Herbed Lentils and Rice

Eggplant Parmesan I

This is a great recipe. However there were a few big changes I needed to make. 1) unless you get an unusually large eggplant, you will likely need to have 3 eggplant or slice MUCH thinner than 3/4-inch. You won't have 2 layers unless you do this. Plus, I can't imagine feeding 8 people on one eggplant. 2) eggplant soaks up oil when it is fried, so you will need A LOT more than 8 Tbs. 3) peel the eggplant. The skin on an eggplant is kind of tough. 4) I added 2 cloves of garlic. It just seemed like basil wasn't enough. That change is optional, but the first three aren't.

Burgundy Pork Tenderloin

Very, very good! I did it in the slow cooker and it came out just great! It is a little salty with the brown gravy mix, so I would suggest editing out some of the salt that gets rubbed on the tenderloin.

Slow Cooker Carnitas

Oh, yum! I made this last night and am so happy we have leftovers today for lunch! Like others, I doubled the spices and omitted the cinnamon. I will definitely make this again and again.

World's Best Lasagna

Holy salt shaker!! This should have been 5 stars, but the 1T salt was too overwhelming. I really think that this recipe could get away with using half the salt. I would also recommend a little more ground beef and a little less Italian sausage. I felt like the sausage overpowered the beef. With these little changes, this will be my meat lasagna of choice from now on. I'm excited to serve it to my picky in-laws!

Marmalade-Glazed Carrots

Excellent. I am not a fan of nutmeg, so I only used half the amount listed. I also didn't have orange marmalade, so I used apricot preserves in its place. Yum! Plus, how wonderful is it to be able to make a dish in a crockpot?!

Grandma's Green Bean Casserole

Yummy! This is so stinking good. I usually only make it for two family holidays, but I crave it 365 days a year. By the way, I use reduced or fat free on everything and it still tastes like it has all the fat and then some. I also saute the onions before starting step two, because I sure do love a sauteed onion.

Hot German Potato Salad III
