Chicken with Quinoa and Veggies
Not bad! I made the following changes: Only used 2 Tbsp of olive oil instead of four, used reduced fat feta cheese to make it a little healthier, and I couldn't find garlic scapes so I went with a few cloves of minced garlic. Do not add ANY salt, the broth and the feta give it more than enough salt. I have been looking for a high protein meal for lunch and I will definitely be adding this recipe into my rotation.

Green Bean Casserole I
We were blown away by how awesome this dish is. I substituted french fried onions for the stuffing since we love those. This recipe is so delish that we never have next day leftovers (and that's just two people). So much better than the campbell's soup recipe!!!!!!

Gorgonzola Sauce
This was so good my husband actually licked the plate! We served it over gnocchi. It was delicious!
