Fudge Puddles

So cute. I'd give them 10 stars. Very easy and delicious. I sprayed the mini muffin tins lightly with Pam and had no problem getting them out. Followed the directions exactly as written. I only got 24 and had enough chocolate leftover to make 24 more so next time I will double the cookie dough. This will be a recipe I will be making often.

Angel Chicken Pasta

Absolutely delicious. I did double the sauce and added chopped green onions and frozen broccoli. I covered it with foil til almost done so the sauce would not dry out. Served it over angel hair pasta. This is definetly going to be one of my favorites. 11/3/09 This is my favorite recipe on here. I make it at least twice a month. I now make it in the crock pot, I use frozen skinless, boneless chicken tenderloins, put them in the crock pot, double the sauce, mixing all the other ingreds. together and pour over chicken, I turn it on high for about 2 hours and then turn it to low for 4 hours. It is delicious over angel hair pasta or served with mashed potatoes and putting the sauce over the chicken and potatoes.

Cindy's Awesome Clam Chowder

This is a savoury chowder. I followed the directions exactly as written by Cindy. (I did buy minced clams by mistake but I actually like the smaller pieces).Even if you do not like clam chowder I think you would like this one, it does not taste clamy at all. I made it in the morning, planning on reheating it for dinner in a double boiler but it was so flavoursome I ended up eating a bowl for breakfast. Served with oyster crackers one night and Cheddar Bay Biscuits the next night. Will with out a doubt be making this all winter long. Awesome recipe Cindy, thank you

Cream Puff Cake

This was good but didn't really have a cream puff flavor. It reminded me of the icebox cake I use to make when my kids were little. I did have trouble getting the pastry up the sides of the pan so I ended up just leaving it on the bottom. Also made the icing from the Eclairs II recipe and put it on top of the pastry before topping with pudding mixture as suggested by others. It is a little messy to serve but tastes good. I will make this again.

Pumpkin Pancakes

Today was the 3rd time I made these. I double every thing and freeze 1/2 of them when done. I used whole wheat flour today and they came out fine. The grandkids loved them and they are better for me. Followed recipe exactly. The batter is very thick so when you put the 1/4 cup of batter on the griddle you need to use the back of a spoon to gently spread it out a little. 9/4/09 Made them today using 1/2 allpurpose flour and 1/2 whole wheat, added some pumpkin spice and flax seed. Love them.

Impossible French Apple Pie

This recipe saved me. Went to make a pie and had no pie crusts in the freezer. Followed the directions exactly and used crushed pecans for the topping. Served it to company and they really enjoyed it with a scoop of vanilla ice cream on the side.

Cream Cheese Frosting II

I halved this recipe which made more than enough for a 13x9 cake. I used 8oz Neufchatel cheese, 1 1/2 cups confec. sugar, 1/4c butter, 1 1/2 tsps vanilla extract. I think next time I will add a little almond extract as suggested by another reviewer to give it more flavor. Went great on the Pumpkin Cake III

Pumpkin Cake III

This cake is so moist. For the oil I used 3/4c oil and 1/2c applesauce. Also my can of pumpkin was 15 oz so that is what I used and added 3 tsps of pumpkin spice. Baked in a 13x9 pan for 35 min. I made a 1/2 recipe Cream Cheese Frosting II from this site which was just the right amount for the cake. Will definitely be making this again.

Chocolate Earthquake Cake II

Cake in oven now. Cream cheese mixture is going all over the oven and almost looks like it is burning. Reviews say it is delicious, hope it will live up to the reviews, taking to my sister-in-laws in a few hrs. Any suggestions why this happened? Used a 13x9x2 pan. Update-delicious,will make again but will put cream cheese mixture in the middle.

Too Much Chocolate Cake

Very moist and rich cake. I used 8 oz of applesauce in place of the oil and mini chocolate morsels. It took 58 min to bake in the bundt pan. Made the Satiny Chocolate Glaze from this site which was delicious. The cake really does not need the glaze, next time I will sprinkle it with powdered sugar and serve with a scoop of vanilla ice cream. Yummy!

Simple Ranchy Breaded Fish Fillets

I used fillet of sole. Lined a pan with foil, sprayed the foil with Pam and put a little butter on the foil and put it in the oven to melt while the oven was preheating to 375 degrees. Baked for 25 minutes. This was great. Definitely a keeper.

Melt-In-Your-Mouth Meat Loaf

I was disappointed in the flavor. I will try it again and add some seasonings and maybe bake it in the oven. The crockpot was a convenient way to cook it though and I added baby red potatoes and a bag of carrots. My favorite meatloaf recipe is Easy Meatloaf on this site.

'Calabacitas Guisada' (Stewed Mexican Zucchini)

I am not a veggie person but this was good. I used 2 yellow squash, 5 zucchini, some diced green peppers, a little oregano and other ingredients listed for recipe, I did use olive oil in place of veg. oil. Next time I will try adding a few more spices.

Banana Cake VI

Excellent banana cake. I had to bake it for 85 minutes. You only need 1/2 of the frosting, the whole recipe would be too much. I would love to make this often but after looking at the 632 calories, 27.7g fat and 103g carbs per serving I will only make this for special occasions. UPDATE, I gave most of this to family members, most agreed the frosting was too sweet so would probably omit it if I make this again.

Downeast Maine Pumpkin Bread

Followed others suggestions and used 1/2c oil,1/2c applesauce, 2c sugar, 2c white flour, 1 1/2c whole wheat flour. Also used 2 eggs and 1 (4 oz) carton of Better n Eggs, splash of vanilla, reduced salt to 3/4tsp. and added 3/4tsp of pumpkin spice and the other ingredients listed in the recipe. I was able to make 8 mini loaves and 1 9x5x2 3/4 loaf. Great flavor, will definitely make this again.

Perfect Cheesecake Everytime

I was very nervous when it came time to shut the oven off after 30 minutes, but every one here reassured me it would be fine and they were right as usual. All I can say is this cheesecake is FABULOUS!
