Yummy Pikelets

These were really good! I took someones suguestion and put some jam and cool whip on them and they were a fast and easy sweet snack. I got 16 2 inch rounds. I also added a dash of vanilla cause I really like it.

Chocolate Ganache

I used semi-sweet chocolate chips because that's what I had on hand. After letting it cool about an hour I whipped it to use as a frosting on the "black magic cake" from this site. It was so yummy

Black Magic Cake

Wow! best cake ever! It was super moist. I made it into a layer cake. After slicing the cakes in half I froze them to make it easier to frost. Came out perfect.

Refried Beans Without the Refry

I did soak my beans overnight before making them. I only used 8 cups of water at the begining and I still had to drain 2 more cups to make it like a thin soup. We didn't mash them just scooped them in a bowl topped with cheese and sour cream and ate them like that. It was delish!

Blueberry Pie

I used fresh berries and 4 T of cornstarch but mine was still a little soupy. I should have also covered the edges of the crust with foil for half the cooking time. The flavor was good though.

Came out great but I only used 2 T of butter and it came out great. I can't even imagine how it would be with that much butter, but that much butter just doesn't fit well into my lifestyle.

GA Peach Pound Cake

I did use fresh peaches because they are in season. Super moist and I loved the "sugar crust" I will be doing that on all my cakes from now on. Everyone raved about it, I was even asked for the recipe.

Acorn Squash

These came out great! I only used a little brown sugar and I didn't use the butter because I'm watching my calorie intake. It was sweet even before I topped with brown sugar. I also used a baking sheet lined with foil for the whole thing and clean up was a snap!

MIne were a little thick so I added about 1 tablespoon more mike. I also added 2 T sugar because I wanted sweet crepes. They came out great

Mom's Incredible Spinach Gratin

This recipe was wonderful! I trippled the recipe and brought this to easter. At first I tried to use fresh spinach and after spending 15 bucks I only had a couple of cups after it cooked down so I went back to the store and bought the frozen kind and mixed them. Next time I will use all frozen. I also made it up the day before and just did the oven part on easter. A great make ahead dish! I might try it in the crock pot next time.

Cheese's Baked Macaroni and Cheese

GREAT! I did half the kielbasa and I used the turkey kind. It was enough for my family. I also left some cheese cubes whole and tossed them in at the end so we got gobs of cheese. I didn't have any bread crumbs so I used crushed ritz crackers. My husband raved about it (and he never does that!)

Lemon Chewy Crisps

These were great! The only reason I didn't give them 5 stars is that by the end of the second day they had dried out and were crumbly. They still tasted great though. I doubled the recipe and couldn't get enough zest, I even zested 2 lemons and only needed the zest of 1/2. So I added a little lemon extract with the vanilla. I like them really lemmony!

Old-Fashioned Roasted Pecans

I also used vanilla instead of water, and 1/2 white sugar and 1/2 brown sugar. I did use half walnuts and half pecans, because that's what I had on hand. Next time I will try almonds. The whole batch was gone in an hour, my future husband ate so many he had a stomach ache but they were so good he couldn't stop.lol
