Cranberry Salsa

I have made this for a few years on Thanksgiving and IT IS SO EASY TO MAKE! Every year I get the same comments: "that is the best salsa I have ever had," "if you make more of that I want to buy some," "how did you do that?" "that is awesome!" and then it quickly disappears. IT IS SO EASY! It is tempting to keep it a secret because IT IS SO EASY and people think I am so awesome, but I always share the recipe and then all of a sudden they seem disappointed that it wasn't some kind of magic that made it so good. I make this because IT IS SO EASY! Your guests will not be disappointed and IT IS SO EASY! DID I MENTION IT'S EASY TO MAKE? The only difference with mine is I used bhut jolokia pepper instead of a jalapeno (a very small one and it was probably a solid medium in heat level rather than mild), a little warm for some so last year I made two batches with one more mild.

Mexican Goulash

Two of my three LOVED this, my third didn't like it at all. I thought it was awesome as well as my parents (we had them over for dinner). Overall, it was a hit except for one strange child that didn't like it for some reason. I love spicy food, but I'm the ONLY one if my family :( I think this a great way to introduce kids to spicy food. I had a pretty mild salsa, but it did have a little zip to it. My oldest said, this is spicy, but kept eating it because it was so good. My youngest didn't say a thing, just ate it. Will definitely make again, will use a different brand of salsa for my picky eater.

Easy Mac 'n' Cheese

All my kids loves this. I did a couple things differently: I didn't have hot dogs so I planner on using bacon, but I forgot to buy some when shopping so I didn't use any meat. I also didn't have any oregano so I just used some fresh parsley I had in the fridge. I also didn't have any cheese sauce but I had some velveeta. Melted and mixed this with some milk, stirred in my parsley, added some milk, poured right in the casserole dish for a little more moisture. Sprinkled with plenty of mixed shredded cheese on top, crumbled up the Ritz and then sprinkled shredded parmesan on the top. All I can say was wow! I have picky kids and they all loved it! I have to admit it was my fav mac & cheese to date as well. My oldest loved the Ritz and parmesan on top was her favorite part. Overall this recipe was a good start to get creative with, again mainly out of necessity so I cant really speak too much to this exact recipe actually.
