Foolproof Rib Roast

This recipe worked out fantastically for me! I was thrilled that it did because the the prime rib that I purchased cost $16.99 a pound (10 pounds). I certainly did not want to ruin it!

Charley's Slow Cooker Mexican Style Meat

I found this to be a fantastic and delicious recipe. This was the first time I tried it and I used pork. First off, I did not brown my pork (way too much splattering oil and my day help hates when I do this). Salt and pepper on the roast and into the crock pot it went. I added 1 can chicken broth, chili powder, cayenne pepper, garlic powder, and onion powder, and cumin. I cooked the meat until it was tender and would pull apart easily. (I tasted the meat and yes, the outside part was nicely spiced and the inside meat did not have as much flavor.) This was when I knew that I needed to re-cook the meat. The recipe does not state this, but as a cook you need to follow instinctual thought processes. Following a recipe is easy. Anyone can do that. But what to do after that is something I have learned over many years. I have learned to read between the lines. My intuition has never failed me. I refrigerated the roast overnight, and the next morning I shredded the meat and I placed it back into the crock pot along with the juice that it had been cooked in previously (there wasn't a lot). This is when I added the hot sauce, finely diced onion, 2 cans jalapeno peppers, more chili powder, cumin, salt and pepper. I cooked it again for about 4 hours. I plan on using this meat for tamales this year, something I make for Thanksgiving and then again for Christmas. I am going to try it with chicken and also beef. This is going to be a very fun kitchen experience.

Buffalochef's Strawberry Rhubarb Pie

I had never heard of a struesel topping being baked beneath a lattice crust. I tried it. Decent.... Now for me, here was the kicker. I only allow myself 45 grams of carbohydrates per meal. I had a slice of this pie, and had to give up 2 full meals, as one slice contained almost 90 grams of carbs. Never again!

Cadillac Pimento Cheese

Being from the south, I kind of grew up on this and it was always purchased this from the grocery store. I had a hankering for it as I wasn't feeling well and I didn't want to go out. I made it the 'recipe' way the first time and it got me through. The next time I changed the processed cheese for sharp and mild cheddar cheese. I added fresh finely diced onion instead of the onion powder. This is a staple food item in my refrigerator!

Streusel Apple Pie Topping

I made an apple pie the other day for a dinner with friends. I didn't want to have all that 'crust', so I found this recipe and I tried it. It was a great topping for the pie. I am going to experiment using different fillings, ie.....cherry, peach, rhubarb, mixed berries, etc....it is going to be great!

No Roll Pie Crust I

I made this recipe for pie crust not knowing what to expect. It turned out well, no one made any issues with the taste, but I found it very hard to flute the edges with a handsome border. I usually get lots of compliments on the how pleasing to the eye my pies look. Not this one! It was right down ugly!

Great sauce for New York Strip steaks. I usually never make a sauce, as I let the flavor of the steaks stand out. I doubled it, and it still was not enough!

Banana Banana Bread

This is a fantastically, easy, and delicious whole wheat bread recipe. I gauge the 100% part by the grams of fiber. I like to have 4g. or more, and this comes pretty darn close!

Fresh Rhubarb Pie

Lots of folks out there do not like rhubarb pie. Don't know why, they just don't. But that is not the issue here, you know, other folks. Now I like rhubarb pie. It probably that southern gene in me. And this pie is one of the best that I have ever tasted. Carol....you go girl!

No Bake Cookies II

I am not sure about this recipe. I remember making these I was a young child, and when I tasted them, they did not bring back memories. I probably will not make these again! Maybe it is because I used Splenda instead of sugar. This is due to the fact that I am diabetic. I also used Hersheys Special Dark 100% cocoa, butter, and vanilla that I paid $25 a bottle for. There just seemed to be something missing. Or maybe as I have gotten older, I am missing something.

Chicken Enchiladas with Creamy Green Chile Sauce

My kids call these 'Gringo Enchiladas'. They say that these are definitely not the kind their friend's mother's make. But for something different and for a sauce out of a can, they work in a pinch. They are a whole lot easier to make than the traditional enchiladas......

Flourless Chocolate Cake I

Cream of Mushroom Soup II

Fantastic soup! I wanted to make a tuna casserole one day and I didn't have any cream of mushroom soup on hand. I am really happy that I did not! I tried this recipe and probably will not go back to 'canned soup' again.

Salt and Pepper Chicken Stir Fry

This is definantly not the 'Salt and Pepper Chicken' I had at my Chinese restaurant here in San Diego. I am going to give it another try, but this time I am going to use only different kinds of pepper and the salt. The Chinese 5 Spice Powder might have been called for in this recipe, but I just feel it is the wrong spice. That spice might go well with some other dishes, but not this one.

Herb and Beer Braised Rabbit

This was a great way to fix rabbit. I have only had rabbit 'fried' in my lifetime. Great flavor with the beer and the herbs. I didn't know rabbit was tough. The meat was hard to get off the bone. I am going to fix the sauce and fry chicken next time and braise it like the rabbit.
