About this Cook
I didn't do very much cooking until what I have been trying to do right now with the help of I don't have many excuses not to learn to cook. I have enjoyed trying new recipes and not eating the same things week after week. The menu set up and shopping list has been a great help to a beginner like me.
My favorite things to cook
I have only just begun seriously cooking meals that expand further than the same 3 courses. A meat, frozen vegetable and packaged pasta. So far I have made a lot of soups and stews because it is winter. I also make Mexican food because we like to eat it.
My favorite family cooking traditions
I just made an "enchilada casserole" like the one my mom makes using the Burrito Pie Recipe here on site. A lot of people grew up with Corned beef and Cabbage and so did I. My boyfriend and I enjoy cooking it often. This Christmas I made Russian Tea Cookies for the first time and they came out just like my moms when she would make a variety of cookies. I have several others to try next especially Snickerdoodls, they were an all time favorite at our house.
My cooking triumphs
Recently I was able to successfully prepare salmon well enough for my boyfriend to say he liked it. Him not liking salmon was a huge obstacle to overcome. The recipe Grilled Salmon 1 is what I used from this site. I also made the Anaheim Fish Tacos in order to bring healthier food to our diet and he loved those too.
My cooking tragedies
A recipe cooking pork in the crock pot called for apple cider. I completely miss read it and used apple cider vinegar. It wasn't till near the end of the meal that my boyfriend politely asked if It was supposed to have so much vinegar. I have since made it correctly and we both enjoyed it.

Baked Sweet Potato Sticks
This recipe was the basic idea of what I wanted so I took recommendations from other reviewers. I did not want to eat the skin so I peeled and thinly sliced 1 large Yam, more than enough for 2 people. I also used a plastic bag to shake the ingredients. You can use your own preferred spices. I copied another reviewer who used cinnamon, nutmeg, salt and brown sugar. Don't forget the olive oil. I was light on the olive oil and mine were a little dry. I think a good coating will help with that next time. Since I cut mine thin, I reduced the cooking time down to 20 min. which I found to be a definite time saver. They probably could have been checked at 15 min. Since yams are so good for you and my boyfriend liked them I will be making them again. I may alter it and try new spices just to see what I'm missing. Like garlic and paprika.

Mediterranean Lamb Burgers
This Lamb burger has wonderful flavors. I bought every condiment in the recipe except green tomato, the store was out of those so I used red. I made a Tzatziki Sauce on this site to use on the burger rather than the plain yogurt,garlic and lemon sauce listed. I think it was just the right compliment to the lamb. It took a little longer to make the Tzatziki from scratch but worth it. Make it a day ahead and refrigerate. I also froze my leftover patties. A tasty sandwich but a mouthful and can be messy.

Cheddar, Baby Leek and Tomato Sandwich
I tried this recipe to use up leftover ingredients, I had a leek, tomatoes, yellow cheddar cheese and 1 piece of chicken. It seemed the right fit and it turned out to be a delicious sandwich. I followed the directions but added cut up cooked chicken and diced the tomatoes then tossed it all together with Hellman's Mayo before spreading it on whole wheat bread because that's what we had. Added the cheese and grilled. We did not find this to be too rich but just right. I did not need to sauté the leeks like other reviewers since they were all mixed in with the chicken, tomatoes and mayo. Just make sure you cut them small enough and they won't bother you raw. A unique, but worth a try recipe.
