Margarita Grilled Shrimp

We really enjoyed this. I used all the ingredients as specified to prepare the recipe, and only marinated for 30 minutes before grilling. However, I did take the unused marinade and brought it to a boil, for one full minute. I served the shrimp over garlic toast and then poured the cooked marinade over all. This was flavorful and not too spicy. Dee-lish!

Basmati and Snow Pea Stir Fry with Teriyaki Chicken Meatballs

This was a little too sweet for us. I tried tweaking the sauce with some garlic powder, some soy sauce and some chili garlic paste, but it was still a little too sweet for me. DS liked it, though.

Vermouth Tarragon Chicken

This chicken indeed has an unusual flavor, but the tarragon is the main component of the taste, after the salt. The amount of lemon pepper is the culprit, I believe, for the excess saltiness in the flavor, especially since the marinade liquid cooks down and contentrates. I made this recipe exactly as directed, and it does yield nicely colored BLSL chicken. I made it because I had some vermouth, and I was curious to know how it would do in cooking. The vermouth flavor was there, but in spite of the amount, it did not overpower the other flavors. I would recommend using ground black pepper, lemon zest and salt, as a replacement for the lemon pepper, in order to control the saltiness of the dish.

Delicious Salmon Pasta Salad

This was a very nice way to deal with some leftover cooked salmon! In addition to the salmon, the only other change I made was to use whole wheat farfalle. Served on spinach with tomato slices, I discovered that the tomatoes gave it a nice zing of flavor. I wish the dressing had a bit more depth of flavor, as well. These are generous servings.

Grilled Asian Asparagus

I really enjoyed this simple recipe for grilled asparagus, and I didn't change a thing. The hoisin sauce gives a slightly sweet flavor that balanced out any tendency toward bitterness. I will make this again!

Asian Lime and Cilantro Sauce For Salmon

This is an unusual, tangy sauce that complemented grilled salmon nicely. I followed the recipe exactly, and I was worried that the strong flavors might overpower the delicate, fresh Alaskan salmon. I grilled the salmon on a hickory plank with no added seasonings, adding this sauce to the fish on the plate. We found the sauce to be just right, with the bright lime flavor being a nice change from the usual lemon. The two of use used less than half the sauce, saving even more calories!

Fast Salmon with a Ginger Glaze

Made the glaze exactly as written, but I put the salmon in the oven. The spicy sweet flavor of the glaze is a fabulous accompaniment to the salmon. I did let the glaze reduce more than 2 minutes--more like 5 or 6. We loved this, and I will make again. Thanks for the idea!

Fluffy Pancakes

Just as promised, these are quick and easy, and it made a small amount. This recipe made 6 4-1/2" pancakes that were fluffy and delicious. I used about 1 Tbs. of oil instead of 1/4 c. melted shortening.

Jewel's Watermelon Margaritas

I think this will be amazing when the watermelons get ripe! I believe my melon was a little lacking, and I'm not going to make the submitter suffer for the sake of my watermelon! Once you have a really red, ripe, sweet melon, you may want to adjust the simple syrup to your liking, but for my under-ripe one, it needed the sugar. Novel idea, will make again!

Red Curry Flank Steak

Everyone loved the slightly spicy, complex flavor of this flank steak, and I loved that it didn't have to be marinated overnight! I also liked that there was no added oil in the marinade to add calories and cause flare ups. Six minutes on the first side was right on the money. I did slightly less when I turned it over, and ours was pink in the middle, just the way we like it. I placed the fresh basil on the steak as the recipe indicates, but the grill was so hot it dried out very quickly. We didn't get much of the basil flavor at all. Now that I have all the ingredients, I will make this again. Thanks, Chef!

Gouda and Spinach Stuffed Pork Chops

This is a solid recipe. I was hoping for more flavor from the horseradish mustard, but alas, it was kind of plain! Next time, I believe I will try this with seasoned crumb stuffing mix for the outside coating. Also, I used wooden toothpicks to keep the opening of the chops together while they cooked. I used 1 1/4" pork loin chops and the cooking time was right for me.

Easy Waldorf and Raisin Salad

This is an easy, refreshing salad, full of lots of yummy bites! I believe my mom would have loved this salad, since Waldorf salad was one of her favorites. I followed the recipe exactly, and since the recipe did not specify, I used half red delicious and half golden delicious apples. Thanks for the idea!

Good for You Greek Salad

I used about 1/3 c. diced red onion and less oil on this salad. Though not a true fan of oregano, I included it, but next time I will sub dill instead, and add more olives. This is a colorful, chunky salad, and I liked the combination of tomato, cucumber and feta.

Mediterranean Lamb Burgers

I made the lamb burger patties exactly as the recipe stated, and they were delicious, moist and juicy! I didn't follow the rest exactly, due to personal preference. Since I was serving a Greek salad as a side, I opted to leave off the toppings, and serve with tzatzikiki sauce and lettuce.

Asian-American Slaw With Peanuts and Jalapenos

Followed the recipe very closely, except for using only 1/4 of an onion, I added the ginger and the jalapeno to the dressing, and I used dry roasted, unsalted peanuts (loved the crunch of the peanuts in this). This salad "grew" on me. It starts out OK, but then I found myself going back, and going back. I think next time I will leave out the salt in the dressing. I think this will make the dressing taste a tad sweeter and allow the ginger to come out more. Salt can always be added in later, if desired. Thanks for the idea!

Steak Salad

We really enjoyed this main dish salad. I followed the recipe pretty closely, but I put Worcestershire on the steak, instead of in the salad dressing. I first thought the dressing was a little weak without the Worcestershire, but when you get a bite of the briny olive and the steak, or a bite of the blue cheese and the steak, the dressing is just right. Really loved the combination!

Seafood Enchiladas con Queso

These were very good! In spite of the Anaheim and the jalapeno, there was very little heat in this recipe, and I was thankful for that, because I didn't want to lose the delicate flavor of the seafood! I used shrimp and crab meat, following the recipe exactly until the last garnish of tomato and green onion, because I was serving a salsa along with the enchiladas. Beautiful cheese sauce, but very rich! I used a 13 x 9 pan, and the recipe made 10 enchiladas for me. I took Saveur's advice and sprayed the pan with cooking spray before baking. This dish is company worthy! Thanks!

Best Ever Cilantro Corn Salsa

This zippy little salsa gets quite a punch from fresh garlic! I used about half the amount specified in the recipe, and we were quite satisfied. Bright, refreshing flavors and beautiful colors make this salsa a great accompaniment to seafood or chicken. Thanks for the idea!

Easy Grilled Zucchini

What a great idea for grilling! Slicing the zucchini this way keeps them from slipping between the grill racks. Very fast, very easy! I used Cavender's Greek Seasoning. Thanks for the idea!
