Italian Fresh Vegetable Soup

I made this to bring to the monthly Birthday party we hold at the American Legion Post 82 - I used all the Fame Share Veggies we got delivered to the Legion and spices from my garden. Everyone raved, went for seconds and got my recipe on FB. Needless to say out of a double batch, I only got one dish to bring to lunch today. Ha-Ha

Ukrainian Chicken Kiev

I made this yesterday for my mom, dad and hubby. Hubby was hesitant at first as he doesn't like boneless skinless breast at all. Well he actually loved it. He said it was the first breast he ate that was moist and full of flavor. I was happy that it fried to a beautiful color in the time stated on the recipie. It was quite a challenge to get them rolled up tight and secure, then floured, dipped and breaded again. More work than I anticipated, BUT well worth it. I did use the suggestion from another review in that after I completed the the rolls, I put them in the freezer for 1/2 an hr. and then in the fridge for 2 more hours before I cooked them. I didn't use any toothpicks and to my surprise they stayed together beautifully. When I went to cut my mom's (she had a stroke and can't cut her own food) well OMG the butter squirted out and she was look om my that is so beautiful and juicy. This well be a spacial occasion dish because of the work involved, BUT thank-you for sharing, Brenda

B's Grilled Chicken Tandoori

I made this just as the recipe stated, very tender, juicy and quite delicious. Be sure to spray the grill well before grilling as it wants to stick. Other than waiting a day to marinate the recipe is quite easy to make. Ut Oh I remember, I lied, I used turmeric and paprika for color and more flavor rather than food coloring. Thank you it tastes so authentic. I had a friend who was of this culture and she made it several years ago and this is right up there with what she had made. Great recipe - D-Double-delicious!

Keftedes - Greek Meatballs

My elder mom whom I take care of every Sunday just loved this. I was loking for something with mint and basil and different and this fit the bill and fill our bellies, quite Yummy! I served it with Tzatzike Sauce for dipping.

Zucchini and Feta Cheese Fritters (Kolokithokeftedes)

Thanks for sharing, I was looking for recipies with mint and something different. I served to my Italian momn whom I take care of on Sundays. She said it was wonderful and in her 80 years of life it truely was something different. Iserved it with the Greek Meatballs, yum as well.

Mama's Italian Wedding Soup

This is an absolute wonderful recipe. I don't normally like any soup (chicken broth based) This one however I loved. My Grandfather whom was born in Italy would roll over in his grave and say, God Bless you Brenda for always keeping up with traditional Italian Foods. I made it this Mother's Day Weekend and my Momma, who's 80 years old and Italian of course like Gramps, was quite impressed. Being a diabetic she was happy with a soup that was nutritious and delicious! My Dad 83 years of age, loved it also. He has some peptic problems and this was gentle on his tummy. I pretty much followed this to the T, but I did add some fresh mushrooms,as well all my spices & onions & carrots where fresh from my garden! This is a keeper and I'm making it again this weekend so I can have some to bring for my lunches and also to my Mom & Dads! Thanks!!!!!

Baked Chicken and Zucchini

YUMMY!!! I made this for company this weekend. I used chicken thighs ~~~~ everyone went nuts over this and wanted the recipe. My thighs where quite large and I had to bake it a little longer. (15 min) I did follow as the recipe as per suggested, except that I marinated my chicken in Italian Dressing for 6 hours before I started. My hubby, my parents and my in-laws wanted to know if I would make it soon again and my mother-in-law said this would be fitting for a 5***** Restaurant ~~ Thank you

Crispy Zucchini or Pumpkin Blossoms

If I could give this 10 stars I would. I made this last night for company as an appetizer, everyone went nuts over it!!! I did have to add just a little x-tra water to thin batter slightly. The only blossoms I had was from my yellow summer crook neck squash, so that's what I used. M'mmmmm Good! They fluffed up so beautiful as they fried, what a wonder site and taste!!!! My grandfather who was born in Northern Italy, I know he's looking down upon me now and is proud of his Bella Mia!! I can't wait to make it again and try some new ideas with stuffing them. I will be picking my blossoms again soon to try this. I can't wait so it'll probably be today! Thank you so much for this recipe.

Potato Salmon Patties

I made this for my Dad two evenings ago. He gets food given to him from the Senior Citizens Center program here where I live and he had NO idea what to do with his can of Salmon. He just absolutley loved it. I din't change a thing. It also made a nice lunch for me the next day, I heated the leftover patties in the micro for 20 seconds,,, Yum-Yum, Thankyou
