Margarita Cake

The first time I made this, I couldn't find the orange cake mix, so I used lemon instead, and it was amazing! I saw Orange Delight cake mix today in the store, so I am going to make it using that mix for a friends birthday. Should be amazing!!

Coffee Chocolate Chip Cookies

I found this cookie to be very flavorful, but a little on the dry side when forming the cookies, thus having a crisper cookie. Did anyone else have this problem? It could just be the climate here. I am not a fan of almonds, so I left them out, but I thought the cookie was delicious without them. I had some leftover Ghiradelli Chocolate Truffle coffee from this morning, so I boiled it on the stove until it became syrupy, and then added 3 Tbl in lieu of the espresso/instant coffee. Found the flavor to be very intense and wonderful.

Billy's Favorite Gingerbread Spiced Coffee Syrup

Oh my god! This is the best! I love anything gingerbread and I love this! I just made a batch and I keep licking a spoon with it! Just the right amount of spicy and sweet. Can't wait to try it in coffee! Also thinking of adding a little to frosting to frost gingerbread cookies with. Delicious! Like most, I only had ground allspice and I think it's terrific! I also used freshly grated nutmeg which I think has a more vibrant taste than ground nutmeg from the store.

Oatmeal Pancakes II

These were good. My boyfriend and I made them for dinner, and since we eat pretty health, I did make a few changes though. First, I used two packs of low sugar blueberry oatmeal for the oats, and ommitted the sugar and vanilla (since there was a flavoring with the oatmeal), used 1/2 cup whole-wheat flour for the all-purpose, and added some more buttermilk since it was pretty thick. I will definitely make these again, but next time, I will try it as is.

Apple Spice Cake

I may be rating this too soon (as I'm writing, the cake is in the oven) but it looks good, smells great, and hopefully will taste amazing! I did a couple things different. First, I left the skins on the apples. I know, not a HUGE change, but I like the look of it, and I was lazy! Second, I added about 3/4 c. chopped pecans. Third, I upped the amount of cinnamon called for, mainly because my boyfriend and I love cinnamon. Also, I didn't have any allspice so I added a little more nutmeg and cinnamon for that purpose as well. Fourth, I didn't have a tube/bundt pan so I put it in a 13X9 pan for about 45 min.

German Apple Pancake

I thought this recipe had good flavor with the apples and the spices, but my boyfriend and I both agreed that the egg mixture was just kinda weird. It almost didn't seem done, even though I kept it in the oven longer than stated in the recipe. It just had a very weird texture to it. If I made this again, I would use my own oven pancake recipe but use the apples and spices as stated.

Sarah's Banana Bread Muffins

This recipe was wonderful! Like other reviewers, I only used 1/2 cup of sugar and they were great! I also added 1 tsp of cinnamon, 1 tsp of vanilla, added 1 more banana (I love bananas!), and toasted the walnuts before I put them in the batter. I also sprinkled a few on the tops of each muffin before I baked them. They turned out great! Thank you Sarah!

Real Homemade Tamales

I haven't made the tamales yet, but I did make the meat filling, and it was wonderful. A couple things that I did was add a little more garlic, and some cumin seeds. Also, after I drained the meat and onions and garlic mixture, I pureed the onions and garlic with a little of the broth to make a sauce and I mixed it in with the shredded pork. It really added flavor and helped the pork retain moisture.

Bird's Nests

I used butterscotch chips in place of the chocolate chips because my mom is allergic to chocolate. They were great! We used the SweetTart brand jelly beans and it was really good, the combo of sweet from the nests and tart from the jelly beans.

French Herb Bread

This was really good and pretty easy as far as bread making goes. I made a couple changes, because I like a wheat bread, so I subsituted 1 1/2 cups whole wheat flour for all purpose, and I added a couple tablespoons of ground flax seed meal to the dough (added at the beginning with the yeast and sugar, etc). I sprinkled a little more flax seed on the top instead of the parsley, but I did it before I baked the bread. I also didn't melt the butter; I used a couple tablespoons of room temperature butter that I spread on it and then sprinkled the herb mixture on top of that. But all in all, it was a really good bread!

Dutch Babies I

This is more of a Puff Pancake, or German Pancake, than Dutch Babies. Dutch Babies are supposed to be small, round balls of dough deep fried and covered with powdered sugar. At least those are the Dutch Babies I've had.

Cornbread Muffins I

Great muffins!! I'm lactose intolerant and used soy milk (it was vanilla flavored) instead and thought they were delicious! I'm not sure what they are like with dairy milk, but I thought the soy milk was fine, and the vanilla added a subtle flavor to the muffins that was delectable!

These muffins are wonderful! Very moist and great right out of the oven, letting them cool for about 15-20 minutes. I used about 4 medium sized bananas, and substituted 1/3 cup vegetable oil for the butter (because I realized I didn't have any!) I think they are great!

Black Magic Cake

Homemade Focaccia Bread

I made this recipe when my parents were out of town one time. I took it to my friends house (she was having a get-together) and a bunch of people were there. All my friends are really picky eaters and they loved it!! I should have made more than one!!
