Smoked Salmon Quiche

I'm only giving this a 4 but just because I did it a bit differently and can't say for sure how it would be if I'd followed it exactly. But the version I ended up with was a 5-star, and that's coming from my husband, who is very critical. The quiche texture was light and it had excellent flavor. My version: For the "crust", I used 3 canned refrigerator biscuits, rolled very thin, and pressed into a crock. Instead of cubed Cheddar, I used one cup of shredded Colby Jack, and did NOT add more cheese on top at the end--one cup was plenty. I used dried/minced onions instead of real ones since my husband won't eat real ones. I did put it into a blender but I don't really see any need to do so next time. I think that whisking it together well would produce the same result. Instead of parsley and sage, I used just a little dill weed, because I think think the flavor blends best with salmon, and it still adds the color. I used SMOKED salmon instead of regular salmon, which adds an inordinately different (and better) flavor in my opinion. I cooked it for only 25 minutes but my crock continues to cook for a bit after something comes out of the oven. What a tasty meal!

Salmon Quiche

French Cafe Summer Salad

I liked the collection of veggies. Great color and textures. As to flavor, I expected it to have a bit more zing. I might try adding some balsamic vinegar next time. But quite good overall.

Baked Kale Chips

Did first batch exactly as recipe calls for except sprayed on the olive oil rather than drizzling (per the poster's follow-up review). After 9 minutes, I had ashes. Kale-flavored ashes. Next batch was for only 7 minutes at 340 and only a few were burned, mostly the smaller pieces. So I guess that is what I will stick with and just be extra-sure that pieces are uniform in size. Flavor was pretty good; might try some other seasonings to spice it up next time.

Mexican Bean Salad

This was good. It had a bit too much dressing so I would suggest to pour some out before serving and use a slotted serving spoon. I agree that it is best when made a day or two in advance.

Brine for Smoked Salmon

Spectacular. Quite a tasty twist on traditional smoked salmon. I quartered and juiced the fruits, throwing in the entire quarter once juiced. Aside from that, I followed the recipe exactly and have no regrets. Brined for 18 hrs, smoked for 5 hours but kept thicker pieces in the smoker another hour. Just a wonderful, unique flavor.

Blueberry Lemon Bars

Quite different than I expected but it was good. I think I will modify the recipe to bake the crust for less time--it was a bit dry. It takes a long time, due to needing it to cool, but it's actually quite easy to make. Comments from guests were that it was a perfect blend of sweet and tart.

Lentil Soup

Snow on the Mountain Green Beans

I was surprised at how tasty this was. I used frozen beans and just a touch of coconut oil (instead of olive oil and butter). So very good--even my friend who does not like green beans took a second helping! So simple, so yummy!

Cranberry and Cilantro Quinoa Salad

Wow, this is good. I used cilantro mini-cubes in the water in which I cooked the quinoa instead of fresh cilantro (which I didn't have). It was quite de-lish!

Maple Dill Carrots

Nice flavor, but I followed the recipe exactly yet the carrots did not get a glaze. I, too, wonder why "maple" is in the title but not an ingredient. I would like to try to revise this recipe to create a glaze so that the carrots maintain the flavor.

Slow Cooker Autumn Delight

We are hunters so I used Axis Deer cube steak. At a dinner party where I served this, everyone raved about it. The meat was exceptionally tender and tasty and yes, there is LOTS of gravy--I served it over rice. Not a mushroom fan so I used cream of chicken soup instead; otherwise, followed the recipe exactly.

Autumn Lentil Soup

Pretty good. It has an interesting flavor. I did add carrots, and I think I would add potatoes and/or some other vegetables next time. There are other lentil soups I like a bit more but this one is certainly good enough to keep on the list.
