Rave Reviews Coconut Cake

Reviewed: May 2, 2010
LOVE IT! Super easy, since you start it with the yellow cake mix and vanilla pudding. I used a different cream cheese/vanilla frosting of my own. I also did not make three layers. I used a 3-inch high round cake pan. I thought it would be too much frosting with so many layers. The cake itself is rich enough and filled with coconut and walnuts that it didn't need tons of frosting throughout it. Everyone who's had a bite of this cake so far loves it and wants a copy of the recipe!

Ham and Cheese Quiche

Reviewed: Feb. 13, 2010
Super easy and delish! This recipe can serve as a good base recipe for any kind of quiche by adding whatever comes to your imagination! The only thing I changed about this was I used shredded Jack cheese instead of slices of Swiss and used frozen Spinach instead of fresh. Make sure to drain the Spinach very well if you use frozen!

Old Fashioned Coconut Cream Pie

Reviewed: Jan. 18, 2010
This was to-die-for!!! My uncle begged me to make it as one of the two pies I was baking for Christmas dinner, so I decided on this recipe. I totally with the others about substituting 1/2 of the half-n-half with coconut milk/cream (used cream). It made all the difference!

BREAKSTONE'S Sour Cream Scalloped Potatoes

Reviewed: Jan. 18, 2010
I tried this out for our Christmas dinner and everyone absolutely loved it. It is a keeper for sure. Also, I left out the ham as the other reviewers did, because ham was the main course of our dinner. I also broiled the top of the dish for a couple minutes at the end of the baking time to give it a little browning.

German Chocolate Pecan Pie

Reviewed: Jan. 18, 2010
This recipe was easy and came out wonderfully, everyone loved it. I added a small bit of a German Chocolate bar into the melted butter because I wasn't sure how chocolately the choc. chips alone would make it. It just happened to be the right amount. The pie is very rich, so if you have a termperamental stomach, don't eat a big piece of it at a time.

All American Apple Pie

Reviewed: Nov. 28, 2009
This was my first time ever baking an apple pie. This recipe was very easy and came out delicious! I had a problem with the crumbly topping not being so crumbly, the butter in it made it spread and melt a little, although it didn't affect how good it tasted! Perhaps I should use unsalted butter next time, my mother suggested that that would probably help fix that problem.

Peanut Butter Coconut Cookies

Excellent, nice and chewy. I added extra nuts, a new candy-coated kind by Paula Deen, it made it even yummier!
