! Next time I save some aside! Thanks for a great recipe!

Irish Beef Stew

If you are using Guinness or any other beer it is not gluten free, because beer is made with barley, a grain that contains gluten. I made this using gluten free Redbridge beer (made with surghum) and cut the garlic down to 2 cloves. I served it with gluten free biscuits from Glutino.

Easy Sugar Cookies

I may have already reviewed this, but I would like to add. My family loves this recipe! I cannot make enough of them! to those who find the dough crumbly or hard to roll, don't be afraid to get your hands dirty and work the dough, after adding the flour, I do it the old-fashioned way, mixing by hand. It comes out very workable for rolling to cut out or making into balls. By the by the last batch I made (for my peanut's Halloween party) made almost 7 dozen!

E-Z Drop Biscuits

I wanted to make drop biscuits to go with stew, but didn't have any biscuit mix. this recipe was easy and they came out GREAT! Hubby Ed said he did not need to put any butter on them, they were good on their own. I did forget to add the cream of tartar, but they still came out fluffy and just like the box mix. I'm also going to use this recipe to make dumplings, instead of baking them just drop them into boiling soup or stew. Thanks for a quick, easy and delicious recipe!

Sunday's Apple Pie

I tried this recipe looking for an easy apple pie to make. My family loved it! I did cheat and use the Pillsbury crust, I also added a little vanilla and nutmeg along with a shot (or two) of ground ginger. I did leave it set for about 3 hours before serving so it wasn't to runny. Thanks for a great recipe, I am going to be making this often!
