My favorite things to cook

I love sweets. That being said I'm currently half way through loosing 30 lbs. I'm currently trying to satisfy my sweet tooth with lower calorie deserts.

Butterscotch Oatmeal

this was good. I halved the brown sugar and the butter. Next time I may add some pecans. I wisked the eggs, then added the brown sugar and wisked some more before adding the milk. The eggs were fully incorporated and I didn't have any problems.

Potato Latkes I

I doubled the recipe, but I only put a little extra salt ( I did use season salt though) and they were still a little salty for my tastes but other then that they were good. I also add a little pepper after the first batch and they were better.

Sweet Corn Muffins

These were great! Not too sweet for me and my family. I might use my stand mixer next time to mix it though. I did add about 1/2 cup or more of frozen (thawed) corn folded in right at the end because I love con in my corn bread.
