Raspberry Banana Bread

This was not the most moist banana bread I've ever had, even with all of that oil. But it was not dry at all either. I will definitely try the applesauce replacement next time to make it healthier. The only thing I did differently this time was use freshly picked raspberries rather than frozen.

Best Fried Walleye

Creates a great crunchy coating that stays on the fish much better than others. I'd like more flavor but it's easy enough to add whatever seasonings you desire for that. This is a classic.

Righteous Raspberry Brownies

Oh. My. Gosh. This was so, so amazing. I can't believe how moist and delicious it was. I made my own self-rising flour per the reviews, just used regular sugar, used chocolate chips (not 'chunks'), used a 9x9 baking dish, and fresh raspberries from our backyard. We'll be making this one again and again every time raspberries are ripe!

Almond and Pear Cake

I used the ingredients listed and followed the directions exactly; didn't change a single thing. After 20 minutes, it was very dark and pulling away from edges, so I did not cook for the remaining 5 minutes. Within a few moments of removing it from the oven, the parts of it with the pear "dropped", creating a very funny looking dessert (and not so attractive). It did release from the tart pan just fine. I uploaded a photo so that the dark color and dropped effect can be seen.

Balsamic Grilled Zucchini

Loved it. The balsamic vinegar added an excellent tang. I've tried it with a variety of seasonings and we've loved it every time. Can also do this in a saute pan (just a bit of coconut oil adds great flavor).

Paleo Chili

Excellent. We don't do tomatoes so I just used V8 juice and tomato paste but it was still delicious. I also used ground pork, ground chicken and ground turkey to give it more paleo cred. :-)

Pecan-Crusted Walleye

Ugh. I ground the pecans and they became a clumpy sticky mess that didn't stick to the fish. One of the reviewers suggested adding flour, which I can't have so I will try adding almond flour to see if that helps.

The 3 rating is for the original recipe, which does not direct you to drain the shredded zucchini first. If you follow this recipe as I did, it will be very difficult not to have a soggy mess for your "cakes." So take the advice of the reviewers and drain the shredded zucchini first.

Ginger Glazed Mahi Mahi

This was a very delicious marinade. My mahi was very, very thin so I could not cook it very long and thus it did not create a glaze. So I only gave this 4 stars but will try this again later with thicker pieces to see how if it glazes well. The flavor is marvelous.

Grilled Garlic Parmesan Zucchini

Considering all the good reviews, I was surprised at how poor this turned out. I followed the recipe exactly. First problem was spreading the butter mixture on the skin side of the zucchini doesn't really work. After 8 minutes on the grill, the top side was still raw. But the underside was burned. So I flipped them to cook the top but the parmesan cheese just burned on that side. What a mess.

Texas Slaw

Mighty tasty! I shredded 16 oz cabbage rather than using the bagged stuff, and used fresh corn from two cobs, 1/4 cup red onion and the zest of the lime. It's not too spicy, not too bland, and certainly not traditional. It's mighty tasty!
