I love to collect recipes that I consider the 'best' - maybe it's pride, I don't know, but when I serve something I really like for it to be the 'best' I can make it.  This week I was on a quest for the BEST Chocolate Chip Cookie recipe, and although I am not certain that I have found IT, I did MORE

About this Cook
I am apparently living life in drastically different stages. I worked in the software industry in the 80's and early 90's, then became a SAH mom after the birth of my first child. After a divorce, I went back into a totally different software industry, left that this summer, and currently I am going to school full-time, re-training for a new career. I had no idea what to expect not having been in school for 20 years, but after some of my recent experiences I decided I could tackle anything! So far it is going well and I love it. I find myself wondering why it took me so long to get here. My kids still keep me busy (I thought they wouldn't need me as much when they were teens! I was wrong). My house is never as clean as I would like it to be, and my 'to do' list is always pages long, but I am more content than ever. One constant that remains is my love of cooking and feeding people.
My favorite things to cook
I love to bake! However, I don't do it often - I need to watch the calories :).
My favorite family cooking traditions
My kids would shoot me if I let a holiday go by without making my cornbread dressing, which has a secret ingredient (dried apricots), my Yellow Velvet (which is a corn and squash dish), my former sil's version of French Silk pie, and my mom's recipe for Martha Washington chocolates. I just need to get them more involved in the cleanup :) Someday I will get these recipes posted!
My cooking triumphs
I make some yummy entrees with morningstar soy crumbles instead of beef. I also make THE best mashed potatoes and banana pudding.
My cooking tragedies
A couple of years in a row my Thanksgiving turkey didn't get done in the oven and I had to finish it in the microwave.... at least the side dishes were delicious. I finally figured out that my turkey roasting pan was slightly too big for my small oven, and the oven door was ever-so-slightly cracked open. I can make a good turkey now, but I still prefer making the side dishes and desserts. Probably due to the early trauma :)

Creamy Rice Pudding
First attempt at rice pudding - delicious and easy recipe. Used long grain rice, left out the raisins, doubled the recipe, used 1 can evaporated milk (1.5 cups) + 1.5 c water + another cup of lowfat milk to make 4 cups. Tasted for sweetness after cooking the rice, milk, and sugar for a few minutes, and added an extra 1/3 to make 1 cup of sugar for a double recipe. This was perfect for our tastes. Used a large saucepan to cook the rice, and made the pudding in the same pan. Loved that the recipe does not include cinnamon - my family can add spices to taste. This will be made again. Big hit over here :) Thanks for sharing.

Baked Lemon Chicken
Fantastic recipe..... I didn't change it too much. I did replace the butter with 2 T olive oil + 2 T water, doubled the garlic (I used minced from a jar) and breadcrumbs, and used all the juice from 2 smallish lemons. For the crumbs, I was low, so I combined about 1/2 c Italian bread crumbs, with a third of a bag of garlic croutons (that I pounded in a ziplock), and maybe a scant 1/4 c of panko. Mixed well, used about 2/3 c of the mixed crumbs for 5 pounded chicken breasts. These only took about 20 min in a 350 oven (turned them over with a spatula after 15), plus 4 min under the broiler to brown the crumbs. We loved this so much I will be doing this again exactly the same way. This is amazing.

Cream-Filled Strawberries
I used this to make a lighter fruit dip and it is excellent. I used 3 oz pkg kroger sf instant vanilla pudding, 1 c 1% milk, an 8 oz container light whipped topping, 1/4 t almond extract, 1/4 t vanilla extract. (After measuring 2 c topping, there was 1/2 c left, so I put it in also - I would not do this to pipe into strawberries, but as a dip it was still firm enough to hold its shape). After tasting it, I felt it wasn't "quite there, until I added the vanilla, then I thought it was perfect, with no aftertaste from the sugar free pudding. This is delicious with strawberries. With my ingredients, the entire recipe is 680 calories and 27.5 grams fat. Next time I will try skim milk and fat free topping to shave even more calories. Excellent recipe, thanks.
