Apple Dumpling Cake

I used Empire, Mutsu, and Gala apples. For the flour I used 1 cup whole wheat pastry flour and 1 cup all-purpose flour. 1/2 cup applesauce and 1/2 cup vegetable oil. Also sprinkled a little nutmeg into the flour mixture. Quick, easy, & good.

Neapolitan Cupcakes

Love this recipe. Chocolate and strawberry taste so good together and the frosting is perfect. I ran out of the strawberry cake mix after filling 30 cupcakes so I put the extra brownie mix into a small pan and baked it so I have brownies too. I used 2 different types of cupcake pans, 1 Faberware which is heavier and a little darker and my 40 year old Sears aluminum, so 1/2 of my cupcakes were burnt on the bottom. The ones that were not burnt are delicious. Will definitely make these again.

Pork Chop and Rice Casserole

Very good. Did not have the right soup so I used 1 can cream of chicken and 1 can cream of mushroom. While browning the pork chops I sprinkled them with a little Lawry seasoning salt and garlic powder and added some chopped onion. Used 3/4 cup milk and 1/2 cup chardonnay in the soup mixture and added 1 bag of boil in bag brown rice(removed rice from bag before adding). Will be making this again.

Cinnamon Coffee Cake II

Very moist and easy to make. I only had a vanilla cake mix so that is what I used. Also did not have butterscotch pudding so I used 2 pkgs. of vanilla pudding, and added 1 tblsp. of instant coffee granuales to the cup of water(I used warm water so the coffee would dissolve. Used 1/2 cup of vegetable oil and 4 oz. of applesauce. The cake had great flavor. Will be making this again.

Honey-Mustard Beef Kabobs

Perfect as written. My meat did sit in the sauce about 1 1/4 hrs. before I grilled them, very tender and great flavor. I also grilled some chopped onion, red pepper, and green pepper that I brushed with melted butter while grilling. Made brown rice and mixed vegetables. Will be one of the recipes I will be making again over the summer.

Tuna Macaroni Salad

Really good. Used ingredients I had in the house and some hints from reviews I read. Followed directions but needed to change ingredients a little. Used 1/2 mayo. and 1/2 Miracle Whip, chopped red onion, celery salt in place of celery stalks, added a little Lawry seasoning salt and left out the sour cream because I had none in the house. Will be making this again.

Toasted Garlic Bread

Loved this recipe. I cut the loaf in half and followed the recipe but I did not have mozzarella cheese so I used Sargento 4 Cheese Mexican. Also sprinkled a small amount of parmesan cheese on the bread before adding the 4 Cheese Mexican. Will be making my own garlic bread from now on, no more store bought.

Honey Roasted Red Potatoes

Delicious. Used 3 Tbls. honey and 2 tsps. dry mustard. Saved time by boiling the potatoes for 8 mins. and then cut them into bite sized pieces. Baked for 30 mins. until tender. They would have needed alot more baking time if not boiled before.

Slow Cooker Chicken Stroganoff

Very easy to make. I added a can of cream of mushroom soup in addition to the cream of chicken so I would have more sauce. A cup of frozen green peas added with the soup and cream cheese also tasted good. Served over whole grain noodles.

Pumpkin Bar Icing

Used 8 oz. pkg. cream cheese and adjusted the confectionery sugar to make the consistency I like. Left the butter and vanilla extract amount the same. Also added a little pumpkin spice because I was using it on Pumpkin Bars I. It was delicious.

Definitely a keeper. Moist and tasty. I usually try not to change a recipe unless I do not have the ingredients in the house. I wanted to use up a 30 oz. can of Libby's Easy Pumpkin Pie Mix so I put it all in and added a little extra flour. Used 8 oz. of applesauce instead of oil. Baked in a cookie sheet with sides instead of 2-13x9 pans. Frosted with the Pumpkin Bar Icing on this site adding a little pumpkin spice to it. Boy was it good!

Autumn Spice Ham Steak

Great flavor. I really enjoyed this, DH said "he is not a ham person" but if I wanted to make it again he would eat it and he will definitely be eating it again. I sliced 1 gala and 1 granny smith apple and put the slices in a bowl, sprinkled some brown sugar on top and microwaved covered at 50% power for 2 minutes while the ham was browning in the frying pan. Put the apples on top of the ham and sprinkled with the cinnamon and simmered for 5 minutes. Easy and delicious.

Shepherd's Pie

I would give this more stars if I could. So good! I used ground beef & did not have tomato paste so I used an 8 oz. can of Hunt's sauce. Sprinkled a little sharp cheddar over the potatoes. This is the recipe I will be using from now on for Shepherd's pie. Thanks lisa j, great recipe.

Chicken and Sweet Potato Bake

DH & I agree that we did not care for this recipe. Chicken was tender but had no flavor. I cooked it in my slow cooker on low for 7 hrs., using boneless-skinless chicken breasts. Won't be making this again.

Chocolate Chip Coffee Cake

Excellent coffee cake. I added extra chocolate chips to the batter. Made a small amount of chocolate glaze and drizzled it over the top but will leave that off next time, it does not need it.

Broiled Tilapia Parmesan

I used flounder and it tasted great. Read reviews before I started and added 1/2 tsp. paprika, 1/4 tsp. garlic powder, and a small amount of crushed red pepper flakes. Sprinkled the flounder with Old Bay seasoning on both sides, omitting the celery salt because the Old Bay has it in it.. Also used Low Fat Mayo. Delicious!!

I added 1 clove of minced garlic, otherwise followed recipe. They were good but I would like a little more flavor. Next time I will add some chopped green onions. Will be making these again.

Carrot Cookies

I make these all the time when I need to bring cookies to a shower, baptism, or special occasion. I use butter for the shortening and mash my cooked carrots. If you like coconut you can add 3/4 cup of shredded coconut to the batter. I also make a delicious orange icing to spread on the top. 3 Tblsps. soft butter, 2 tsps. grated orange peel, 1 1/2 cups confectionery sugar, and 1 Tblsp. orange juice. Blend butter and sugar. Stir in orange peel and orange juice. Beat until smooth and of spreading consistency. Frost cookies.
