Asian Style BBQ St. Louis Ribs

I had some help from my hubby with this one; as I am not usually the one that does the outdoors cooking. These were delicious. The rub had a wonderful flavor that was not too overpowering and the hoisin sauce gave a little extra punch.

Simple Spicy Hummus

This was delicious. I will definitely use the liquid from the can of chickpeas instead of water next time. I felt like there was something missing, but not sure what. Maybe it was salt as another reviewer mentioned. It all got eaten, so I will make it again. My son mentioned that it tastes much better at room temperature or slightly warm.

Paleo-Pancakes

I had these for my New Year's breakfast this morning. I topped them with some homemade apple butter that I was gifted for Christmas. I love that this recipe is so simple. I used cornstarch in place of arrowroot. Will make these again and may try my own variations.

Cheesy Veggie Mac and Cheese

This one was not well received by my family. Despite all the cheese, it really didn't seem to have much flavor. It is probably just a matter of personal preference, but I probably will not make this again. I did like the cruchiness of the bread crumbs with the creaminess of the cheese sauce. Also, the directions are not very clear on this.

Gluten Free Elbows with Mixed Mushrooms and Italian Sausage Soup

I used hot italian sausage for a little extra zing and added another can of beans per suggestion by another reviewer. Also added a little extra seasoning as some reviewers said it was bland. I was going to try adding some spinach as another reviewer did, but forgot to buy it while I was at the store. I think it would add to the health value and color factor. I was unable to fing the gluten-free elbows, so used some extra fiber shells. Over all this was good; I still felt like it was missing a little something.

Blueberry Delight Muffins

These were really good! My husband is a big fan of blueberries and these will be great for him to grab on the way out the door in the morning. They bake up nicely and came outof the pan perfectly. Will make again :)

Nuts for Apples Cookies

This cookie is quick to make and includes items one usually has on hand. Great for those watching their oil/butter intake. They tasted ok, but this would not be a recipe I would search out to make again. I prefer a chewier texture and these definitely need more taste. There wasn't any real flavor that stuck out. I know what was in them, but seems like there was not enough to make any of the flavors shine through. Maybe would be better tasting with a few adjustments.

Banana Walnut Bread

Followed the recipe exactly except I didn't have nuts here so could not add those; which is a bummer because I love them! Great basic recipe. I would make this again but definitely add a little spice and the nuts. Not sure why, but this took just about an hour to bake instead of 35-40 minutes as stated in the recipe. Not a big issue because I wasn't making it for a special occasion or in a time crunch.

Chicken Fajitas from Mazola®

Yum! I was home by myself, so using what I had in the house, I scaled down the ingredients and treated myself to a 5-star lunch :) I will make these again when everyone is home to enjoy them. Great basic recipe...just adjust to your personal preferencea.

Potato, Sausage and Egg Breakfast Casserole

My husband who is not a fan of egg substitutes ate this and enjoyed it. I didn't tell him it wasn't real eggs) I thought it was good, but lacked a little something. This took over an hour to cook for me. Definitely easy and quick to put together without making a mess. I would make again with a bit of tweaking. Appreciate that this was attempting to make a traditional breakfast casserole a little less fattening :)

Italian Sausage Deep Dish Pizza

I precooked the crust like other reviewers recommended, but still ended up having to cook it longer than stated. This was good, but nothing out of the ordinary. Nice for a quick to put together meal to do with kids or grandkids.

Polish Kielbasa and Pierogies

This is a simple recipe that is wonderful for when you are in a time crunch and want to avoid another run through the drive-thru. We are big fans of pierogies and Johnsonville sausage always adds to a dish. We will definitely make this again.

Creamy Wild Rice Chicken Casserole

We all enjoyed this and I will make it again. We do several potluck dinners throughout the year and this would be great! I added a bit of shredded cheese to the top before and used Ritz craCkers instead of saltines.

Modern Pasta e Fagioli

This was good, a bit on the spicy side. I used spinach in place of the collard greens. I wanted something quick and easy for supper so I didn't want to take the chance of having to cook collards for 40 minutes. I love pasta so to me there could never be too much, but there definitely needed to be more beans. I would make this again with a few adjustments.

Wavy Lasagna with Italian Sausage and Marinara Sauce

This was easy and delicious. Makes enough for a large family or to invite guests over. Reheats well. Also, this can be made ahead. I made it the day before, planning to have it for supper and had something come up, so I ended up refrigerating it and making it the next day. You could also freeze it. Just remember to thaw it overnight before cooking. The baking time will need to be increased if you cook it chilled. Will definitely make again!

Grilled Masala Chicken with Vegetables

The best thing about this was the ease of clean up. The recipe was pretty good. I had to cook it much longer than suggested and my chicken was still not done. I think next time I will cut the chicken into smaller pieces or chop the chicken and vegetables up and top them with the sauce mixture. Perhaps may serve it over rice. The flavors were good; especially with the yogurt and cilantro topping. I think it could have used a little more of something....just not quite sure what. Salt maybe? I will give this a second try.

Amazing Muffin Cups

These were delicious and I didn't have any trouble with them sticking to the pan. I did cook the potatoes a little longer; as recommended by some reviews I read. I did not have red bell pepper so used green. Use your creativity with ingredients your family loves. This recipe has many options/possibilities. These reheated well. I plan on making some ahead for those days when someone needs breakfast-on-the-go.
