Rainbow Clown Cake

Made cupcakes in red, white, & blue for the 4th of July. Can't wait to make these for other holidays and change up the colors. Every one at the picnic thought they were great. I used Butter Cream Frosting II which most thought was too sweet so will probably try and find a different frosting to use next time.

Blueberry Sour Cream Coffee Cake

Followed the recipe exactly as written. It was good but not that flavorful. UPDATE, it was much better the 2nd day. My SIL asked me to please not make it again because she would gain 5 lbs., she is not a sweet eater but really enjoyed this.

Honey-Mustard Baked Chicken

I wasn't going to make this because I have never used curry powder before but boy am I glad I went and bought it. Haven't had a chicken recipe I enjoyed this much in a long time. It is the kind you let a mmmmmmm out with each bite. Even DH liked it. You won't be sorry if you make it. I plan on making this often.

Oven Brown Rice

Delicious, I used long grain brown rice, added 2 cloves of minced fresh garlic(in place of garlic salt), fresh chopped onion, and a little shredded carrots and rest of ingredients in the recipe. Baked covered for 45 minutes, then uncovered and baked until liquid was absorbed, about 10 more minutes. Will be making this often.

Cinnamon-Peach Cottage Cheese Pancakes

Made these a little more diabetic friendly. Used 1 cup of whole wheat flour in place of all purpose, 2 packets of Sun Crystals(all natural sweetner, it is stevia and pure cane sugar) in place of white sugar and added 2 Tblsps. flaxseed. These are delicious. No syrup needed, just put extra peaches on top and a little whipped cream. Other fruits would work fine too, like chopped apples, blueberries, bananas, whatever you like.

To Die For Blueberry Muffins

In this house this recipe receives 10 stars. The only thing I changed was the flour, used 1 cup whole wheat flour and 1/2 cup all-purpose flour because we are not suppose to have white flour. Other than that followed directions to a T. Made 9 good sized muffins. EXCELLENT recipe.

Cold Tuna Macaroni Salad

Very good. I used whole wheat penne. Did not have any tomatoes in the house but added a little chopped red onion and a pinch of garlic salt and Lawry seasoning salt. Will be making this all summer.

Utterly Sinful Mocha Almond Cheesecake Brownies

Delicious, very moist brownies. Tastes even better on day 2 if there are any left. I may add just a little more coffee granules next time. Will be making these in place of the ones I usually make with a brownie mix. Thanks larkspur, great recipe.

Pumpkin Swirl Bread

I miss read the pumpkin puree amount and used a 15 oz. can of Libby's 100% Pure Pumpkin by mistake. Added 1 tsp. of pumpkin spice, used 4 oz. of unsweetened applesauce in place of the oil and cut the sugar down to 1 cup. It made 14 very large muffins that took 28 min. to bake. The only problem is they are very difficult to get out of the muffin paper, I think next time I will just put them in the muffin tin. Great recipe and very moist.

Italian Spaghetti Sauce with Meatballs

Love this recipe. Meatballs are so soft, next time I will add a little more seasoning to them for added flavor. I made this in the crock pot, left it on low for 8 hours. I will definitely be making my sauce and meatballs from this recipe from now on.

Key Lime Cookies I

Used 2 tsps of lime zest. Spraying the cookie scoop with Pam made it much easier to drop the cookies onto the cookie sheet. Lined it with parchment paper. Using my Pampered Chef 1 inch cookie scoop I got 45 cookies. Makes a very good cookie.

Lemon Whippersnappers

I used a stawberry cake mix and added 1 tsp. of strawberry extract so I would have pink cookies for a baby shower. Chilled the dough overnight but it was still very sticky. Used a Pampered Chef 1 tsp. sized cookie scoop to drop the dough onto the cookie sheet which I lined with parchment paper that made it easier to remove them when they were done. Simple, easy, tasty cookie. 4/15/10 Made them today using a spice cake mix and added 1 tsp. of maple extract. 1 Grandkid liked them but every one else gave the spice ones a thumbs down. Have a pineapple cake mix and lemon to try next.

Ham with Pineapple

Totally forgot to take a picture but it looked so nice my DD would not slice it but put the platter of ham on the table so every one could see it. My ham was a pre-cooked spiral ham so I made the recipe but wrapped the ham tightly in heavy duty aluminum foil in a pan and put it in the oven at 300 degrees for 2 hours. The ham was so moist. Every one asked if they could take a little home to have the next day. Will definitely make my hams this way from now on.

Chewy Brownie Cookies

Made exactly as written but omitted the nuts, many family members cannot have nuts. I doubled the recipe and used my Pampered Chef 1 tsp. scoop and it made 95 cookies. If you are a chocoholic you will love these. Parchment paper on the cookie sheets makes it so easy. Be careful NOT TO OVERBAKE, they don't look done when you take them out but that 2 minutes of cooling before removing to cooling racks lets them set up. Will definitely make these again. Great recipe

Chocolate Mint Dessert Brownies

Delicious. I added 1 tsp of peppermint extract(which was more than enough) in place of the creme de menthe liquer. Also added some green food coloring for St. Patrick's Day. I will try other extracts too because I feel many different flavors will work in the recipe.

Excellent recipe. Easy to work with. I chilled the dough for 1 1/2 hrs before rolling it out on the counter dusted with powdered sugar. I also put parchment paper on the cookie sheets. Will be using this recipe for all my cut out cookies.

Will be using this recipe for all my cut out cookies. Took these to a St. Patrick's Day party, by the end of the night every single cookie was gone.
