Brooklyn Girl's Penne Arrabiata

AMAZING!! I was hesitant at first about so much red pepper flakes, but I followed the rules and it came out with great flavor and not too much spice. I chose to cube my chicken into bite-sized pieces before frying. I began by using 1 egg and 1 cup of bread crumbs (as many had suggested) and cutting the spices added to it in half. However once I started breading, I found I needed the other egg and a big more bread crumbs than the 1 cup. Maybe cubing created more surface area which needed more to cover it (or maybe my fingers were sufficiently breaded and used a great deal of it? lol). FANTASTIC recipe. I won't give a 10 to often, but this definitely rates a 10!!

Cheddar Baked Chicken

Great flavor! Used crushed Corn Chex instead of Rice Krispies. Cooked at 350F for 45 minutes, like most reviewers suggested. There was a little more cheese/crumbs than was needed, but I put in all in the dish and it made for a crispy treat!! This is a repeater!

Penne Bolognese-Style

For a "doctoring" of store-bought sauce, this is as good as they come. Actually used a jar of Basil & Garlic Sauce by Barilla, but I'm sure it had the same general effect. Instead of fresh basil leaves, used the basil "cubes" from the freezer section of Trader Joes. Are those not the best invention EVER?!? Give this one a try. I don't think you'll be disappointed in a "quick version" of a classic.

Ho Ho Cake

What a disappointment! I requested my mother make this for my birthday. The cream tasted very much like flavorless salve. I am a sugar freak and will eat ANYTHING sweet. I took three bites (wanted to give it a fair shot) and was done. I can't remember the last time I didn't finish a piece of cake. ESPECIALLY a piece of birthday cake. If you are hoping for something amazing, this isn't the recipe you want! :-(

Pork Chop Dinner for Two

Slow Cooker Chicken Taco Soup

I reduced my chicken down to two breasts and used my own, home-made taco seasoning. We have a family member on a lower-sodium diet, so this taco seasoning helps cut that down. 2 T Chili Powder, 1.5 T ground Cumin, 1 T dried Oregano, 1 T ground Coriander, 1.5 tsp Garlic Powder and 1/4 tsp Ground Red Pepper. This can also be used by placing that amount with 1/2 cup water for each pound of ground beef. Great flavor and soooooo easy!!

Anniversary Chicken I

Good flavor, although a little too "watery" in the bottom of the dish for my taste when first out of the oven. After refrigerating, sauce thickened and was much more to my liking.

Breakfast Pies

Very tasty. I am on a diet, so made these with turkey breakfast sausage and reduced fat biscuits. I freeze them, then pop them in the microwave for a minute and 15 seconds. I have a ready-made, hot breakfast that "costs" about 240 calories. Will definitely keep these on hand in the freezer all the time. :-)

Sausage Scalloped Potatoes

Excellent flavor! My parents, whose idea of spice is black pepper, were a big fan. No leftovers here! :-) This will be repeated in the future. Maybe try it with turkey sausage/kielbasa or a lower fat/lower sodium sausage. Liked preheating in the microwave to get some of the fat out of the sausage. Mmmmm!!!

Portobello Penne Pasta Casserole

Decreased servings and still came out fantastic! I was only cooking this for 3 and didn't see the need for such a large amount, so I halved the recipe and baked in an 8 x 8 inch pan at 350, keeping all other elements of the directions the same. Loved this! Might make the larger version next time to see how well the leftovers freeze?

Loved it! Cut the butter in half as most suggested. Served this with boiled baby red potatoes and used the leftover sauce as a "gravy" for the potatoes. Yummy! :-)

Taco Stuffed Shells

We loved this! Often my family and I will choose a recipe to try, then as we eat, we critique the results and decide what we would change in the future. The biggest decision is always, "will we repeat this recipe?" This was a resounding yes for these stuffed shells. The only change made to the preparation was the use of a bit more salsa. 1/4 c. seemed too little for the bottom of the pan, so 1/2 c. was used. Also, 3/4 c. to top remaining shells seemed too little once it had been doled out. I found that I stopped measuring the salsa topping and just made sure that there was enough to cover each shell well so that the pasta did not become crunchy. Like other readers, I cooked this at 350 degrees for 30 minutes, then during the last 10 minutes covered it with shredded cheese before returning it to the oven. This dish was even better on day 2! Delicious!

Beer Butt Chicken

I thought this tasted great! Have made it twice now since finding this recipe on here. The second time, I omitted the melted butter in the can of beer and it came out just as good without wasting the other stick of butter. I also found that the leftover chicken made an excelllent chicken salad the next day! This was my first beer butt chicken experience and I liked it so much, I went out and bought a beer butt roasting pan. So great!
