Greek Penne and Chicken

After reading several reviews this is how I made this recipe. I used 3 minced garlic bulbs and a little extra red onion, cooked them in the skillet with olive oil and a little butter. I only had artichokes in water which worked out fine. Used a can of diced tomatoes in place of the fresh tomato. Chopped my frozen boneless skinless chicken tenderloins into bite sized pieces and added to the skillet seasoning them with Lawry seasoning salt. Added rest of ingredients after chicken was cooked and a little more than 1/2 cup of feta cheese, salt and black pepper. Added the cooked penne. Served with extra feta on the top. Excellent flavor. Definitely a keeper.

Pistachio Cream Cheese Fingers

I printed the recipe out adding the reviews I wanted and also printed it out to make 1/2 the amount. As I was mixing the ingredients for the 1/2 recipe I realized the reviews suggesting adding 2 pkgs. of pistachio pudding was for the full recipe, too late, I had already mixed them in. Added extra butter as suggested and they came out great. They were all gone in 5 minutes after putting the tray out. Used parchment paper on the cookie sheet and they did not stick at all. Will be making these again real soon.

Delicious as written. I used Wilton cookie sheets and they did stick a little, will use parchment paper next time. Excellent recipe for a shower or party.

Pumpkin Spice Cupcakes

Very good but a little dry. Will try using 1/2 oil and 1/2 butter next time. When adding the spices I put a little extra of each and used pumpkin pie spice in place of allspice. Added 1 1/2 cups of pumpkin puree. Baked at 350 degrees for 25 minutes. For the frosting I used only 2 cups of confec. sugar and added 1/8 tsp. of pumpkin pie spice as well as the cinnamon. Will make these again.

Corn Dog Casserole

The only ingredient I left out was the sage, didn't have any. I sliced the hot dogs into bite sized pieces. This was pretty good. It is a recipe I will make occasionally. Next time I may add corn.

Apple-Spice Hummus Dip

This was the first time I have made hummus and only the second time I have eaten it. This recipe has a different taste from the hummus I had before. I enjoyed it. I did not have apple pie spice so substituted pumpkin pie spice and a little cinnamon. My company said it was good but was sweet for a hummus.

Butternut Squash Bisque

Very good. I roasted my butternut squash in the oven as suggested by others. Sprinkled a little nutmeg on the top of the soup in each bowl. Easy and delicious.

No Bake Chocolate Oat Bars

These are fast to make and great for the summer because they are no bake. I did use 3/4 cup of peanut butter as suggested by others. Used a 9x9 pan but felt I did not have enough oat mixture for the bottom and top so I will probably make 1 1/2 of the oat mixture next time. If you like chocolate and peanut butter you will enjoy these, very sweet. Wish I had tried these at the beginning of the summer, was 64 in the house this morning so I turned the oven on and made some cookies to warm up the house.

Sweetheart Cupcakes

This is a great idea. I did have problems getting the middle to look right. Next time I will use my Wilton bags and tips to put the colors in the middle instead of baggies. As they say "practice makes perfect." Doubled the recipe which made 27 big cupcakes, will put less in each next time. I used Sturdy Whipped Cream Frosting which was very good. Will try again for St. Patrick's Day. Thank you Celeste, great recipe.

Shepherd's Pie V

This was so good. Will be making this often. I mashed my potatoes with a little milk, salt, pepper, about 2 Tblsp. butter and some chives. While frying the ground beef I added 1/2 of a large onion, chopped and the seasonings. My DIL has friends in Montana where she gets a great seasoning (Sagebrush Sandy's)so I used that because I did not have steak seasoning. Folllowed the rest of the recipe and topped the potatoes with some Sargento Reduced Fat 4 Cheese Mexican. Great recipe Christine. Glad I tried it.

Baked Mashed Potatoes

Very disappointed in the flavor. Other reviews raved about these potatoes. I did only add 1 Tblsp. of onion as reviews said the whole onion was a mistake in the ingredient list but I feel more onion would definitely add to it. I will make these again because I feel they would be very good with added flavor. UPDATE, changed to 4 stars, when reheating them in a frying pan with a little butter I added extra onion and salt & pepper, tasted better.

Avon's, End of Summer Sunday Morning Peach Coffee Cake.

Avon, finally made it and so so glad I did. It is delicious. I used what I had in the house which was Aunt Jemima Lite Syrup and Light Fat Free Peach Yogurt. Used the steel cut oatmeal and they actually soaked for about 30 minutes by the time I got organized. Will be making this again. Thanks for a great recipe.

Homemade Black Bean Veggie Burgers

Was surprised that I liked these. Was hesitant about making them because I have never used black beans before. Rinsed and dried the black beans. In the food processor I pulsed the green pepper, onion, garlic, and a handful of carrots, then put the mixture in a strainer and was surprised at how much liquid I squeezed out, very important to do so the patties stay formed. Put the black beans in the processor and pulsed to a nice consistency. Mixed veggie mixture and beans together in a bowl adding the egg, chili powder, cumin, hot sauce and bread crumbs. I did add a little extra bread crumbs. Formed into patties, put on parchment paper on a cookie sheet and put in freezer. When frozen I put the ones I would not be cooking in a freezer baggie for another healthy, quick meal. Served on a 1 point wheat roll with lettuce, tomato and mayo for a total of 5 points on Weight Watchers. (the patty is 3 points) So glad I tried these. Will always have some of these made in my freezer.

Root Beer Pork Chops

We really enjoyed this recipe. DH loves root beer soda, does not like pork,but he did like them this way. Chops were very tender and flavorful. Great recipe Ken, thank you.
