Jalapeno Popper Spread

Reviewed: Nov. 22, 2014
Made this for company to snack on while the pizza was cooking. Used parmesean-Romano cheese and topped with panko mixed with the cheese. Baked in the oven for 25 minutes. They asked for the recipe.

Ginger Chili Citrus Salmon

Reviewed: Aug. 16, 2014
Used agave instead of honey and omitted the sugar as suggested by another reviewer. I reduced the marinate while the salmon was cooking. I was rather alarmed by the vinegary smell of the marinade, so added about 1/4 cup orange juice to the reduction. It still smelled rather vinegary, but I need not have worried. This was by far the most flavorful grilled salmon we have ever had! Just the right amount of heat from the red pepper flakes. I think that if the salmon had been the least bit fishy beforehand, this would have taken care of the problem. This will be our new favorite grilled salmon recipe! Thanks!

Buffalo Blue Cheese Chicken Burgers

Reviewed: Jul. 26, 2014
Used panko bread crumbs, which I think made the burgers light and moist. Also used less cheese and wing sauce. Just the right amount of heat. We eat our burgers without the bun and these will be added to favorites!

German Potato Salad

Reviewed: Apr. 13, 2014
Fixed exactly as written. Pressure cooked for 5 minutes and let the pressure come down on its own. Potatoes were cooked perfectly and it tasted like German restaurant quality German potatoes. The only thing missing was the white flour sauce, but it isn't missed and the flavor is spot on. This is a wonderful recipe for a healthier german potato salad

Spicy Party Pretzels

Reviewed: Feb. 22, 2014
Reduced oil to 1/4 cup...doesn't need anymore than that. Didn't bake, jut added liquids to pretzels in a zip lock bag and shook until mixed. Turned and shook the bad every 15 minutes until thoroughly mixed. Perfect and addictive!

Hot German Potato Salad III

Reviewed: Nov. 15, 2013
Followed the recipe except used a package of Simply Potatoes, the sliced variety, instead of peeling, cooking and slicing my own. The sauce was enough for the amount of potatoes in the package. Using this shortcut made the recipe very easy. My husband has been asking for german potatoes but every recipe I have seen before just seems too time consuming. We both loved the recipe and I will be serving him his German potatoes on a regular basis now

Slow Cooker Cinnamon Apple Steel Cut Oats

Reviewed: Nov. 13, 2013
I scaled it down for my 1 quart slow cooker. I used 1 cup steel cut oats 2 cups water, 20 oz applesauce, 3 small apples, 1 tsp cinnamon and 1 tsp brown sugar. I also added a handful of dried cranberries. Cooked it on low for 8 hours and it turned out perfectly. Very hardy breakfast. Husband loved it too.

Spinach Stuffed Portobello Mushrooms

Reviewed: Oct. 12, 2013
Used the mid-sized mushroom caps and greek dressing as I didn't have Italian. Fresh spinach wilted in a pan with diced stems and garlic. Omitted the pepperoni. Served as a side dish and put in pita bread the next day for a sandwich with some tomato and lettuce. Wonderful flavor!

Baked Slow Cooker Chicken

Reviewed: Oct. 12, 2013
Fixed as written. Although the skin was not crispy, it was OK. The taste of the chicken was very bland. I would rather cook in the oven for 1 1/2 hours and get the flavor and crispy skin. Maybe if you added more spices inside and out. The other thing I don't like about doing whole chickens in the crockpot is having to pick through the bones to get all the good dark meat. The breasts came out in two pieces, but I had to pick through bones to get the rest.

Alabama Pulled Pig

Reviewed: Aug. 18, 2013
Fixed this as written except marinated it first with a Mexican marinade from a bottle I had in the fridge. Based it with the sauce Crome here while it was smoking, then wrapped it in foil with the remainder of the marinade and cooked for another 1 1/2 hours in the oven. The bark was outstanding, but the spicy flavor won't get inside unless you shred and cook, following the recipe. I think I will try injecting the meat with the sauce, then smoke/ baste and see what happens. Will let you know

Good Frickin' Paprika Chicken

Followed recipe as written. Used the sherry mixture as a glaze at the end of grilling. Would use a tad more heat in both the marinade and the glaze. Was still fantastic as written

Peach Custard Pie III

Reviewed: Jul. 23, 2013
Although the pie turned our having a good flavor, the sugar mixture on top of the pie never did anything. I expected it to soak into the filling and turn into a sugary topping. It just sat there and turned a powdery brown. The pie was no where done in 30 minutes, so I took it out and tried to mush the topping into the filling, but that didn't work. I made with peaches and only needed 3 peaches, sliced. Even with fewer peaches, the deep dish pie shell was over filled with the liquid. Pie was done after a total of 50 minutes and the flavor was nice. Made with peaches, but any fruit would do.

Turkey Burgers with Brie, Cranberries, and Fresh Rosemary

Reviewed: Jul. 20, 2013
Fixed as written, but couldn't really taste the Brie. We cooked them on the grill, but the cheese did not ooze out and they stayed together very well. Next time I will put the Brie in the middle for a stuffed burger. Otherwise, the favors were great. The cranberries made it taste kind of like thanksgiving turkey!

Easy Batter Fruit Cobbler

Reviewed: Jul. 20, 2013
Wonderful and easy too! Melted just two tablespoons of butter, otherwise followed the directions. Made with fresh peaches, skin on, and topped with cool whip. Delish! Can see using any fruit with this recipe. Will keep in my favorites file!
