Nutty Lemon Coffee Cake

Very good coffee cake. I would have preferred it a little more moist. I added juice from 1/2 of a small lemon and the zest. Next time I will add even more. I baked it in a bundt pan, I suggest if you use one to put all the topping in the middle because if you put it on the top like I did when you dump the cake out onto your serving plate the crumb topping is on the bottom. I will probably try making it in a 13x9 pan next time. Made Vanilla Glaze and put some lemon extract in it, made it runny and drizzled it over the cake. If you like lemon you will like this coffee cake.

Eileen's Meatloaf

I was a little hesitant about making this with the sour cream. Mixed up this morning, only had 1.27 lbs of ground beef and had to use 1 cup of Panko and 1/2 cup Itailian bread crumbs and put it in the frig. until tonight. I sprayed an 11x7 pan with Pam and as I was pressing the meatloaf in I thought this would turn out terribly dry. Then I forgot to cover it because I have never covered a meatloaf when baking, so I put a couple of tablespoons of spagetti sauce on top. Baked at 350 because I also was baking brown rice. It was fantastic, great flavor. Will definitely be making this again.

Oatmeal Pancake

This makes one huge pancake. I put all the ingredients in my new food processor and mixed until smooth. Very filling. Only 5 points on Weight Watchers. I only had a pinch of nutmeg so added some pumpkin spice. I used sugar free syrup on it. Quick, easy, healthy breakfast.

Peach Pie

The pie was good but very runny. I added corn starch as suggested and let it cool in the oven but you could not get a slice out of the tin, had to scoop it out with a spoon. My peaches were very ripe so that could have been part of the problem. Next time I will also cut back on the sugar. Added a little cinnamon that gave it a nice flavor.

Whole Wheat Snickerdoodles I

CAUTION DANGEROUS! I can't stop eating them. I used 1 cup whole wheat pastry flour and 1/2 cup whole wheat flour, 1 1/2 tsps. cinnamon. Used my small Pampered Chef cookie scoop which made 35 cookies. Baked for just 8 mins. Let cool for 3 mins. and transferred to a cooling rack. They are only 1 point for Weight Watchers even using butter. I am in big big trouble, I love them! UPDATE, made them today trying to make them healthier, big flop! I used white whole wheat flour and applesauce in place of the butter, to me it was not worth the difference in fat and calories, will use butter next time. My grandson did say they were good and I should share my recipe with every one in my town and his.(he is 4 years old) UPDATE 1/30/2011 Made them again today and put the cinn/sugar into the dough by mistake. Made more cinn/sugar to roll them in. They tasted great and will probably do that from now on.

Connie's Zucchini "Crab" Cakes

After reading the reviews I added extra Old Bay, a large garlic bulb minced, salt & pepper, and 3 chopped green onions in place of the reg. onions. I mixed the ingredients in a bowl, covered the bowl and put it in the frig. for 2 hours before frying. The flavor was terrific.

Easy Garlic Mashed Potatoes

Delicious tasting potatoes. DH even liked them. I did not have russet potatoes so I used red potatoes and left the skin on. Great flavor, will be making my mashed potatoes like this from now on. Thank you Ken for a great recipe.

Pasta with Scallops, Zucchini, and Tomatoes

Very good. Used angel hair pasta, asparagus(did not have zucchinis)will make sure I have them next time, and a can of diced tomatoes in place of the plum tomatoes. Easy to make and flavorful.

Sweet Vanilla Cupcakes

MMMMMMMMMMMM, Marianne this recipe is terrific. No changes needed. Perfect as is. I frosted them with the Vanilla-Chocolate Powdered Sugar Frosting from this site. Tinted some of the vanilla frosting to be purple for my granddaughter and made the rest chocolate. Every one loved these cupcakes. This will be my go to recipe from now on when making white cupcakes.

These are the easiest cookies I have ever made. Was short on time and made these so quick. Sweet soft cookies. 12-23-2011 Just finished making these for Christmas. Dipped them in red and green sugar. Great recipe.

Rainbow Clown Cake

Made cupcakes in red, white, & blue for the 4th of July. Can't wait to make these for other holidays and change up the colors. Every one at the picnic thought they were great. I used Butter Cream Frosting II which most thought was too sweet so will probably try and find a different frosting to use next time.

Blueberry Sour Cream Coffee Cake

Followed the recipe exactly as written. It was good but not that flavorful. UPDATE, it was much better the 2nd day. My SIL asked me to please not make it again because she would gain 5 lbs., she is not a sweet eater but really enjoyed this.

Honey-Mustard Baked Chicken

I wasn't going to make this because I have never used curry powder before but boy am I glad I went and bought it. Haven't had a chicken recipe I enjoyed this much in a long time. It is the kind you let a mmmmmmm out with each bite. Even DH liked it. You won't be sorry if you make it. I plan on making this often.

Oven Brown Rice

Delicious, I used long grain brown rice, added 2 cloves of minced fresh garlic(in place of garlic salt), fresh chopped onion, and a little shredded carrots and rest of ingredients in the recipe. Baked covered for 45 minutes, then uncovered and baked until liquid was absorbed, about 10 more minutes. Will be making this often.
