Chicken Breasts in Caper Cream Sauce

We love this dish and make it often, sometimes twice in a week. We will make it for our family of 10 and everyone enjoys it. We always use more cream and capers to ensure there is enough sauce, otherwise we don't alter the recipe (unusual for me).

Clams Italiano

I made this tonight using cherrystone clams. It was excellent. Everyone enjoyed it and we didn't change a thing. Get good crusty bread to sop up the liquid.

Saffron Rice

Loved this dish and will make it again. Very easy and a nice change from plain steamed rice. Following some other suggestions I used 1/2 the butter, fresh parsley, and omitted the food coloring, and steeped the saffron threads in boiling water first. The rice had a wonderful yellow color and a great taste at the end.

Slow Cooker Cassoulet

This is a great dish and I make it often. I will put it into the crockpot just before we leave for church and when we get home it is perfectly done. I rarely have more than a bean left over. The flavor is wonderful and I haven't had to change a thing. The turkey kielbasa keeps the calories and fat down but the flavor doesn't suffer. Highly recommended.

Baked Fish with Shrimp

I have made this multiple times using different types of fish. Everyone has loved it. It is a very flavorful dish and very simple to make. Do season the fish before you put the shrimp and white sauce on. Sometimes I have used Old Bay and sometimes Dill Weed, it all depends on what I have on hand (always salt and pepper).

Crab Stuffed Haddock

Excellent fish dish. The stuffing was good on its own (we had some extra and made a crab cake of it). There was no leftovers at the end of the meal. It took a little work but definitely worth the effort. We followed the recipe with the exception of using bread crumbs instead of cubed bread.

Momma's Wine Cake

Fantastic dessert. I always get rave reviews whenever I make it. I often take it pot luck meals. Easy and tasty. Make sure you mix for the full 5 minutes and it will come out perfect. I dust the pan with chocolate power as someone else suggested and it turns out great.

Slow Cooker Buffalo Chicken Sandwiches

Easy and good. I have served this many times and everyone loves it; and it is dead simple. A great Sunday lunch, put everything in the crockpot before you head to Church and you only need to shred the meat when you get back. I put the chicken back in the crockpot after shredding and the family can eat when they wish.

Ginger Glazed Mahi Mahi

Excellent dish and easy to make. This was a real crowd pleaser. The only thing I changed was to add more fresh ginger. I used the frozen Mahi Mahi from Costco and fed 14 people - no leftovers.

Scrumptious Salisbury Steak in Mushroom Gravy

Great meal with egg noodles & steamed asparagus. I did tweak it a little. After the meat was cooked initially I sauteed fresh mushrooms and onions in butter and a little of the oil/grease leftover from the meat. And I used 2 cups of beef broth and 2 cups of milk instead of 4 cups of milk. It turned out great and the family loved it.

Shrimp Creole

Very good and full of flavor. The only change I made was to cut the cayenne pepper in half as some of my kids don't like very spicy meal. Definitely a keeper.

Fettuccini with Basil and Brie

This was very good and a nice fresh dish. I used more basil than the recipe called for, used Rotini instead of fettuccini (as someone else recommended) and threw in some peeled and deveined shrimp with the pasta as it cooked. Everyone loved it.
