Mulligatawny Soup II
My family loves this. I can't get it quite like from the restaurant, but it is good. I make a double batch but don't double the stock/broth to make it a meal. It's our no meat meal. I use a bay leaf instead of curry leaves. I just can't find them. I don't add coconut milk for me, but I add it for my kids to tame the spice. My husband who loves spicy adds dried indian hot pepper to it. Recently I was out of coconut milk (misplanning on my part) and added a little sour cream and a little nonfat plain yogurt. The kids didn't seem to notice. I agree, you need to 'cook' the spices before adding the broth or its not the same. Yummy!

Crunchy Oven Fried Tilapia
We loved this. My son ate it like fish sticks. I added Lowreys seasoning salt, lots of it to the flour and some lemon pepper to the bread crumb mix. It worked great. I also used tin foil in the pan and little olive oil spray on the tin foil and on top of the fish, very light. I put it in the middle rack for 10 min and the top rack for 5 ( our oven is a slow oven). We will make this agin for the Tilapia for sure! Clean up was easy too.

Sour Cream and Horseradish Asparagus
I don't like asparagus, but liked this. I broiled for 2-3 min, but I have a gas oven and let the rack be on the second setting. Yummy!
