This is great- my son recently was diagnosed with Type 1 diabetes and I've been looking for low carb versions of his favorite foods- I omitted the chili powder and added dried onion instead- everyone loved it!

Low Fat Buttermilk Ranch Dressing

Changed for Type 1 Diabetes: I made my own buttermilk using heavy cream, used real mayo, and regular sour cream with dried chives, dill and parsley to save money- no salt or pepper and it is great! We count carbs in our a family (not fat) -using my type of ingred. the total recipe yield is about 2.5 cups with .9 carbs per 2 TBSP serving! Love this!

Thai Cucumber Tomato Salad

Love it! Followed the recipe, except substituted stevia for sugar (son is diabetic) and it is great! Some people thought it needed something- I like it sprinkled with Salad Supreme Seasoning- reminds me of a chain restaurant's cucumber/tomato salad.

Caldo de Res (Mexican Beef Soup)

YUM! I used frozen ear corn- fresh in February was just too much money. The chayote was great in it! I did add a bit of cumin to the meat while I was frying it- but that is my family's tastes.

Vegetarian Tortilla Soup

This is very good! Don't over cook the peppers/onions at the beginning- I did and I think they would've been better if I hadn't. I didn't do 3 Tbsp cumin- I love cumin, but that seemed to be too much- 2 Tbsp was right for me. I also added a can of drained garbanzo beans- yum!

Tomato Zucchini Casserole

I've made this a few times. I bought a bag of the artisan cheese mix (the italian one with herbs) to substitute for the cheese mix and it's very good. I've also made it on the grill in a foil packet- very good again! A great way to use extra zucchini and tomatoes in the garden.

Black Bean and Corn Salad II

Also makes a great dip with tortilla chips. I'd chill for awhile before serving. It'd be ok to cut back on olive oil a bit if you wanted and add a chopped jalapeno for a bit of zip.

Onion Rice

My daughter who doesn't like onions liked this. I did use instant rice and it turned out great (needed it done quicker). I didn't fry the rice- after sauteing the onion I added the broth, got it to boil then added the rice, took it off the heat and covered it. I also used sweet white onion as I was worried the red onion might not look as nice. Very good!!

AWESOME- even for those who don't like hard liquor. I didn't use lemon juice- just a whole can (12 oz) of lemonade and skipped the red food coloring- didn't need it as the color looked nice without it. I made a few mixed drinks for a large party and this was most popular.

This is so much better than using canned pumpkin. It'll still taste good with canned if you can't find a sugar pumpkin- but you're missing out if you don't use it!
