Potato Leek Soup III
I altered mine slightly and it didn't need the cream (so less fat, right). I used about 8 leeks (chopped/sliced thin), about 5 cooked potatoes, and 48 oz of chicken broth. I cooked the leeks first in a little olive oil until soft then added the cooked and chopped potatoes. Once that cooked tighter for a about 5 minutes I added the chicken broth and let come to a boil. Next i used my immersion blender and pureed it. Add S/P and serve HOT. Really good and I never cooked with leek before I tried this.

Blueberry Zucchini Bread
this is super good. It actually can make 8 small loaves. If you don't want the blueberries to sink in the bottom, toss them in flour first. Oh and it's not crumbly on the top. the photo in misleading.

Migas II
I really love this but add salt and pepper. I think the ratio of tortillas to eggs is off so I reduced the number. 1 egg : 1 tortilla. It works for us and then it's not like I'm eating a bunch of tortillas. We topped ours with a little cheese, salsa on the side and sour cream.
