I'm not very good at relaxing, yet cooking works for me. It allows me to be methodological and nit-picky (as I am about many things!) yet also to have fun and to enjoy myself because I believe that our emotions are cooked into our food (ever read Like Water for Chocolate?!) I get excited to come home after a long day at work and put together a meal I've planned . My goal is to keep my food shopping around $100/wk (its just me and my husband), to cook healthy, low-fat, and mostly non-dairy as I'm often lactose intolerant. And because I get home late at night, it needs to be able to be cooked in 30 minutes or so. All while making my meat-and-potato-husband happy :) It's always a challenge, but one I look forward to!
