Slow Cooker Ham

I used a spiral ham. It came out moist and very tasty. I did sprinkle a litte ground cloves on the ham before putting the brown sugar on it. It freed up the oven for all the items that needed to be baked. I will be using this recipe again for my hams.

PJ's Sweet Potato Mash

Not sure about this one. I felt the horseradish took away from the sweet potato too much. It was tasty but I think I will stick to making mine with butter, salt, and pepper.

Chocolate Pretzels

I used the square pretzels, peanut butter kisses and Easter colored M&Ms. Put them on parchment paper on the cookie sheet in a 250 degree oven for just 2 minutes. Chilled them for half hour in frig. They were all gone within 20 minutes, I made them for the kids but the adults ended up eating most of them. Great recipe and easy for the kids to help with. 6-25-2010 made them today but could not find the peanut butter kisses in the stores so used the plain chocolate, prefer the peanut butter but they still are great.

Pumpkin Crunch Cake

Very easy and tasty. The topping is a little sweet and I am a big sweet eater, I will probably try using less of the cake mix on top. It is better chilled and even tastier on day 2.

Baked Asparagus with Balsamic Butter Sauce

This is the first recipe from this site that I did not care for. Three of us did not care for the taste but one did. I feel every one's taste buds are different. I thought I would like it because I love balsamic vinegar dressing on my salads, but I would not make this recipe again. I did follow the recipe.

Slow Cooker Cranberry Roast

This was as easy as you can get. Follwed the recipe, but did add a bag of baby carrots. Very good, will make again. I think this would also be excellent with a pork roast.

Slow Cooker Beef Stroganoff I

This was excellent. I doubled everything except the cream cheese. I did not have onion so I used a pkg. of the Lipton Onion Soup Mix and added a dollop of sour cream with the cream cheese as suggested. Will definitely be making this again, very easy recipe. I served it over Whole Wheat Noodles.

Baked Oatmeal Squares

Very good. I used 4 0z of applesauce in place of the oil, added extra cinnamon, pumpkin spice, nutmeg, and cloves. Very flavorful. A keeper. 6/20/09 Made these this morning using 1/4 c of Splenda Brown sugar blend, in place of the sugar, and added 1/2 of a mashed banana. Delicious

Chicken Breasts in Caper Cream Sauce

When I went to make this I did not have whipping cream, so I used half and half. I also did not have lemon pepper so I squeezed a fresh lemon over the chicken and some black pepper. I did add 1 clove of crushed garlic to the butter in the frying pan. Even though I did not have the exact ingredients it turned out very good. Will difinitely make this again, it is so easy. 3-15-2012 Made tonight using cream. Sprinkled chicken with spices about 2 hrs. before cooking. Added 2 minced garlic cloves to the butter in pan. Followed directions, mm mm good!

No Crust Strawberry Pie

Delicious, I did add a capful of vanilla extract as suggested. I also put it in a reduced fat graham cracker crust, but it would be just as good with out the crust, saving calories and fat. Great for people on Weight Watchers, per svg. only 58 cal., 0.3g fat, 12.6 carbs.

Spaghetti Pie III

Very good. I used whole grain penne, after it was cooked and drained I tossed it with parmesan cheese and butter as suggested. I also cooked the onions and green peppers in the frying pan with the hamburg. As suggested, added 1/2 cup cottage cheese(did not have ricotta),to the cream cheese/sour cream mixture. Will make this again.

Easy Meatloaf

Pumpkin Pancakes

Today was the 3rd time I made these. I double every thing and freeze 1/2 of them when done. I used whole wheat flour today and they came out fine. The grandkids loved them and they are better for me. Followed recipe exactly. The batter is very thick so when you put the 1/4 cup of batter on the griddle you need to use the back of a spoon to gently spread it out a little. 9/4/09 Made them today using 1/2 allpurpose flour and 1/2 whole wheat, added some pumpkin spice and flax seed. Love them. 8/28/10 Made them this morning, added some finely chopped pecans which made a good addition.

Oven Beef Stew

Made this for dinner tonight. I doubled all the ingred. as suggested, after the first hour I added a can of beef broth because there wasn't enough liquid and a little red wine. It made too much for my husband and myself but I'm glad because I can freeze some for a quick meal in the future. Would be good with Italian bread, Bisquick Garlic and Cheese biscuits or corn bread. 10-31-10 I put extra potatoes and carrots in, this is my favorite stew.

Chicken Pot Pie IX

I will never buy frozen pot pies again. This was delicious with a few changes. I added 1 red potato chopped very small, garlic salt, Lawry seasoning salt. I made 1 1/2 of the sauce. Still too much, I left some in a bowl if any one wanted extra. I used a deep dish pie crust which was over flowing. I did bake the bottom crust at 375 for 5 min. before filling. Took time to make but well worth it.

Angel Chicken Pasta

Absolutely delicious. I did double the sauce and added chopped green onions and frozen broccoli. I covered it with foil til almost done so the sauce would not dry out. Served it over angel hair pasta. This is definetly going to be one of my favorites. 11/3/09 This is my favorite recipe on here. I make it at least twice a month. I now make it in the crock pot, I use frozen skinless, boneless chicken tenderloins, put them in the crock pot, double the sauce, mixing all the other ingreds. together and pour over chicken, I turn it on high for about 2 hours and then turn it to low for 4 hours. It is delicious over angel hair pasta or served with mashed potatoes and putting the sauce over the chicken and potatoes.

Crab Delights

Just made a double batch and of course had to sample one before freezing. It was delicious. I plan on making more for my New Year's Eve party. I did not have garlic salt so I crushed 2 small cloves of garlic, adding a little worcestershire sauce and about 1/4 tsp. Lawry seasoning salt. I did toast the english muffins first. I used white for the party but am going to make some more on Thomas Whole Wheat muffins since I have diabetes and anything with white flour makes my sugars soar. Definitely a keeper Thanks for a great recipe.

Greek Butter Cookies

These cookies are the kind you can't stop eating. I froze mine as soon as they cooled so there would be some left for Christmas. The dough is sticky so make sure you put alot of Confectionery sugar on your hands when working with it. I put 1 tsp. of Almond extract and baked them at 375 degrees for 13 min. I sprinkled them, when still warm, with red and green sugar for the holidays and also mixed sugar and cinnamon together and sprinkled that on some. I am definitely making another batch before Christmas. I only made the ball cookies because the dough is hard to work with. I did try dipping some in chocolate but thought it took away from the flavor of the cookie. Thanks for a great recipe. 12/7/09 Just made them for this year, I was able to make the S shape this year(don't know why I couldn't do it last year) anyway, I made the S shapes put them on the cookie sheet and sprinkled some with green and red sugar before baking, I left some plain, baked and when cooled sprinkled with confectionery sugar. The rest I made into ball and rolled in a cinnamon/sugar mixture before baking. Love these cookies.
