Meatball Nirvana

I have made this now 8 times in the last 3 months and I make a big bowel of them I have bumped it up to where it makes about 28 meat balls. Make them and put them in the fridge and use them on Meatball sandwich, spaghetti, nachos, put BBQ sauce over them heat them up. I want to try 1/2 ground meat and 1/2 ground pork for the recipe but never do it when I make them. I bet it would be very good I will have to do it next time lol maybe.

Pan Seared Lemon Tilapia with Parmesan Pasta

I always read the reviews before I try it or save it and although this was not a five star it sounded good to me. Have an abundance of Tilapia so always looking for new ways to cook it always. The first time I did it I did not have lemon juice but key lime juice was in hand and did not have elbow mac but did have bow tie (small) and I did double the spice mixture for both the fish and the Mac. and fallowed the recipe for cooking I have printed this recipe for 10 days now and it is so good I have cooked it 4 times all with different pasta bow tie, angle hair and penne . the last time I did it with elbow pasta kind of disappointed bow tie was the best and it adds the class look to the dish this recipe deserves all in all pretty good don't over cook the fish and you cant go wrong.

Boilermaker Tailgate Chili

I made this again for a pool tournament for 50 people yesterday. I could not find any green chili peppers so I used poblano peppers in their place. WOW what a difference in taste. Everyone that had it before said it was even better very nice flavor. The poblano peppers stood out with their one flavor very distinguishable taste. May never go back to green chilies.

Grilled Bacon Jalapeno Wraps

I saved this recipe a couple of weeks ago and then had a BBQ over the house. I made about 40 of these with some fresh Jalapeño peppers from the fruit stand. Big Peppers 5-6 inches long lol saved the seeds. Put cream cheese in the hafted peppers and wrapped with bacon used tooth picks like mentioned in the recipe good idea. Half I left alone just like the recipe. The other half I put some Tony’s Cajun season on the cream cheese before the bacon just a little. After the bacon was wrapped and picked I had just purchased some NEW “Tabasco Buffalo style hot sauce” and was dying to try this on something. So I drizzled it on the top after the top of the peppers bacon was cooked flipped it to cook the bottom. Have to say pretty good. Another jalapeno recipe that I will make again this is another good one.

Best Tuna Casserole

WOW this is very good got a recipe of the day like always... But looked at this around lunch time and said hhmmm I have all of this and this is what I made for lunch. Fast, easy and very good. I doubled the mushroom soup seemed a little dry. I ate two big bowels I think I need a nap... this is good the chips you can taste in every bite I used Tortilla chips all I had... Impressive recipe

Chicken Cordon Bleu II

Like this recipe its easy tastes great as it is. Was hungry to have some one day but did not have any ham and have been eating rubens all week and didn’t really feel like going to the store and I thought well lets try corn beef instead ham. Believe it or not I have made this many times since and only with corn beef it's really a surprising taste combination.

Big Al's K.C. Bar-B-Q Sauce

This recipe is for lack of the perfect word GREAT. You can never make enough. I cooked for a grand opening for a little sports pub and cooked 240 lbs of chicken 20 gals of BBQ beans and 2 beef loin (flay minions) on my grill and finished it off with this. I could not believe it. I am not a big fan of vinegar base BBQ sauce until this one it changed my mind. First time I made it was cooking for a few days you know making lunch and dinner for a couple of days. This sauce was so good the only thing that stopped me from eating all of my next couple of day meals was I was too stuffed to eat any more had to stop. I make it at a gallon at a time not expensive and seem to keep for some time in the fridge. Just fallow the recipe it’s sweet with a little bit of a vinegar tang and has a little bite at the end. But all in all OH YES this is a keeper.

Venison Schnitzel

Not bad I had a back strap given to me last weekend so I looked for a recipe to cook it with and I chose this one. Did not have lemon juice but I had key lime juice and as soon as it came out of the frying pan I dribbleld the lime juice on every peice that was finished. I was very impressed I ended up eating the whole back strap myself. Will use this again no problem.

Deep Fried Jalapeno Slices

Very good I did this as an appetizer for about 8 people little party to watch the saint’s game on Sunday. 6 racks of ribs, pork loin, BBQ beans and these. Doubled the order and put it on the coffee table. Went to check on the ribs came back and it looked like the game was no longer interesting everyone was around the coffee table loading up there bowls with these peppers. Will make them again no question.

Frogmore Stew

Used to do this in Savanna Ga. And we called it a Brunswick boil no matter what the name is this is very good. I would use a little more shrimp and a little more Old bay and a few garlic pods.

Grandma's Corn Bread Dressing

Made this Very good but I bumped Cal up to 50 the amount of people I was cooking for and it was still very very good little bit messy to make but well worth it. Along with 8 smoked turkeys making again this Satuarday same amount can't waite...

BBQ Dry Rub

Love it Love it I took a large pork loin and rolled and cut it to where it was 2 ½ foot in length. Sprinkled this fantastic rub on the inside and the rolled the pork loin back into original form and then coated the outside of the loin put it on the smoker and smoked it with pecan wood. When it was finished and cut it look like a pork cinnamon roll… Best I ever had people went nuts. update : I have made quite a few times and in big volume I found if you half the salt measurement and replace it with half garlic powder and the other half onion power the salt that seems to over power is at a comfortable level with a little extra flavor from the garlic and onion that was added
