Microwave Cracker Pizzas

My young Grandchildren and I made these when they visited from out-of-state. What a clever idea that I would never have thought of by myself. I would urge everyone to follow this simple recipe by sticking with using the wheat crackers only. Now that my Grandchildren are home again my Daughter says that they request these snacks constantly.

Oven Roasted Parmesan Potatoes

I normally avoid recipes made with parmesan cheese because I have never cared for the taste of it. However when I saw this recipe I decided to give it a try. This is probably the best potato recipe I have ever made! I have made it numerous times now and it always comes out tasting wonderfully. I substituted olive oil for the vegetable oil and I recommend it highly. Thanks for sharing.

Simple Potato Salad

What a great simple, but delicious potato salad recipe. The only thing I changed was to use half Miracle Whip and half Mayonnaise. I added some salt and pepper, crumbled some bacon on top, and it was the best I ever made. Simplicity is the key that I have always been missing. Thank you Lisa.

Maple Salmon

This is far and away the best recipe for fish that I have ever had. I am not a lover of maple syrup, but now I don't make fish any other way. I also used a small amount ginger and this was outstanding.

Blueberry Crisp II

I was skeptical about adding mayonnaise to the topping mix but it tasted fantastic! I also used a splash of vanilla and extra cinnamon. To flavor the blueberries I put a small amount of sugar and lemon juice over them before adding the topping. Doubled the topping and it was perfect. I served this to company and the LOVED it!

Easy and Delicious Chicken and Rice Casserole

This recipe was as good as it was easy to make. I did change a few things though. Instead of water I used two cups chicken broth and added 1 extra cup of rice as I found it too mushy. I also put seasoned salt and paprika on the chicken to give it extra flavor. I shortened the cooking time to 1 1\4 hour and put fresh broccoli in for the last 15 minutes. Some canned onion rings on top and it was a real winner in our family!
