Texas Sheet Cake II

Reviewed: Apr. 17, 2013
I've also used this recipe for many years. I use buttermilk for the frosting and for a deeper chocolate flavor use the Hersey's Dark chocolate cocoa. I use pecans for the nuts and place them on top of the frosting.

Butternut Vegetable Soup

Reviewed: Oct. 3, 2012
This was a very yummy and easy to modify recipe. Instead of vegetable broth, I used some ham broth that I made up with some smoked ham hocks that I had in my freezer. I also used dried beans instead of canned, let them soak over night and then added them with everything else. I started this on the stove and then moved it to a crock pot and let it finish cooking a little longer because of the beans. Made some ham and beans with the rest of the broth and ham. Now I have my freezer stocked with some great soups! Thanks Kathy!

Dale's Swedish Meatballs

Reviewed: Jan. 16, 2012
I'm giving this recipe 5 stars with the changes that were made by a couple other reviewers. I added the fresh gratted nutmeg to both the meatballs and the sauce, baked the meatballs at 350° for 30 minutes and then simmered in the sauce on the stovetop for a bit and I used a cup of coffee in place of the instant coffee and one cup of the water. These turned out really good and fairly easy to make. I will definately make these again.

Chicken and Biscuit Casserole

Reviewed: Nov. 15, 2011
Everybody in my family liked this recipe. I cooked the chicken in the crockpot in the morning with a couple stems of rosemary and a couple cloves of garlic and 2 cups of water to give it a little bit of flavor. I took the ideas of a couple other reviews and replaced 1/2 cup of the chicken broth with 1/4 cup heavy cream and 1/4 cup sherry. I used the broth from the cooked chicken. I didn't have any biscut mix so I used refrigerated buttermild biscuts instead which my family prefers anyway. Makes a nice comfort meal on a cold winter day.

Pumpkin Hummus

Reviewed: Oct. 19, 2008
This recipe turned out very good after a couple of modifications. I added 1 tsp of cayane pepper, 1/4 tsp paparika and a 1/2 tsp of cumin to give it more of a kick. I also used canned garbanzo beans, drained. It didn't need the extra liquid. Next time I would reduce the lemon juice to juice of 1 lemon. It was a bit too tart and I didn't even add the 5 oz. My 8 and 5 year olds liked this too.

Gumbo Style Chicken Creole

Reviewed: May 30, 2008
Family loved this! I did add the can of chicken broth as others recommended. I used 2 cans of the Rotel brand 10 oz diced tomatoes and chilies, 6 Market Day Southwest chicken breasts and added a little leftover cubed ham. I left out the hot sauce because one of my kids doesn't like spicy. It was just spicey enough for her and the rest of us added it at the table. This is a great recipe with lots of flavor and can be modified to your taste very easily.
