Zesty Zucchini and Squash

Loved this. I did not have tomatoes. Sauteed fresh garlic in olive oil and added the rest of the ingredients including broccoli and carrots.

Broiled Scallops

Scallops were great. I sauteed them using 1/2 TBLS garlic salt and 1/2 TBLS of garlic powder. After putting them on the plate I squeezed the lemon over them. I really enjoyed them. I will broil them next time to see which way is better.

Whole Wheat Sweet Potato Muffins

Very good. I used 1 cup of sweet potato, 1 cup of whole wheat flour, 1 cup of quick oats,(in place of the 2c whole wheat flour) 4 oz of applesauce (in place of the oil) and 1/2 cup of honey and the rest of the ingreds listed. For the topping I used a little less brown sugar and added a little agave nectar. Had to bake mine for 18 minutes. Made 16 sweet, spicy muffins

Grilled Sausage with Potatoes and Green Beans

I will be making this often. Quick and easy and no pans to clean up. I used Hillshire Beef Smoked Sausage. Followed the recipe but cut red potatoes into bite-sized pieces, 2 cans of green beans, 1 can of corn, chopped onion, sprinkled a little Worchestershire sauce over it. I used olive oil in place of vegetable oil. Cooked it on the grill for 40 minutes. Great recipe

Country Apple Dumplings

GREAT RECIPE - I would give it more stars if I could. This is so easy and what flavor. I used diet Mountain Dew. Can't wait to have company and make this agian. 10/31/09 Made these again today and as expected they were delicious. I served them with pumpkin ice cream. 3/7/10 Made them tonight, did not have Mountain Dew so I used Diet Sierra Mist, tasted just as good. 4/23/10 today when I made these I microwaved the butter for 30 secs. in a glass bowl until melted and then mixed in the sugar and cinnamon, much quicker than using a saucepan. Still my favorite dessert.

Delicious, I did mix in a little nutmeg with the cinnamon and sugar. Also sprinkled a little sugar and nutmeg on the top crust before baking.

Pasta Lasagna

I needed to use up some onion and green pepper so I chopped them up and fried them with the hamburg, also added 2 cloves of crushed garlic. I did not have any ricotta cheese so I just mixed the egg, mozzarella, and parmesan cheese together. Used a jar of sauce and a can of diced tomatoes and whole wheat rigatoni. It was very good and I will be making this again.

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

LTH these cupcakes are to die for. I had one even though I'm not suppose to eat sweets but it was worth it. I frosted them with the Fluffy Peanut Butter Frosting from this site which compliments them perfectly. I think I like these a little better than the cookie dough cupcake recipe but both are fantastic. Thank You

True Blue Custard Crunch Pie

I doubled the recipe and made 2 pies. The pie is delicious. Followed the directions exactly. I did bake it longer than stated, 60 minutes and I had to put aluminum foil around the edge of the pie crust to prevent it from burning. When I put a knife in the middle to test it, the knife kept coming out with a soupy liquid on it, but Keri suggested it may set when it cools and she was right. This is a great recipe and will definitely make this again.

Balsamic Cream Sauce

Fantastic sauce. I served it with a recipe from this site called A Good Easy Garlic Chicken. I cooked the chicken, removed it from the pan and made this sauce in the same pan scraping the flavors from the chicken recipe into the sauce. I did not have heavy cream but the half & half worked out just fine. Made whole wheat noodles and asparagus and served the sauce over every thing. Great flavor.

A Good Easy Garlic Chicken

I followed the recipe exactly. After the chicken was cooked, I removed it from the pan and used the same pan to make the "Balsamic Cream Sauce" from this site. Served over whole wheat noodles and asparagus. Fantastic recipe. This was recommended to me by MakeItEasy4Me. Thank you, great recipes. 3/8/10 Made this again tonight it is so easy and tasty. Made the Balsamic Cream Sauce again and Artichoke Mashed Potaotes and green beans. We really enjoyed this meal.

Scrumptious Frosted Fudgy Brownies

Celeste shared this recipe back in July with me. I made them for my oldest son's birthday. I did not simmer the cream & sugar until tiny bubbles formed, IT IS VERY IMPORTANT TO SIMMER IT LONG ENOUGH, mine was very runny. I put it on the brownies, it was more like a glaze than a frosting. I served them any way and they were a huge hit with every one. I'm sure they are even better with the frosting made the right way. I will be making this recipe often. Thank you Celeste.

No Bake Peanut Butter Pie

Easy & delicious. Followed the recipe and added some chopped up Reese's Peanut Butter cups to the filling. Sprinkled some Reese's pieces on the top and put in freezer. I made 1 using an oreo crust and 1 using a graham cracker crust. I served the 1 with the oreo crust, the other is still in the freezer. Drizzled some hot fudge sauce over each slice as I was serving them. Every one said it was very good. Will probably try the Nutter Butter Crust as suggested by another reviewer next time even though the oreo crust was great with it. Will definitely make this again.

THIS IS THE BEST EVER CHOCOLATE CHIP COOKIE EATEN BY ME!! Followed the recipe exactly. Replacing my Nestle's Toll House recipe with this one. 2-26-10 Made these today and used 2 cups whole wheat pastry flour and 1 1/2 cups all purpose flour to try and make them a little more diabetic friendly. They taste delicious.

Amazing Pork Tenderloin in the Slow Cooker

Quick & Easy. I used 7 boneless pork chops. I added extra garlic and a little worcestershire sauce plus what the recipe calls for. The meat was tender & juicy but lacking in flavor. I will make this again but will add more seasonings,

Sweet Potato French Toast

This recipe is pretty good. I microwaved the sweet potato for 8 min. and then mashed it. The first batch was a little bland so I added 1/2 tsp. Pumpkin Pie Spice and 1/4 tsp. vanilla extract. My 3 yr old grandson loved them. I will make these again. 10/30/09 Forgot about this recipe until my 3 yr old grandson asked me to make it for breakfast today. I am now giving it 5 stars, I added more vanilla extract, about 3/4-1 tsp. and extra pumpkin spice. Used a small sweet potato and added the whole amount, about 1/2c, Delicious. 3-29-10 Today I used 1 cup of sweet potato, 2 eggs, 3 egg whites, 1/4 tsp cinnamon, 1/4 tsp nutmeg, 1/2 tsp pumpkin spice, 1/2 tsp vanilla extract. I mixed all the ingreds.(not the bread of course) with my electric mixer on low, just until blended. Came out much smoother. Made with whole wheat bread. Got 7 french toast which I cooled, put between waxed paper, then in a baggie and put in the freezer. I zap 2 pieces in the microwave, covered for about 2 minutes when we want some. Easy breakfast.
