Slow Cooker Lime Chicken with Rice

Easy and delicious recipe. This would also work well with pork. Had frozen, boneless, skinless chicken tenderloins on hand so that is what I used and will use again, they came out tender and moist. It needs more seasoning which I will experiment with the next time I make it. I used brown rice because we cannot have the white. Maybe that took away from the flavor. It took 3 1/2 fresh, squeezed limes to make the 1/3c needed. Will make this often. Thank you Lisa D for a great recipe.

Herbed Greek Roasted Potatoes with Feta Cheese

Cyndi, this recipe gives potatoes a great flavor. Will be making these often. I did not have 80 min. to bake them so I microwaved them for 10 min on high, covered, then put them in the oven(uncovered) for 35 min until the potatoes were tender and browned. I did not have fresh mint but it tasted fantastic without it. Thanks Cyndi, great recipe

Cindy's Awesome Clam Chowder

This is a savoury chowder. I followed the directions exactly as written by Cindy. (I did buy minced clams by mistake but I actually like the smaller pieces).Even if you do not like clam chowder I think you would like this one, it does not taste clamy at all. I made it in the morning, planning on reheating it for dinner in a double boiler but it was so flavoursome I ended up eating a bowl for breakfast. Served with oyster crackers one night and Cheddar Bay Biscuits the next night. Will with out a doubt be making this all winter long. Awesome recipe Cindy, thank you

Sweet Potato French Toast

This recipe is pretty good. I microwaved the sweet potato for 8 min. and then mashed it. The first batch was a little bland so I added 1/2 tsp. Pumpkin Pie Spice and 1/4 tsp. vanilla extract. My 3 yr old grandson loved them. I will make these again. 10/30/09 Forgot about this recipe until my 3 yr old grandson asked me to make it for breakfast today. I am now giving it 5 stars, I added more vanilla extract, about 3/4-1 tsp. and extra pumpkin spice. Used a small sweet potato and added the whole amount, about 1/2c, Delicious. 3-29-10 Today I used 1 cup of sweet potato, 2 eggs, 3 egg whites, 1/4 tsp cinnamon, 1/4 tsp nutmeg, 1/2 tsp pumpkin spice, 1/2 tsp vanilla extract. I mixed all the ingreds.(not the bread of course) with my electric mixer on low, just until blended. Came out much smoother. Made with whole wheat bread. Got 7 french toast which I cooled, put between waxed paper, then in a baggie and put in the freezer. I zap 2 pieces in the microwave, covered for about 2 minutes when we want some. Easy breakfast.

Monterey Chicken with Potatoes

Read alot of reviews before making this. I marinated the chicken in 1/2 cup mild salsa to which I had added 1 Tblsp. fresh lime juice for 1/2 hour. While it was marinating I sliced the potatoes fairly thin and cut each slice into 4 pieces, put them in my roaster pan(14x9) which was lined with heavy duty foil, sprayed with Pam, lightly salted and peppered them, sprinkled some onion flakes over them and drizzled the tablespoon of melted butter over them and tossed. Baked for 15 min. in preheated 425 oven. Took pan out, pushed potatoes along side of pan and put the chicken in the middle, brushed pieces with the remaining butter and tablespoon of lime juice which I mixed in a small bowl. Returned to oven for 10 minutes. Mixed Newmans Black Bean & Corn Salsa & parsley together, poured over chicken, baked at 425 covered for 25 minutes, reduced oven temp to 375 and cooked another 20 minutes. Removed foil and sprinkled Sargento Reduced Fat 4 Cheese Mexican over chicken and potatoes and put back in oven for 5 minutes. This is so good. I will be making this often.

Honey-Mustard Baked Chicken

I wasn't going to make this because I have never used curry powder before but boy am I glad I went and bought it. Haven't had a chicken recipe I enjoyed this much in a long time. It is the kind you let a mmmmmmm out with each bite. Even DH liked it. You won't be sorry if you make it. I plan on making this often.

Almond Citrus Biscotti

This biscotti recipe is easy and sooo delicious. Because we have to watch our sugars I used 1c of Splenda and 1/2c granulated sugar and 2 3/4 cups whole wheat pastry flour and 1c all-purpose. I also did not have almonds in the house so I used ground pecans. You will not be unhappy if you try this recipe.

Avon's End of Summer Sunday Morning Peach Coffee Cake

Made Avon's recipe before AR published it. I used what I had in the house, Aunt Jemima Lite Syrup and Light Fat Free Peach Yogurt. The steel cut oatmeal soaked for 30 minutes by the time I got myself organized. Great recipe Avon, glad it finally got published.

Janet's Rich Banana Bread

Read many reviews and decided I was definitely mashing the bananas. Followed naples34102 review and creamed soft butter and sugar with my hand mixer. Used 1 3/4cups white whole wheat flour and added 1 tsp. lemon juice with the vanilla extract. Also added 1 tsp. baking powder, along with the other ingredients. 1 heaping cup of mashed bananas is perfect. The sour cream makes a really moist bread. Omitted the nuts. Will be replacing our family banana bread recipe(been around for at least 70 years) with this one.

Honey-Glazed Pork Chops

Wow, these were delicious. I read reviews and doubled the sauce, adding a tiny amount of red pepper flakes and about 1 tsp. of sugar-free syrup. They were so moist, tender, and flavorful. Will be making these often. Served with pierogies and mixed veggies.

Ham with Pineapple

Totally forgot to take a picture but it looked so nice my DD would not slice it but put the platter of ham on the table so every one could see it. My ham was a pre-cooked spiral ham so I made the recipe but wrapped the ham tightly in heavy duty aluminum foil in a pan and put it in the oven at 300 degrees for 2 hours. The ham was so moist. Every one asked if they could take a little home to have the next day. Will definitely make my hams this way from now on.

Autumn Spice Ham Steak

Great flavor. I really enjoyed this, DH said "he is not a ham person" but if I wanted to make it again he would eat it and he will definitely be eating it again. I sliced 1 gala and 1 granny smith apple and put the slices in a bowl, sprinkled some brown sugar on top and microwaved covered at 50% power for 2 minutes while the ham was browning in the frying pan. Put the apples on top of the ham and sprinkled with the cinnamon and simmered for 5 minutes. Easy and delicious.

Chocolate Chip Cheese Ball

Read reviews before making and saw many people had trouble forming into a ball. I added 1 cup of confectionary sugar instead of 3/4 cup and chilled for 2 1/2 hours. Had no problem forming it into a ball. Rolled in extra mini semisweet chocolate chips instead of the pecans. Served at our Super Bowl party with chocolate graham crackers. Everyone loved it. Will be making this again very soon.

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

LTH these cupcakes are to die for. I had one even though I'm not suppose to eat sweets but it was worth it. I frosted them with the Fluffy Peanut Butter Frosting from this site which compliments them perfectly. I think I like these a little better than the cookie dough cupcake recipe but both are fantastic. Thank You

INCREDIBLE Raspberry Cheesecake Cookies

I've been waiting to make this recipe since I printed it out in July. Had friends and family and myself looking for the raspberry chips, which are no where to be found in this area. Also could not find Raspberry extract. Shipping is too expensive to order on line. Finally found Dove raspberry & dark chocolate swirl candy which I chopped up. The cookies are so easy to make and tasted pretty good but I think the raspberry morsels would taste much better. (will probably have to break down and order them online) I used my Pampered Chef small scoop which made 44 cookies. Will be making these again. Thanks miss7up-UPDATE, wait several hours before you eat them and the flavor gets better and better, yum.

Gooey Butter Cookies

I used a Butter Recipe Yellow cake mix because that is what I had in the house. I made the batter, very easy to do, and refrigerated it overnight. Lined my cookie sheet with parchment paper and used a small Pampered Chef cookie scoop which worked great. Can't wait to try different flavored cake mixes. It made 5 dozen cookies.

Tomato Basil Squares

This recipe is so tasty. I love it because I can use my Pampered Chef grater, garlic press, and large bar pan. I used Pillsbury Pizza Crust, 2/3c mayonnaise, and 2 c shredded mozzarella, plus the other ingred. listed in the recipe. I preheated oven to 400 degrees.After the dough was rolled on the pan I sprinkled 1 c of the shredded mozzarella over it. Mixed the other cup of mozzarella, parmesan, basil, mayo, and garlic in a bowl. Placed 4 thinly sliced Plum tomatoes on top of the mozz/crust, then scooped mixture over the tomatoes and baked 20 minutes til golden and bubbly. Easy and oh so good!

Neapolitan Cupcakes

Love this recipe. Chocolate and strawberry taste so good together and the frosting is perfect. I ran out of the strawberry cake mix after filling 30 cupcakes so I put the extra brownie mix into a small pan and baked it so I have brownies too. I used 2 different types of cupcake pans, 1 Faberware which is heavier and a little darker and my 40 year old Sears aluminum, so 1/2 of my cupcakes were burnt on the bottom. The ones that were not burnt are delicious. Will definitely make these again.

German Pork Chops and Sauerkraut

Delicious! I made 4 pork chops in an 11x7 pan. Used a 14oz. can of sauerkraut, 1 McIntosh apple and 1 Gala apple, 1 onion and 1 cup of brown sugar(will use less brown sugar next time). Did not have caraway seeds. Served with buttered whole wheat noodles and asparagus sauteed in olive oil with minced garlic. Excellent dinner.
