Chicken and Sweet Potato Bake

Reviewed: Feb. 8, 2012
DH & I agree that we did not care for this recipe. Chicken was tender but had no flavor. I cooked it in my slow cooker on low for 7 hrs., using boneless-skinless chicken breasts. Won't be making this again.

Chocolate Chip Coffee Cake

Reviewed: Jan. 29, 2012
Excellent coffee cake. I added extra chocolate chips to the batter. Made a small amount of chocolate glaze and drizzled it over the top but will leave that off next time, it does not need it.

Broiled Tilapia Parmesan

Reviewed: Jan. 25, 2012
I used flounder and it tasted great. Read reviews before I started and added 1/2 tsp. paprika, 1/4 tsp. garlic powder, and a small amount of crushed red pepper flakes. Sprinkled the flounder with Old Bay seasoning on both sides, omitting the celery salt because the Old Bay has it in it.. Also used Low Fat Mayo. Delicious!!

Carrot Cookies

Reviewed: Jan. 21, 2012
I make these all the time when I need to bring cookies to a shower, baptism, or special occasion. I use butter for the shortening and mash my cooked carrots. If you like coconut you can add 3/4 cup of shredded coconut to the batter. I also make a delicious orange icing to spread on the top. 3 Tblsps. soft butter, 2 tsps. grated orange peel, 1 1/2 cups confectionery sugar, and 1 Tblsp. orange juice. Blend butter and sugar. Stir in orange peel and orange juice. Beat until smooth and of spreading consistency. Frost cookies.

Janet's Rich Banana Bread

Reviewed: Jan. 1, 2012
Read many reviews and decided I was definitely mashing the bananas. Followed naples34102 review and creamed soft butter and sugar with my hand mixer. Used 1 3/4cups white whole wheat flour and added 1 tsp. lemon juice with the vanilla extract. Also added 1 tsp. baking powder, along with the other ingredients. 1 heaping cup of mashed bananas is perfect. The sour cream makes a really moist bread. Omitted the nuts. Will be replacing our family banana bread recipe(been around for at least 70 years) with this one.

Donut Muffins

Reviewed: Dec. 30, 2011
Made these today with my 2 oldest granddaughters, ages 6 & 9. I accidentally put the cinnamon into the muffin mix but they still tasted delicious. My batch made 15 muffins. Easy and very addictive.

Honey-Glazed Pork Chops

Reviewed: Dec. 21, 2011
Wow, these were delicious. I read reviews and doubled the sauce, adding a tiny amount of red pepper flakes and about 1 tsp. of sugar-free syrup. They were so moist, tender, and flavorful. Will be making these often. Served with pierogies and mixed veggies.

Rick's Special Buttercream Frosting

Reviewed: Dec. 11, 2011
Only made half a recipe and frosted 24 cupcakes and still had almost 2 cups of frosting left. I used 1/2 butter and 1/2 butter flavored Crisco. Also melted 1/2 cup of chocolate morsels and added to make chocolate frosting. A little on the sweet side but was smooth and creamy.

Apple Squares

Reviewed: Oct. 28, 2011
Doubled the ingredients, using a heaping 2 cups of apples. For the topping I used just 1 Tblsp. sugar and 1 Tblsp. cinnamon which made enough. Baked in a 13x9x2 pan in my toaster oven for 30 minutes. Very moist and tasty. Nice warmed with a scoop of vanilla ice cream. Will be making this again.

Reviewed: Oct. 25, 2011
Had to use Dove Raspberry and Dark Chocolate Swirl candy which I chopped up. Easy to make. I used my small Pampered Chef scoop which made 44 cookies. The flavor is much better if you wait a day to eat them.

INCREDIBLE Raspberry Cheesecake Cookies

Reviewed: Sep. 17, 2011
I've been waiting to make this recipe since I printed it out in July. Had friends and family and myself looking for the raspberry chips, which are no where to be found in this area. Also could not find Raspberry extract. Shipping is too expensive to order on line. Finally found Dove raspberry & dark chocolate swirl candy which I chopped up. The cookies are so easy to make and tasted pretty good but I think the raspberry morsels would taste much better. (will probably have to break down and order them online) I used my Pampered Chef small scoop which made 44 cookies. Will be making these again. Thanks miss7up-UPDATE, wait several hours before you eat them and the flavor gets better and better, yum.

Peanut Butter/Chocolate Chip Cookie Bars

Reviewed: Aug. 20, 2011
Very easy to make. As suggested by others I added 2 Tbls. sugar to the crumbs and 2 Tbls. of creamy peanut butter to the condensed milk because many suggested the peanut butter flavor got lost in the chocolate flavor. After they cooled I put the pan in the frig. overnight but still had difficulty cutting them without losing alot of the crumb bottom. Very sweet so I suggest cutting them into tiny pieces. Will make again but would spray Pam on the pan first.

Avon's End of Summer Sunday Morning Peach Coffee Cake

Reviewed: Jul. 30, 2011
Made Avon's recipe before AR published it. I used what I had in the house, Aunt Jemima Lite Syrup and Light Fat Free Peach Yogurt. The steel cut oatmeal soaked for 30 minutes by the time I got myself organized. Great recipe Avon, glad it finally got published.

Gooey Butter Cookies

Reviewed: Jul. 26, 2011
I used a Butter Recipe Yellow cake mix because that is what I had in the house. I made the batter, very easy to do, and refrigerated it overnight. Lined my cookie sheet with parchment paper and used a small Pampered Chef cookie scoop which worked great. Can't wait to try different flavored cake mixes. It made 5 dozen cookies.

Whole Wheat Beer Bread

Served this with spinach dip. I used a 12oz. can of Sprite in place of the beer. Nice bread but was a little crumbly. I will try it with beer next time.

Rainbow Sherbet Cake

Reviewed: Jul. 17, 2011
Great summer dessert. You don't even have to turn the oven on if you use a store bought angel food cake. Followed the advise of others and froze the cake before slicing and softening the sherbert in the frig. So easy.
