Marinated Pork Medallions with a Ginger-Apple Compote

Reviewed: Jan. 7, 2012
Wow, I made this last week and am making it AGAIN tonight for those who missed it! Incredibly tender and tasty! No need for 2 cups of balsamic though (especially since I only have the EXPENSIVE stuff in the house right now) - I used 2/3 cup and 1/2 cup of oil. This time I am using dried cranberries (reconstituted a bit) instead of cherries as others have done. Can't wait!

Indian Summer Cauliflower & Potatoes

Reviewed: Jan. 1, 2012
Made this as a side for New Year's dinner and got rave reviews. Very tasty and it travels well - just undercook it a bit and reheat when you get where you are going. One little criticism is it doesn't state WHEN to put the jalepeno pepper in so I added it with the spices. Since there was already a potato dish, I substituted julienned carrots for the potato.

Very tasty, no-fail recipe! I often double the sauce to use with leftovers.

Aunty B's Cioppino

Reviewed: Jul. 27, 2011
Awesome dish. I used fresh herbs from my garden and instead of the second can of crushed tomatoes I used 3 very large fresh tomatoes (seeded and chopped). I also increased the wine to 2 cups and didn't use any water at all. I used fresh scallops, shrimp, salmon and mussels and agree that the mussels should go in 5 minutes before the rest of the fish. Also used 1/2 chicken and 1/2 vegetable broth with a two tablespoons of fish sauce and a sprinkle of dried chilies to bump up the flavor and give it a little punch. Fished it off with freshly chopped basil. DIVINE! Serves 6 easily.

Rhubarb Crisp

Reviewed: Jun. 21, 2011
I agree the butter to dry ingredient ratio was WAY off and I didn't read the reviews before baking (TSK, TSK) this recipe - very disappointing and a waste of good rhubarb!
